0:00
- Hey y'all, one more time.
0:02
When I was writing the "Lady and Sons Two"
0:05
at my round table in the dining room
0:09
on Abacorn Street, you know,
0:10
I've told y'all before,
0:12
I wrote the entire book with a pencil and a notebook.
0:18
And so I said, I, you know,
0:24
include some grits in this.
0:26
And I said, but what can I do?
0:29
So I went into the kitchen and I had a can of Rotel tomatoes
0:34
and I said, how about some tomato grits?
0:39
Well, this turned out so good,
0:41
that we actually used it in the restaurants
0:46
and I think I'm not sure,
0:49
but Paula Deen's Family Kitchen in Pigeon Forge,
0:53
they may still serve these on their breakfast menu.
0:57
I just can't remember.
0:59
All right, so this is what I did.
1:02
I started out with two cups of water.
1:08
And one cup, no, one and a fourth cup of milk.
1:13
And I'm gonna bring that to a boil.
1:17
(electricity crackles)
1:19
I'm gonna add my salt
1:20
because salt is very important
1:22
when you're cooking grits y'all.
1:28
Get out my handy dandy whisk.
1:33
And because this whisk is also very important, y'all,
1:37
when you're cooking your grits,
1:42
that you are constantly
1:45
turning those grits in the liquid, so they won't clump.
1:52
And I have butter, I have cheddar cheese,
1:58
And in the recipe, it calls for a roll of garlic cheese,
2:04
which they no longer make anymore.
2:07
So I'm gonna substitute that
2:09
and you can substitute with anything you want to.
2:12
But I'm gonna substitute it with Cheese Whiz
2:15
because I think that garlic roll
2:18
was probably like Cheese Whiz.
2:22
And I've got my garlic powder
2:24
because this doesn't have garlic in it.
2:27
I've got my eggs, I've got more cheese.
2:33
And so we're just gonna wait for that to boil, pss.
2:38
So I'm gonna add my grits, and I put my salt in.
2:42
Like I said, you wanna keep turning those grits,
2:46
turning them, turning them, turning them,
2:49
and not giving them an opportunity to lump
2:53
because nobody likes lumpy grits.
2:59
So we'll get that back to a boil.
3:05
I am gonna go ahead and add
3:12
You want 'em good and buttery.
3:15
And by putting that butter in now, it will keep,
3:18
it will deter those grits from lumping,
3:21
the fat in it, in the butter.
3:28
So two important things about good grits,
3:38
All right, so I'm gonna turn it down
3:39
'cause it's gonna start boiling again.
3:42
And I always use five minute grits, y'all,
3:44
just because I like them.
3:47
And if I'm in a hurry,
3:48
I can have 'em ready in 10 minutes, 15 minutes.
3:51
So if I start with a long cooked,
3:54
you gotta cook 'em 45 minutes.
3:57
But these, I can slip and slide either way.
4:04
Now, I'm gonna add my green onions.
4:11
I'm gonna add my garlic powder.
4:16
And I'm gonna let this cook for two or three minutes.
4:21
I just stuck my finger in it, y'all.
4:25
And I'm going to add another half a teaspoon of salt.
4:30
I think that'll fix it up good.
4:33
I'm gonna add my Cheese Whiz.
4:35
And remember this is, this is a 15 ounce,
4:38
so half of that would be seven and a half.
4:40
And I need six ounces.
4:43
So about like that much.
4:52
I am gonna let that cook for two or three minutes.
4:54
I'm gonna put the lid on and put it on low
4:57
and give that about three more minutes.
5:00
But while I'm waiting on that three minutes,
5:02
I am gonna go ahead and spray my casserole dish
5:05
because I don't want them to stick.
5:09
Now I'm gonna add my Rotel tomatoes.
5:13
I'm gonna take a little of that juice off.
5:22
And I'm using the original because if I use the hot,
5:26
there's a good chance the children couldn't eat it so.
5:32
And I do want them to be able to eat and enjoy.
5:39
All right, now I'm going to add
5:55
I'm just going to cube it
6:01
throughout those grits.
6:11
- [Theresa] These need to be called tomato cheesy grits.
6:13
- Yeah (Paula laughs).
6:15
Yes, 'cause they are cheesy.
6:28
I don't know what that little bit of cheese is out for.
6:33
Let's just put it in (Paula laughs).
6:36
Ain't no such thing as too much cheese.
6:41
All right, now I've still got my eggs.
6:43
And our eggs are important in this dish
6:46
because they're going to allow it
6:49
to cook up kinda like souffle, you know, make it thick.
6:53
So I'm gonna have to temper,
6:58
I'm gonna have to temper these eggs
7:00
with some of the hot grits
7:06
'cause I sure don't want scrambled eggs
7:08
in my casserole dish.
7:12
- [Theresa] You're welcome.
7:13
- [Paula] I set that right away, didn't I?
7:15
- [Theresa] No worries.
7:17
- Okay, by tempering,
7:21
that means that I'm going to slowly
7:29
get those eggs warm enough
7:31
that I can put 'em in the pot
7:33
without them turning to scrambled.
7:38
And you just do that very slowly.
7:44
Little bit of hot at a time.
7:50
So I will go ahead and put that in.
8:02
Just gonna fold those eggs in there.
8:09
And they're not scrambling,
8:10
so that's a good sign.
8:25
Okay so, I'm gonna let that cook
8:27
for two or three minutes.
8:31
So I wanna make sure it's good and hot
8:34
when I pull my grits into the casserole dish
8:37
and go into the oven.
8:39
I don't order 'em to have to work real hard
8:45
these are good and hot again.
8:47
I'm gonna cut that off and I'm gonna pour them.
8:51
- [Theresa] Please be careful.
8:53
- Into my casserole dish.
9:01
That here makes me smile.
9:07
And I hope y'all's food, whatever you cook,
9:16
This is going in the oven, 350
9:21
for maybe 30 minutes, maybe 45 minutes.
9:24
I'm gonna be checking it,
9:26
and you can see I've got, still got a bowl of cheese.
9:31
Now I'm not going to put it on there yet
9:33
because your cheese can sometimes get brown and hard.
9:37
I don't want it that way.
9:39
I'm gonna pull this out when it's got five minutes left,
9:44
and then I'll put the cheese on it and let it melt.
9:57
Beautiful dish of tomato cheese grits.
10:04
Hot as a fox in a fire.
10:20
Can I fix that back where nobody knows?
10:23
(Theresa laughs) Yes, I can.
10:25
I'm the queen of that.
10:36
You know what I want Theresa, with this?
10:38
- [Theresa] What do you want?
10:39
- I want some fried fish with it.
10:46
- [Theresa] We need to send Henry out.
10:48
I love it when Henry goes out and catches those trout.
10:54
The trout is the best fish that comes out of that water
10:57
as far as I'm concerned.
10:59
'Cause I'm a fresh water girl.
11:01
You know, I like fresh water fish.
11:08
we had that storm over the weekend
11:12
and Michael has a freezer out there in his garage,
11:14
and that's where we keep our salmon
11:19
that's custom ordered
11:22
and all of our prime steaks, and we lost every bit of it
11:26
'cause Michael didn't think to check
11:28
when the power went off.
11:31
I don't even wanna think about it.
11:39
This is scrumptious, y'all.
11:43
So enjoy, bon appetit Southern style, y'all.
11:49
Have a good one, mm.
