- Hey, y'all, it's Jamie Deen,
0:02
and I'm back here in Mama's kitchen.
0:03
That only means one thing.
0:06
What does it mean? Simple recipes for y'all.
0:09
It's summertime. It's hot as the hinges.
0:12
I'm not going to tell you how hot
0:13
my teenager tells me it is.
0:15
It's inappropriate unless you're a teenager.
0:17
It's boiling hot, but who cares? We're still outside.
0:20
It's summertime and we need barbecue sauce
0:22
so we're making a barbecue sauce today.
0:25
Now y'all already know the Deen Brothers
0:26
makes the two best barbecue sauces in the entire world.
0:29
You can find those in any of my mama's restaurants,
0:32
but if you can't get into Mama's restaurant
0:34
and you wanted to make some barbecue sauce at the house,
0:36
this is delicious, and it's a tropical twist.
0:39
We're gonna be using fresh fruit juices
0:42
in this barbecue sauce.
0:43
I love making barbecue sauces.
0:45
You can make 'em, oh, you can make 'em so thin
0:48
or you can make 'em thick.
0:49
You can make 'em light, you can make 'em dark,
0:50
and you can make 'em mustard.
0:52
It's a lot like salsas.
0:53
You can do salsa a lot of different ways,
0:56
but boy, howdy, do I love a good pineapple salsa.
0:59
Sometimes a little bit of citrus
1:02
in a flavor that we're used to will really jump it up
1:04
and surprise you, so let's get started.
1:07
Got a little food processor.
1:08
Y'all don't see me work with these machines very much.
1:11
I'm gonna blend together our onion.
1:14
We got some green onions
1:15
and I've got a seeded jalapeno here.
1:18
Not everybody has peeps and can eat the jalapeno seeds.
1:22
And then we've got some ginger.
1:24
Ginger, jalapenos, and green onions.
1:29
- [Theresa] And some oil.
1:31
(food processor whirring)
1:32
And then into this, we're gonna add...
1:36
How much of this oil did we say, Teresa?
1:38
- [Theresa] Two tablespoons.
1:46
Don't pour your ingredients over your container
1:48
unless you're a professional like me.
1:52
Now we're gonna have a paste.
1:55
(food processor whirring)
1:57
Okey-doke. Now we've got our paste going here.
2:02
And now into our pot,
2:07
we're gonna combine all these ingredients
2:09
beginning with our jalapeno, green pepper, ginger.
2:18
Like the way it's starting already. It smells fantastic.
2:23
And so we're making tropical,
2:26
so we're gonna add some juices.
2:30
We've got pineapple, we have mango.
2:34
We have apple cider vinegar.
2:40
We've got some black pepper, got our salt.
2:48
We have ground mustard and ketchup.
2:59
Normally, if I'm making a barbecue sauce,
3:05
got some brown sugar that goes in there,
3:07
but we're using molasses today,
3:10
which is a great sweetener.
3:14
I've got a half a cup of fresh molasses.
3:23
Fresh molasses as opposed to, I don't know,
3:25
jarred and put in the grocery store
3:27
like exactly the one that I just made.
3:29
Okay, boy, that's a lot of ingredients.
3:30
I think we got 'em all.
3:34
Here, while I'm stirring that,
3:36
I read through the list 'cause Teresa knows
3:42
my memory's about as long as my pants,
3:44
which are always shorts.
3:47
We got our green onions roughly chopped,
3:49
our jalapenos seeded and chopped,
3:51
our vegetable oil all ground together with our ginger,
3:54
ketchup, mango, pineapple, apple cider vinegar,
3:57
molasses, some salt, powdered mustard, and black pepper.
4:03
Oh, I can't wait to try this.
4:06
But we're gonna have to wait, y'all,
4:07
'cause this is gonna cook.
4:08
We're gonna cook this together
4:14
maybe about 10 minutes.
4:17
Oh, and you know what helps? Some heat.
4:21
Boy, that's gonna help us a lot.
4:24
So what y'all want to talk about?
4:25
We got 10 minutes and I just turned the thing on
4:27
so I'd say probably 17 minutes until this is done.
4:32
Or we could take a break and when you come back,
4:35
I'll have it all ready, okay?
4:38
Mm-hmm! I wish y'all could smell it.
4:43
We've been cooking this down for about 10 minutes.
4:45
I'm gonna turn this off and let's give it a test drive.
4:48
I got a little piece of bread here.
5:12
That's delicious. That is delicious.
5:19
I don't want to say I'm surprised
5:20
because it's my mama's recipe,
5:23
but I thought I had the barbecue market cornered.
5:27
Now what you could do, cool this down completely.
5:30
Put it in an airtight container,
5:32
like if you've run out of pickles or something,
5:35
clean it, put this in there.
5:36
You can keep this in your refrigerator for up to one month.
5:39
With this tropical flavor
5:40
and then it's got the smoky background
5:43
of a traditional barbecue sauce,
5:44
I'm putting this all over ribs and chicken.
5:47
I'm chopping barbecue.
5:48
I'm eating barbecue tropical sandwiches. Mm, this is-
5:52
- [Theresa] Seafood would be awesome.
5:54
- If you want to put this on your seafood
5:56
and you see food, put it on there.
5:59
This is some good sauce.
6:01
And I tried to be a good son. Look at that.
6:03
Two things together. I appreciate it, y'all.
6:07
Until next time, I don't know. Thanks for coming.
6:09
I'll see you around the kitchen. Thank you.
