- Y'all, I've got a quick story to tell you.
0:04
I have a book signing once a month at The Lady and Sons,
0:07
and I just meet all kinda wonderful people.
0:11
And my book signings can run a little along,
0:15
'cause we get to talking with each other.
0:18
Well, couple of book signings ago, this woman came up,
0:23
and she's southern, normally we talk kinda slow,
0:26
but she was talking real fast to try to get everything out
0:28
that she was wanting to tell me.
0:31
And I finally looked at her, I said,
0:33
"Listen, would you just come do a show with me
0:35
for my YouTube channel?"
0:37
And she said, "Yes, yes, yes!"
0:39
Well guess what y'all, she is here today,
0:43
and her name is Dana Standridge,
0:46
and she brought her husband David with her.
0:50
And David, you come on in
0:53
with your pretty pretty wife, Dana.
0:55
Come on with me.
0:58
So this is Dana and David Standridge.
1:02
And David was telling me the cutest story a minute ago.
1:06
So can you quickly share that with everybody?
1:08
Because I think it's hilarious.
1:11
- Yeah, well, how Dana and I met was,
1:13
I was five and she was four years old,
1:16
and their family came to our house to visit,
1:19
and Dana's got a twin sister,
1:21
and then she's got a older sister
1:23
that's not quite a year older,
1:24
so they're all about the same size.
1:26
- Man, they're triplets.
1:27
- Yeah, just about.
1:29
And so they came and they ate with us,
1:31
and stayed, and then played a while,
1:33
and then when they left, we were looking out the window,
1:37
my mom and I, and she said, "Now David,
1:39
when you get old enough,
1:40
you just pick any one of those three girls to marry
1:43
that you want to you and marry them."
1:45
And so evidently I took it serious,
1:48
because I didn't remember that,
1:50
but then years later we got engaged
1:52
and then my mom reminded me,
1:54
then I remembered, you know, remember her saying it.
1:56
- She told you to pick one of those three girls?
1:58
- That's right.
1:59
- I was the lucky one. - And he picked Dana.
2:02
- Hard, I know.
2:03
- I hit the jackpot.
2:04
- I think I did.
2:05
- Well, I think that y'all both did.
2:06
It sounds like y'all both did.
2:07
Dana has a cookbook.
2:10
She managed to tell me all of that when I invited her in.
2:13
- Yes.
2:14
- So you can get this.
2:17
- On Amazon.
2:17
- On Amazon.
2:19
- It'll come as an ebook or as a print book.
2:22
- Okay.
2:23
- So if you want it today, you can get it as a ebook.
2:24
- Oh, okay.
2:25
Okay, that means you read it off your iPad and your phone.
2:28
Right? - Right.
2:29
- I'm computer illiterate, y'all
2:32
- It's all right, we've got a print book just for you.
2:35
- Oh, I know it.
2:36
You sent me this.
2:38
- I did.
2:39
- Did you bring it?
2:40
- I brought it to the meeting we had.
2:42
- The book signing?
2:43
- The book signing.
2:43
- Yeah.
2:45
- Oh, it was so good.
2:46
When I was waiting to get in
2:47
to see Paula at the book signing, y'all,
2:48
I've watched her since I was a,
2:51
since she's been on there.
2:52
And she has been such a wonderful person
2:56
for me to look up to through the years.
2:58
And I'm gonna tell y'all, I was so overcome.
3:00
I looked at my husband, I said,
3:02
I'm really trying not to cry.
3:03
I'm so excited to go in there and see her
3:06
But you know something else we have in common?
3:08
- What?
3:09
- We love to cook.
3:10
- Yes we do.
3:11
- And I love that you love to cook,
3:13
and you see it in you.
3:14
- Speaking of cooking, girl, let's get on with it.
3:17
- Yes.
3:18
- Because I want, what do you call them, nasty biscuits?
3:22
- No, ugly biscuit.
3:23
- Ugly biscuit.
3:24
(both laugh)
3:27
- Yes, ugly biscuit.
3:28
- See, I think even a nasty biscuit might be good.
3:30
- Oh yeah.
3:31
- Okay, so get with it girl.
3:32
- Get with it.
3:33
- Tell us what you doing.
3:34
- Okay.
3:35
- Tell us what everything is.
3:37
- Now the recipe is in my cookbook,
3:38
and it's called ugly biscuits.
3:40
- [Paula] Not nasty biscuits.
3:42
- [Dana] Yeah, ugly biscuits, it's on page 27.
3:45
Okay, we got.
3:46
- [Paula] There are no ugly biscuits.
3:47
- [Dana] Two cups, this is easy.
3:49
Two cups of self-rising flour.
3:52
It's gotta be self-rising, Paula.
3:53
Gotta be self-rising.
