0:00
- Hey, everybody, it's Bobby here.
0:01
And I've got another great recipe for you today.
0:04
This is a tried and true Southern favorite.
0:07
It makes for a great picnic side,
0:10
or if you're having a barbecue,
0:11
you're gathered around the pool,
0:13
and you got a big spread going on
0:14
with your friends and family.
0:16
It's a Vidalia onion dip.
0:18
And Vidalia onions are, well, to me,
0:21
they're the best onions in the world.
0:23
And we're in season right now,
0:24
so we're gonna make sure to take advantage of that.
0:27
And in a big skillet on the stove top,
0:29
I've got a Vidalia onion going right here.
0:31
I've been cooking it in butter for a few minutes,
0:34
And it looks like it's (clears throat)
0:36
ready for me to add the garlic.
0:38
I'm gonna add two cloves of garlic that I've just minced.
0:42
And now, garlic burn, so that's going in last.
0:45
You wanna cook your onions first
0:48
and do the onions, excuse me,
0:50
add the garlic in when you're just about ready
0:53
'cause that stuff will burn up pretty quick.
0:56
And so this is looking and smelling real good.
0:58
That's butter, obviously.
1:00
Butter, Vidalia onion, and now my two cloves of garlic.
1:08
and turn this off 'cause I think it looks great.
1:12
In a large bowl right here,
1:14
I'm gonna go ahead and combine some Monterey Jack cheese.
1:23
- [Theresa] (clears throat) Maybe you may wanna chop up
1:24
that just a little. - Yeah, yeah,
1:26
I'll probably tear it.
1:27
- [Theresa] I tend to do it.
1:30
Some Parmesan cheese, a whole bag of it.
1:37
Some, oh, I'm sorry, may I have that spatula,
1:53
Dijon mustard, give it that little kick.
2:02
Also, I like to add a little Dijon to my tuna fish,
2:05
or chicken salad, whatever. (bowl banging)
2:07
It works real well and all that stuff.
2:11
I've got cream cheese that softened.
2:13
Had it kinda sitting outside.
2:15
Summertime in Savannah,
2:16
you can just use your outdoors
2:17
as your cream cheese softener.
2:22
Works better than sitting on the countertop.
2:25
Get these combined a little bit.
2:27
And now, go ahead and add in our parsley.
2:33
Theresa just said you might want to chop it,
2:36
I was gonna tear it, but that's some chunky parsley.
2:39
I'm gonna put a knife to it real quick.
2:48
Beautiful, this will give it a little green popping color.
2:53
I know that you are all having gatherings right now.
2:58
We're having play dates and stuff.
3:01
Families, moms and dads with their kids coming over.
3:04
And we're outside eating and making food.
3:06
We just did burgers out by the pool a couple days ago.
3:10
I don't know if the kids
3:11
would go for a Vidalia onion dip or not.
3:14
but they pallets are a little different than ours
3:29
I'll add in our cream cheese that's nice and soft,
3:39
And we'll just combine it all together with the spoon.
3:44
That looks good enough to add our onion and garlic mixture.
4:02
Don't wanna waste any of that onion,
4:04
so I wanna get every bit that I can.
4:08
That garlic is just beginning to,
4:11
I'm getting the notes of it.
4:12
Didn't burn it, you know?
4:14
Garlic is just more delicate on the stove top than onions.
4:18
Onions are a little, they can take it a little more.
4:22
So let's combine this all up.
4:24
Yeah, that onion is hot, and it's hitting that cream cheese.
4:27
And I've got a, holy, man.
4:32
(laughing) My mouth is watering.
4:34
I feel like I can kinda
4:35
just take a spoon to it the way it is,
4:36
but this is not complete.
4:38
We've got another step or two here.
4:42
So in a casserole dish,
4:43
I've got a shallow casserole dish over here.
4:46
Just gonna spoon it right on in.
4:53
I hope that that casserole dish
4:54
is big enough to handle this.
5:00
Kind of a shallow dish,
5:02
but that's how you want your dips to present anyway.
5:08
You don't wanna have to go forearm deep
5:17
I think it's perfect.
5:20
So we'll just make sure
5:20
that it's spread all throughout the dish here.
5:27
And if you see chunks of cream cheese,
5:29
make sure to sort of spread it out,
5:32
make sure it joins the party all over the place.
5:34
You don't want it to be in just one spot.
5:38
Yeah, that looks great.
5:39
Now, there are different things to top this with
5:45
'cause you could get really creative with this
5:47
and do whatever you like.
5:49
But today, I'm gonna top it with pecans.
5:58
Now that was the perfect dish for this recipe.
6:16
Make sure they're just, there's some good coverage here.
6:20
And we're gonna pop this into a 350 degree oven.
6:26
I'll probably let this go for about 20 minutes
6:29
and then we'll check on it.
6:30
So what we'll do now is just take a short break
6:33
while I pop it into the oven
6:36
and we'll come right back for the reveal and the taste,
6:40
so see you in just a few minutes.
6:42
After about 25 minutes in the oven,
6:44
our Vidalia onion dip has come out, and it looks so good.
6:48
And I've got some crackers here for tasting,
6:50
so let's see how it spoons out.
6:56
that's, ooh, look at that.
7:00
Ooh, so, so light. (laughing)
7:06
Oh boy, super hot too, by the way,
7:10
so I best be careful.
7:11
I'm gonna take a baby bite and tell y'all how it taste.
7:27
delectable is the word.
7:29
You know what would add to this too?
7:31
Some crumble bacon inside.
7:33
There's no rules. - Oh, yeah.
7:36
these buttery crackers that I have right here on the plate,
7:38
you could also use them as a topping,
7:41
but the pecans are a nice touch.
7:45
It'll be a super side for your next party.
7:48
Or if you're so inclined,
7:49
it'll be a great meal for just yourself
7:51
when nobody's looking. (laughing)
7:52
It's really, really good, and I think you'll like it.
7:55
Choose this season for Vidalia onions.
7:57
So go get yourself some and make a Vidalia onion dip.
