0:02
I hope this day finds y'all doing wonderful,
0:05
and I hope you're ready for a wonderful, wonderful recipe,
0:12
because I am making Uncle Bubba's Key lime pie.
0:19
You know, it's hard to believe that this summer
0:22
my brother will have been gone six years.
0:25
I just can't hardly believe it.
0:30
And I told Bubba, I said,
0:34
"I'm not gonna quit till I formulate the best Key lime pie
0:37
for you that anybody has ever tasted,"
0:41
and I think that we accomplished that, so,
0:45
this is my brother's cookbook.
0:51
I don't know where the cover went,
0:55
but anyway, Bubba had a great cookbook.
1:01
I don't know if it's in print anymore,
1:03
but if you should see one at a yard sale
1:07
or an estate sale and they have Uncle Bubba's,
1:12
make sure you get it,
1:13
because it's full of wonderful recipes,
1:16
and many of those recipes that's in here
1:18
we served in the restaurant.
1:21
- [Crew Member] And we still sell it
1:22
at the Lady & Sons store.
1:23
- We just, oh, we do?
1:25
We have it at the Lady & Sons?
1:28
- [Crew Member] I don't think they're in the other stores,
1:29
but Lady & Sons still has it.
1:31
- Okay, they're not in Pigeon Forge or Nashville,
1:33
Myrtle Beach, or Branson Restaurants?
1:35
- [Crew Member] I don't think so.
1:37
- Okay, but if you're in Savannah,
1:38
you can pick up my precious Bubba's cookbook.
1:42
- [Theresa] And they can call the store, too.
1:44
- Yeah, call the store.
1:49
So anyway, when I started working on this recipe,
1:59
I wanted the crust to be a little bit different,
2:02
so I put slivered almonds in it
2:06
and Michael said, "Paula, I could eat that just the crust,
2:12
and it's the best pie I've ever eaten."
2:15
So he said he doesn't even have to have (laughs)
2:19
the Key lime custard part.
2:21
So I'm putting some butter, melted butter in here,
2:25
and I'm gonna press this
2:35
and then I'm gonna put it in the oven for about, not long,
2:38
about eight or 10 minutes, just long enough for this
2:46
because if you put the filling right on top of this,
2:50
when you cut it, the graham cracker crust
2:52
would just come totally,
2:57
it would just crumble just like it is right now.
3:06
You have to stick it in the oven
3:08
and just bake it a little while.
3:11
Okay, I think we got it pretty good, y'all.
3:14
And like I said, 325 for about eight minutes.
3:21
Y'all, before I get into the custard part,
3:25
I want to show y'all this beautiful cutting board.
3:30
I have become friends with this sweetest lady
3:33
when I go to Branson,
3:35
and she is a prison guard in a lady's prison,
3:39
and I just love talking to this woman.
3:43
Like I said, we've become good talking friends,
3:47
and the prisoners actually made me this cutting board.
3:57
I don't know if you can see it,
3:59
but it's got notched out, you know, like a handle
4:04
on each side for you to pick it up with ease.
4:08
And I just love this woman.
4:13
And I thank you so, so, so, so much.
4:17
And I know that I'll see you in Branson
4:20
the next time I'm there.
4:22
You know what, Theresa?
4:23
- [Theresa] Yes ma'am.
4:26
- A recipe, the recipe, calls for a normal pie shell,
4:33
one can of sweetened condensed milk,
4:37
but I think in this pie pan that I'm using, it's bigger,
4:41
so I think I could stand another half
4:44
or another whole can of this.
4:47
- [Theresa] I don't know that we have that.
4:48
Look and see if I didn't buy one.
4:52
- [Theresa] You had that one.
4:59
- [Theresa] That's all we got.
5:02
Well, it's just gonna make a real thin, skinny pie.
5:06
I think if you're making it using like a regular pie pan,
5:12
I think the one can would be enough.
5:15
But I'm using a china one, which is deeper
5:18
and a little bit bigger, so if you do that,
5:26
- Yeah, using at least two.
5:30
I got some graham cracker crumbs in here
5:32
and I'm just gonna scoop those out.
5:45
I've got three egg yolks
5:52
and that's gonna help it,
5:57
help it kind of bake like a custard, you know what I mean?
6:04
All right, now to cook those eggs,
6:08
I'm gonna add my fresh lime juice,
6:14
and that'll kind of just cook them a little bit.
6:19
And I'm gonna add 1/4 of a cup of Key West lime juice.
6:26
You know, you can buy the little Key lime,
6:30
the little Key lime limes,
6:32
but I would think they would be so hard.
6:36
I tried 'em once years ago,
6:37
but I said I can't tell the difference
6:39
between a regular lime and a Key lime.
6:42
- [Theresa] No, and I don't ever see them
6:45
unless you're probably in Florida.
6:47
- Well, no, yeah, the grocery stores here will carry 'em.
6:57
Now for your sweetened condensed milk.
7:07
And at the restaurant we make these,
7:11
which you would really have to maybe triple the recipe,
7:14
double or triple it easy.
7:16
We'll make 'em in a springform pan for the restaurant
7:21
'cause I want everybody to have a great big piece.
7:36
Okay, we just wanna mix this up real good.
7:40
And then I'm gonna add about a teaspoon of vanilla.
7:52
And I'm gonna keep mixing
7:58
until it's totally incorporated.
8:08
Now, if I were to use a mixer on this,
8:15
I wouldn't add my lime zest
8:20
until the very last and I'd add it by hand,
8:22
because that lime zest really helps it so much,
8:28
but it will get caught up in your beaters,
8:32
and I don't want to lose a speck
8:36
of that beautiful flavorful zest,
8:41
so I make sure I always just stir that in in the end.
8:54
Beautiful, beautiful!
8:57
of the easiest pies in the world to make, y'all,
9:01
so make sure you treat yourself
9:03
and your family to this recipe.
9:13
I think this is gonna be fine.
9:18
These dishes get so heavy.
9:20
Great, time of day I'm so afraid
9:22
I'm gonna drop it in the pie, y'all.
9:37
My crust kind of dropped down a little bit.
9:46
Then we're gonna put it in the oven
9:47
for about 15 minutes maybe.
9:57
Oh, it's hot, Theresa.
10:02
All right, guess who came here in time.
10:10
- I might not have let it cooled enough, but we'll see.
10:18
I sprayed my pie pan
10:27
Now when we serve these at the restaurant,
10:28
these are like about that thick.
10:31
So this is like a...
10:35
This is like a home-style Key lime pie.
10:41
Okay, Rootie Tootie fresh and fruity.
10:45
- Thank you. - There you go.
10:47
Would you like a cup?
10:48
- That's the lemon, not a lime.
10:49
- I know that, but I thought the color was pretty.
10:57
So I want to see what you have to say about my Key lime pie
11:01
because I think I know what you done said.
11:16
- [Paula] What's the best part about that?
11:22
- [Paula] I told him, I said I could just make the crust
11:25
and forget the filling. (laughs)
11:27
- Yeah, it's delicious.
11:30
- Good, good, good, good.
11:35
I think it's good, too.
11:36
Love and dishes, y'all.
11:39
But make it thicker.
11:40
Don't make it so thin.
11:42
- [Guest] It's a diet pie.
11:43
- Yeah, that's a diet slice, so you can have two. (laughs)
11:50
Hey, y'all, it's Paula Deen.