3:55
Make a well in the middle.
3:57
- [Paula] But if you don't have self-rising
3:59
and all you have is plain,
4:01
all you have to do is add a couple of teaspoons
4:03
of baking powder and maybe a half a teaspoon of salt.
4:08
- Correct.
4:09
- You'll have self-rising flour.
4:10
- And that's exactly right.
4:11
That's exactly.
4:13
Well, now what we're gonna do right now
4:15
is we're gonna take our cup of milk
4:18
and we're gonna take a tablespoon.
4:20
- [Paula] A cup of "mealk".
4:22
- [Dana] Yes, and a tablespoon of vinegar.
4:24
- [Paula] I don't sound that southern, do I Eddie?
4:27
- No.
4:28
- [Eddie] Maybe, maybe a little.
4:29
Maybe a little bit.
4:30
- What did you say, Eddie?
4:31
- [Eddie] Maybe a little, if I close my eyes,
4:33
I can fairly recognize it.
4:34
(all laugh)
4:36
- Well I put the vinegar in the milk
4:37
so that it will sour the milk.
4:39
Yes.
4:40
- [Paula] If you don't have buttermilk
4:42
and all you have is milk, then add
4:45
about a teaspoon or two of vinegar to your milk
4:49
and let it sit and it will sour and curdle that milk.
4:53
- [Dana] Yes, that's exactly right.
4:55
And I'm gonna tell you, if you do have buttermilk,
4:57
you can use buttermilk in it's stead.
4:59
But Paula, I have found that I always add
5:02
a little bit of that vinegar,
5:04
because it makes the biscuit softer.
5:06
- Really?
5:07
- Yes.
5:08
- So I'm gonna let that sit there a minute,
5:10
and I'm gonna prepare my skillet.
5:11
- Did you just now put the vinegar in it?
5:14
- Yes, ma'am.
5:15
And there's a little drop that didn't go.
5:17
And now I'm gonna put two tablespoons, in my biscuit pan,
5:21
of butter.
5:23
- She brought this pan from her house.
5:25
David, her husband, found this for her at a yard sale,
5:29
didn't he?
5:30
- [David] Yeah, thrift store.
5:31
- And it was not in good shape, Paula.
5:32
I had to bring it back to life.
5:35
- Have to get it seasoned.
5:36
- But we're gonna get this melted,
5:37
'cause I'm gonna tell y'all something,
5:37
we are cooking this biscuit in butter,
5:40
just like Paula would approve.
5:41
- That's exactly right, honey.
5:43
- So this is going in the oven to get this hot
5:46
and melt the butter.
5:47
- I was gonna say, if you wanna heat it up,
5:47
you want the stove or you wanna go ahead and put it
5:49
in the oven?
5:50
- Whatever you need me to do.
5:51
- It don't matter, you just tell me.
5:52
- It'll work right here if you wanna heat it on the stove.
5:56
I'm let you turn that on.
5:58
- Yeah, because, ouch, it can be confusing.
6:02
- There we go.
6:04
And the reason we want this to be a hot skillet
6:08
is because as soon as we pour this batter in,
6:11
it's gonna start sizzling into it.
6:13
And we're gonna, you know, Paula,
6:14
you know how we do our corn bread?
6:16
- That's right.
6:17
You want a hot, hot, hot, hot pan
6:19
when you're making corn bread.
6:20
All right, now here we go.
6:22
We got our two cups of self rising.
6:24
And we're gonna pour this in.
6:25
Y'all, this is really fast.
6:27
See how it's clumpy?
6:28
- [Paula] You know what, my friends and I
6:32
like things that are fast and good,
6:35
but homemade.
6:36
- [Dana] Homemade.
6:37
Well, I have people that stop me when I go places
6:39
and say, those are the only biscuits I eat now.
6:41
- No!
6:43
- I'm like, yeah.
6:44
- So y'all make sure you get all this now.
6:45
It's two cups of.
6:47
- Flour.
6:48
- Self rising flour, a cup of milk with how much?
6:51
How much?
6:52
- A tablespoon of vinegar.
6:53
- Tablespoon of vinegar.
6:54
- And one stick of melted butter.
6:56
- Now we're talking.
6:57
- [Dana] Now we're talking,
6:59
we can call these the Paula biscuits, couldn't we?
7:01
- [Paula] Yes. - [Dana] With the butter?
7:03
- [Paula] Yes.
7:04
- [Dana] And we're just gonna stir this together.
7:05
Now I'm gonna tell you about this batter,
7:08
if you don't, if you get it and it's too thick,
7:11
we'll have to add a little water to it,
7:12
cause we don't need it thick, it's a drop biscuit, Paula.
7:15
- Yeah, okay.
7:16
- So I think I might need a smidge of water.
