- Hey friends, if y'all have ever made
0:03
my Vidalia Onion Pie recipe,
0:09
It was in either my first or second cookbook,
0:14
And if you like that,
0:15
I think you're gonna love this onion casserole.
0:18
And naturally, I'm using sweet vidalia onions
0:23
and I'm just going to quarter my onions
0:27
and cover them with water.
0:31
And I did put a little salt in that water.
0:37
And like I said, you just want enough water
0:39
to cover your onions,
0:44
and we're gonna cover that.
0:46
Let it come to a boil
0:48
and cook 'em for just a few minutes.
0:52
Alright, so after the water came to a boil,
0:55
we have cooked these for five minutes.
0:57
Now I do want them to drain real good.
1:08
How many onions did I lose?
1:09
Just, just a little bit, ouch.
1:20
And after they drain real good, I'm gonna fry 'em up
1:24
in here for about five minutes.
1:28
And I've already turned on the fire
1:36
and I'm going to go ahead and get my butter melted,
1:41
and then maybe they'll be good and drained.
1:51
this would be a good start, Theresa,
1:53
to a pot of onion soup, wouldn't it?
1:58
I've actually never heard of boiling the onions.
2:04
Does it just soften 'em up, up and get 'em?
2:05
- Yeah, yeah, we just need them, you know, par cooked
2:11
And then we're gonna cook those for about five minutes
2:20
And I'm gonna add some salt
2:29
And remember, I did put a little salt in that,
2:36
in the boiling water.
2:39
It's not very much pepper, is it?
2:43
Let's do a little bit more.
2:46
(pepper mill grinding)
2:50
I just like the way it's fresh ground tastes
2:53
and I like the way it looks
2:57
versus that real fine-ground pepper.
3:04
Okay, now we're gonna come over here
3:11
and I'm gonna beat up my eggs.
3:17
And I think that was three eggs.
3:19
Is that right, Theresa?
3:20
- [Theresa] Yes, Ma'am.
3:22
- And I'm going to add a small can of evaporated milk.
3:29
Now our onions have cooked for about five minutes
3:31
in that butter and salt and pepper.
3:33
I've got my eggs, my evaporated milk,
3:37
and now I'm gonna add half of the breadcrumbs.
3:42
And I need a cup and a half of cheese.
3:44
And this is a two cup.
3:45
- [Theresa] It actually is a cup and a half.
3:47
I pulled the half out.
3:48
- Oh, you pull the half out, way to go.
3:50
Okay, I don't have to try to figure that out.
3:58
All right, now we've got the eggs.
3:59
And so I'm not gonna just dump those hot onions in here.
4:11
and slowly get those eggs warm.
4:18
That should about have it.
4:25
Cheese hadn't started melting yet,
4:31
but I think they're warm enough.
4:45
They're' so nice and soft and tender,
4:48
but they're not all torn up either, you know.
5:02
We're almost there, y'all,
5:16
adding the rest of the juice and the onions.
5:22
And let's see, did I spray that?
5:25
No, I don't think so.
5:27
I do wanna spray our pan,
5:29
and you'll need about a quart
5:32
and a half size casserole dish.
5:41
This would be so good with a chicken grilled on the grill
5:48
or steak cooked on grill.
5:52
Oh gosh, it would be so good.
6:04
And you'll see, no scrambled eggs.
6:13
The only way to get all the goods out there
6:15
is one of these, y'all.
6:17
I couldn't do without my rubber spatulas.
6:26
Okie dokie, all right, so we're gonna put this in the oven.
6:31
Let it bake for, gosh, maybe about 20 minutes, 350.
6:38
And then I'm gonna come back the last 15 minutes
6:44
and I'm gonna top it with butter
6:46
and breadcrumbs, cracker crumbs.
6:51
And we use the buttery, you know, you know which cracker
6:56
that is, that good old buttery one.
6:59
And y'all, I am in love
7:04
To me, I mean, I just found it on the shelves.
7:07
It's clarified butter.
7:10
You don't have to refrigerate it,
7:13
just store it in a dark place.
7:15
And it makes it so easy when you're wanting
7:17
to butter breadcrumbs, you don't have to go to the microwave
7:24
and melt your butter.
7:28
So to me, that's just really convenient.
7:33
Okay, so let's go ahead and get this in the oven,
7:38
Doesn't that look wonderful?
7:39
- [Theresa] Yes, fabulous.
7:43
This is looking good, y'all.
7:47
Now I got my cracker crumbs buttered.
7:55
And I wouldn't be opposed to a little panko either
7:58
because that panko just gives things
8:00
such a nice crunch, y'all.
8:04
So almost wish I'd added some panko to these crackers.
8:10
Now we're going to put this back
8:11
and let it cook for about 10 or 15 more minutes,
8:18
and we'll be ready to sample.
8:21
You've got us a steak on the grill
8:23
to go with this, don't you, Theresa?
8:25
- [Theresa] Of course, I do.
8:34
Okie dokie, arta chokey, we're almost there.
8:43
hm hm, nice and crispy.
8:46
- [Theresa] Smells fabulous.
8:54
it'd take the hair off my tongue.
8:58
You didn't know we had hair on our tongue, did you?
9:05
I will be right back.
9:16
I think southern folks really like casseroles,
9:36
but they sure are a nice go-to
9:38
when you find something that you like.
9:52
It almost reminds me of au gratin potatoes.
10:06
out of this world, y'all.
10:12
Get hubby do put you a steak on the grill.
10:14
Or your wife, whoever does the grilling
10:18
and have this along with it, and a salad.
10:22
It's not as fattening as a baked potato with butter
10:25
and sour cream, extra, please.
10:30
One of my best dishes, y'all, hmm.
10:36
