- Hey y'all, this is Jamie Deen,
0:01
I'm back in Mama's kitchen,
0:02
and today I'm making a staple,
0:04
over 30 something years we've been doing these,
0:07
we're doing cheese biscuit, y'all!
0:08
But let me tell you the real reason why I'm excited.
0:11
Mom has a young man out here
0:12
that helps her take care of everything
0:14
when this older man is not available,
0:17
or my older, younger brother's not available,
0:20
and Mike is a very picky eater,
0:21
so as many of these recipes that I've ever done,
0:24
this is the one he is excited about.
0:26
Mike doesn't eat a lot of green stuff
0:28
and you know me, I'm known for healthy eating.
0:32
So anyway, we're gonna do cheese biscuits today.
0:35
Let me tell y'all what,
0:36
I got, I made so many cheese biscuits
0:38
when we were at 311 West Congress St.
0:40
This has been, we've been in our new building 20 years now,
0:43
so this was 25 years ago.
0:45
I'd made cheese biscuits so many times,
0:47
I thought, what can I do to change a cheese biscuit?
0:50
So, I substituted beef stock instead of milk,
0:55
and I called it a beef-cuit.
0:57
A beef-cuit instead of a biscuit,
1:01
and never offered them to the public,
1:03
but I did wind up offering a handle sandwich,
1:06
which is a piece of white bread with a chicken leg in it.
1:08
So, you never can tell, beef-cuits might come back around.
1:11
Mom has a box of mix that you can buy.
1:15
Make it a lot easier than this.
1:16
This is the homemade recipe.
1:18
This is what we do it,
1:19
and this is a very simple biscuit recipe.
1:21
I tell you that because Mom has worked really hard
1:24
to develop all these different cake mixes
1:27
and what's, dried goods?
1:32
Okay, so we got our biscuits, she's got cornbread,
1:34
we've got our gooey butter cakes, we've got cakes,
1:36
all different kinds of things,
1:38
but if you find yourself in a pinch,
1:39
and you want cheese biscuits,
1:40
this is how easy it could be.
1:42
We're gonna start with our flour,
1:47
and we've got our milk,
1:56
and we've got our two types of cheese,
2:00
and we'll mix all this up together.
2:03
I'm gonna start it like this.
2:07
If you have a ice cream scoop at the house,
2:09
that is the best way to ensure
2:11
that you have the same size biscuit,
2:12
so that you don't have to roll 'em out and cut 'em,
2:16
or worry about any of that.
2:17
You can scoop these up with,
2:19
I think I've got a six ounce ice cream scoop
2:23
Now, I've added a little bit more flour to this.
2:26
My biscuits were a little loose,
2:29
and I don't want loose biscuits.
2:30
You see how these kind of standalone
2:33
and you don't have to really space these out too much.
2:36
They do rise a little bit,
2:38
but when we cook 'em at the restaurant,
2:40
we pack 'em on the pan,
2:41
'cause of course we want to get
2:42
as many made as we can.
2:44
Those folks are waiting
2:46
and it kind of just grows into a biscuit pan,
2:51
and we brush it with our garlic butter,
2:53
and then we're able to just cut 'em
2:56
but this pan's gonna work out, I think just perfect.
3:00
Okay, this is our biscuits.
3:01
They're going in the oven at 325 for probably,
3:04
I don't know, we're gonna keep an eye on 'em.
3:05
I'll let you know when they're done.
3:06
Okay y'all, we got our biscuits outta the oven,
3:09
so I'm gonna put a little bit of garlic powder
3:13
down in our butter and look at these biscuits.
3:20
and then right over the top
3:21
of these hot biscuits goes this garlic butter.
3:25
Don't say I'm, too much butter.
3:28
and she'll come running outta that bedroom just as fast.
3:33
You wanna make sure you get all these super coated,
3:36
and it's gonna soak in.
3:37
Y'all, a cheese biscuit, ooh, in a bowl with
3:40
some soup over the top of it, makes my mouth water.
3:45
Tomato dill soup on a cheese biscuit
3:47
is probably one of my favorite flavors
3:50
that's ever come out of the restaurant,
3:53
second only to the beef-cuit.
3:55
Y'all heard about the beef-cuit, haven't you?
3:57
Cheese biscuit, y'all,
4:02
Really super delicious and heated and hot.
4:06
Thanks for doing in y'all.
4:07
I'll see y'all around the kitchen.