7:18
Could you get me about half a cup,
7:20
but I won't use that much.
7:22
- I'll get some water.
7:23
- I got Paula in the kitchen with me, I'm so excited!
7:28
- [Paula] I'm your sous chef.
7:28
- Don't you love her?
7:29
- [Paula] I'm your sous chef today, honey.
7:31
- Okay, now I'm gonna add just a smidge.
7:33
Now why is it not accurate on that, y'all?
7:36
The different humidity makes difference on your flour.
7:41
And we're in Savannah, and y'all have plenty of humidity.
7:44
- [Paula] Listen, you ain't kidding.
7:46
- [Dana] I know.
7:47
- [Paula] You ain't kidding.
7:48
- So I'm getting this, yeah,
7:49
we're getting this a little bit thinner.
7:52
This is how I do mine, I just get in there
7:54
and dollop them in like that.
7:57
And I don't make any, y'all,
7:58
this is a mother that's just trying to get food
8:01
on the table.
8:02
This was me that day, trying to get food on the table.
8:06
- [Paula] Like most mamas.
8:07
- [Dana] Like most mamas.
8:08
And I need easy, fast, and nutritious recipes.
8:11
And y'all hear that sizzling?
8:13
- [Paula] I just turned it off 'cause I didn't want 'em to.
8:16
- [Dana] All right.
8:18
- [Paula] Look at that Dana.
8:19
Dana.
8:20
- Dana.
8:21
Okay, there we go, and now this.
8:22
- I'm gonna change your name to Dana.
8:24
- This is gonna go into a 475 oven for 10 to 15 minutes,
8:30
depending on how your oven does.
8:31
The bottom's gonna be buttery and golden,
8:34
and the top will be lightly browned.
8:37
So we'll put 'em in there for 10 to 15,
8:39
start watching them at 10.
8:41
- But that's a hot oven, y'all.
8:42
- It's a hot oven, and it's gonna cook fast.
8:44
- Dana is not used to cooking in a commercial oven
8:48
because those biscuits got done in just no time.
8:51
- In no time at all.
8:52
- [Paula] Which works out really good for my stomach.
8:54
- [Dana] Yes, yes, mine too.
8:56
And these are what the ugly biscuits look like.
8:58
- [Paula] And they ain't a thing ugly about it.
9:00
- And when you flip them out on the other side,
9:02
they're gorgeous, because they are beautiful.
9:05
- You wanna do that?
9:05
- Well, I'll just show you one right quick.
9:07
- Okay.
9:09
- And pull one out, show you how light and fluffy they are.
9:13
And they're hot as the firecracker.
9:15
Look at that.
9:17
Oh, Paula don't get burned.
9:19
- Oh.
9:22
- Are you gonna have one?
9:23
- Oh, well, you know, I am.
9:26
You know I am.
9:28
I'm coming right behind you.
9:29
- Look at that biscuit, y'all.
9:32
- Oh, yeah. - Look at that biscuit.
9:35
- [Dana] Oh my goodness.
9:36
Look how light and fluffy that is.
9:38
- [Paula] Yes, light and fluffy.
9:40
- [Dana] Oh, and butter.
9:41
- [Paula] How much butter you want?
9:43
- [Dana] More, please.
9:45
I need a Paula dose of butter.
9:47
- Okay, there you go.
9:48
- There I go.
9:51
- Oh yeah.
9:52
Now we've got sweet potato butter or apple butter.
9:56
- Ooh.
9:57
- Or I've got like strawberry preserves.
9:59
- Ooh, I'm gonna.
10:00
- What do you want?
10:01
- I'm just gonna try 'em all in a minute,
10:03
but I wanna do just butter.
10:05
- I just want plain biscuit right there.
10:06
- Biscuit and butter, butter biscuit.
10:09
- And you gonna make some gravy, aren't you?
10:10
- Oh yeah, honey, we're gonna have some gravy,
10:12
sausage gravy and biscuits.
10:15
- I'm in.
10:16
- Here we go.
10:19
- Mm, mm.
10:22
I might never make a pretty biscuit again.
10:27
Makes you cry.
10:30
Y'all have got to give Dana's ugly biscuits a try.
10:35
- [Dana] I hope you like them.
10:37
- [Paula] Well, I do.
10:38
- [Dana] Good.
10:39
- [Paula] I do, honey.
10:40
I love them.
10:41
Like I said, I may never make a pretty biscuit again.
10:43
- Oh, and they're really good with gravy,
10:46
smothered and gravy.
10:47
- I can't wait.
10:48
- We'll work on that one.
10:49
- Get that pan going.
10:50
What you waiting on, girl?
10:52
(Dana and David laugh)
10:55
Y'all come back for the gravy.
11:00
Hey, y'all, it's Paula Deen.
