because it was gonna be a little messy

trying to package the cake with icing.

So I didn't put an icing on that

and people loved that cake so much.

I had a lot of requests for it.

So I'm gonna make that chocolate pound cake today.

And I was looking through my brother's cookbook

"Uncle Bubba's Seafood Cookbook",

and he had Aunt Jesse's cake recipe

in his book that included the icing.

So after we get this cake together,

I'm gonna share with y'all

Aunt Jesse's recipe for the icing.

And you can choose to ice or not ice.

Anyway, the first thing I'm gonna do is,

I have to catch up on this.

I'm going to sift together and I'm just gonna

read off the measurements y'all.

It's three cups of all purpose flour,

a half a teaspoon of baking soda,

a half a teaspoon of baking powder,

a half a teaspoon of salt, five tablespoons of cocoa.

And over here we're gonna have

two sticks of softened butter.

And we're gonna have,

I think this is like a half a cup, of a solid shortening.

And the solid shortenings,

they come in individual wrapped logs,

I choose to use the butter flavor, naturally,

but you can get this with the butter flavor

or the plain, white, solid shortening.

I'm gonna sift our dry ingredients together.

And I'm going start by,

See it doesn't take but a second,

and I feel like it's safer. - That was even for like

All right, so in goes our salt, our baking powder,

And when I get this down a little bit,

I'm gonna throw in our cocoa.

So we've got our dry ingredients ready for us,

we've got our buttermilk and we've got our vanilla,

and we've gotten our five eggs.

So I'm just gonna cream our butter for a minute.

All right, and we're adding three cups of sugar.

So this is a sweet pound cake

which you know when you're making a chocolate pound cake

chocolate can be bitter.

So that's why it's three cups of sugar instead of two.

So we are just gonna beat this until it's fluffy and light.

And then we're gonna add our eggs one at a time.

I've got this pretty light and fluffy.

Now I'm just gonna come in here with my spatula

and push the sides down,

make sure it continues to beat evenly.
