Third time's the charm.
0:02
Jamie Deen here, back in the Chicken Box.
0:04
Now, the last time you were with me,
0:06
you saw that I made a homemade dressing
0:08
that we make here at the restaurant
0:10
that everybody loves, except for me.
0:12
We made blue cheese dressing.
0:13
Now what is perfect for blue cheese dressing?
0:17
I promised you we were gonna use it in our next recipe
0:25
A wedge salad, you think about that.
0:26
Y'all remember the first time you went into a restaurant
0:28
and saw a wedge salad?
0:30
I remember, I said, "What in the world is that?"
0:32
But I love iceberg, love it, it's my favorite for a salad.
0:37
So a wedge salad is all iceberg.
0:40
We've got our head of iceberg lettuce here
0:42
and I didn't do it yet,
0:43
'cause I'm gonna share a tip with y'all.
0:45
Back up a little bit, Dan, focus right here.
0:48
When you get your iceberg,
0:48
(iceberg lettuce slams)
0:49
if you'll slam it down on your corner, you can core it.
0:54
I'm gonna pull that center part out.
0:56
Now I don't have anything against that center part,
0:57
so I'm not gonna throw it away, I'm gonna save it.
1:00
Lord, do I go through the lettuce down here?
1:04
So now that we've got our head of lettuce cored,
1:08
how am I gonna do this?
1:11
I think I'm gonna do it in,
1:18
that we have three people coming for dinner tonight.
1:25
So I've got a dish here perfect.
1:28
So I'm gonna prepare three of these little wedge salads.
1:31
And you see all I've done here is I cut it into quarters,
1:34
you wanna leave all of this.
1:36
This is our salad that we're gonna be building off of.
1:39
Beautiful, I'm gonna save this.
1:43
A traditional wedge salad
1:48
only has a few ingredients.
1:49
We're gonna have our iceberg lettuce
1:50
and we're gonna add tomatoes.
1:52
And we've got chopped green onions,
1:55
blue cheese crumbles, and bacon.
1:58
I usually go, "No blue cheese, extra bacon please."
2:02
So I'm gonna just get our tomato set,
2:12
find a little home for 'em in there.
2:21
That going up a little higher.
2:26
So y'all know that I like to,
2:30
I mean, I'm not an artist,
2:32
but I love to try to create things.
2:35
I love to build, I love to watercolor
2:37
and I always wondered where that came from,
2:42
See, I'm taking the, I got my greens and I got my reds.
2:45
I want everything in the perfect spot.
2:48
And I put little green onions on top of here on my plate.
2:54
I'm gonna put a little bit of black pepper on my iceberg,
2:57
so it gets a little bit of that seasoning
3:01
before I put our dressing on.
3:05
Now the dressing that we made for our blue cheese earlier,
3:16
I've got just enough to top our salads.
3:22
You don't wanna cover it.
3:25
I still wanna be able to see my red and my green.
3:31
I'm actually building these.
3:40
The perfect little drizzle.
3:45
we're gonna add some of our fresh blue cheese.
3:48
And I always like a little bit to hit the plate.
3:51
See down there in that corner,
3:52
so if somebody wants to pick that up,
3:55
and you know we're dealing with the real deal.
3:57
I'm gonna come right back on top with just a little bit
4:00
of these green onions on my dressing.
4:03
And now from my favorite part, we're gonna do some bacon.
4:12
At Uncle Bubba's, we used to serve the bacon whole,
4:15
which was really good, but I kinda like to crumble it up.
4:22
And you were here for the whole thing,
4:24
it only took about three minutes.
4:25
This is really a super-easy, delicious salad
4:28
that you can share with your family or your friends.
4:31
Stay tuned right here.
4:32
