So I know it was aggravating for the team,

but we always had good, crisp lettuce.

So today I'm gonna show you my way,

how I solved the problem.

Now, I've got regular lettuce,

love the butter lettuce,

and then of course, I've got the romaine.

And romaine is, in my salads, I like a mixture.

So let's start with the butter lettuce.

Now, when I get home from the grocery store,

this is the first thing I do,

even if I don't plan on using it right then.

a bucket full of ice water.

And of course, we had, at the restaurant,

we had those great big, deep sinks,

and we'd have 'em loaded down with our lettuce.

So this is what's gonna

crisp our lettuce back up so quickly.

But before we put it in our ice water,

we have got to come in with a knife and trim that,

there was no way that lettuce could drink water

because it was almost like, you know, how blood clots?

And so you have to open that vein up

so it can drink water again.

Now, the first thing I'm gonna do is-

run it under my cold water,

'cause we don't know what kind of

insecticides they've spread,

they have spread on our lettuce,

so I'm gonna drop that down in that ice cold water.

And then I'm gonna move on to the romaine.

And I love romaine lettuce.

It gives a lot of body to your salad.

This one, they had just trimmed this one not too long.

(knife clanging) And I'm gonna pull off

And then again, I'm gonna wash it.

I'm gonna try to pull it apart

and let the water get down in there

and clean it out good.

And now I'm gonna stick that whole

head of romaine down in that water.

And lastly, the good old iceberg lettuce.

And you gotta have iceberg lettuce

when you are having tacos or something like that,

but this is the mixture I would use

if I was serving my family a salad.

So, I don't worry about cutting that out.

I just put it on my counter

(lettuce thudding) and knock it real good,

and just take out the whole core,

So if I have room in my refrigerator,

I'll take, like, a pitcher

and put some water in it,

and then stand my romaine up in that.

But we would let our lettuce, you know,

drink a little while,

and then we would drain it good.

All right, those tips are,

Oh, this butter lettuce,

Now, all I do with that is I put it back in the container,

there'll be enough water,

and maybe not, maybe it's drained too good,

so I'm gonna put just a little bit of water in there

so it can continue to drink.

You wanna make sure that where you trimmed it,

that it's touching a little water.

And then you wanna refrigerate it.

we'd let this soak in the water for a little while.

Then like I said, we'd take it out and let it drain.

And I like to wrap mine in paper towels,

and then in a dish towel.

Like I said, if you have room in your refrigerator,

this lettuce is gonna be so nice and crisp.
