- Oh, you know, I was talking earlier about once in a while
0:06
and it's gonna happen.
0:07
It's gonna happen to everybody.
0:09
You get a text message
0:14
or a email from someone that said they tried this recipe
0:18
and it tasted wonderful,
0:19
but it just did not work out for me.
0:22
So, I said I was gonna make them
0:27
and see if I had the same problem
0:30
and this, this notice from Ashley Smith, God love her.
0:35
She said, Paula, I tried this three different times.
0:41
(laughs)I appreciate your patience, Ashley,
0:44
'cause I might would've given up at that point.
0:47
But I remember I formulated this recipe, gosh,
0:51
I can't remember, it's been so many years ago.
0:53
But I know it's a kind of sensitive recipe,
0:58
because you're working with marshmallows and sweet potatoes,
1:01
which are not the most firm vegetable you can get.
1:07
And so I noticed that the recipe
1:08
on the web is a little different from the one in the Bible.
1:15
The one on this,
1:18
on the web calls for two tablespoons of orange juice
1:22
and it calls for one tablespoon of orange juice
1:27
in the cookbook.
1:28
So, you know, sometimes we just have to make a judgment call
1:34
because the testers testing my recipes could have thought,
1:39
"Hmm, I might need to do this."
1:41
So anyway, I would leave out the orange juice altogether,
1:47
because that's gonna give your potato liquid.
1:50
And you want these as firm as you can get 'em.
1:55
The recipe calls, to make eight balls,
1:58
I think you use four, kind of small sweet potatoes.
2:02
So you see how soft and liquidy those are.
2:09
And like I said, I remember it being an issue
2:11
when I cooked them years ago.
2:15
So I thought for the orange juice,
2:19
I'm just gonna put a little orange extract.
2:24
And this is good, good, good.
2:26
This is good, good stuff.
2:30
I'm going to use like a half a teaspoon
2:34
just to replace that orange flavor.
2:38
And I hope all this helps you, Ashley.
2:41
I wish these potatoes were a little bit stiffer.
2:46
Now I'm gonna add the white sugar, the brown sugar,
2:52
and that wonderful orange zest.
2:56
Oh, that smells so good.
2:58
Is this from our tree or?
3:02
Smells delicious.
3:05
All right.
3:08
So the sugars are going to bring out the moisture
3:11
in the sweet potatoes, too.
3:15
So, here's what I'm kind of thinking,
3:20
to make this easier for you.
3:26
I'm thinking, see how much wetter they have gotten.
3:30
And that's just with the pure sugar bringing
3:33
out the moisture.
3:34
So that's, that's gonna be kind of hard.
3:37
So this is what I'm thinking.
3:48
The orange extract is perfect.
3:51
It's perfect in there.
3:53
- [Woman 1] How much orange extract?
3:54
- Half a teaspoon.
3:56
So here's what I'm thinking, y'all.
4:00
To make life easier
4:01
and hopefully not change the flavor of the recipe,
4:05
I'm gonna add some flour to those sweet potatoes
4:12
and we'll see how it reacts to that.
4:16
(bowls clanking)
4:23
I don't want it to change the flavor,
4:28
because they are so, so good.
4:32
But look, you can see the liquid gathering around the edges.
4:41
So let's just see what this will do.
4:46
That was probably, maybe, two tablespoons, you think?
4:58
Okay, it's getting a little firmer.
5:02
And I'm gonna add another tablespoon.
5:04
And you know what might help?
5:11
Because I wanna, I wanna get this perfect for y'all,
5:14
'cause it's so good.
5:16
I think I even served them on the buffet I think
5:19
at Thanksgiving when we were in our first location downtown.
5:25
But it's, it's been a while.
5:27
So I think it might help too, Ashley,
5:33
to put this in the refrigerator and let it get cold.
5:36
And you know what, I'm gonna go ahead
5:38
and this will be one tablespoon of flour
5:41
for each potato that we used.
5:44
Yeah.
5:47
And I think if we chill this,
5:50
it would be easier to work with.
5:54
So I just hope that flour doesn't.
5:57
(spoon banging)
6:00
I can't tell.
6:01
I can't taste the flour.
6:02
So I'm gonna put this in the refrigerator
6:06
and get it nice and cold.
6:10
And while I'm doing that.
6:15
This refrigerator is so full!
6:20
Junk, junk, junk, junk. (laughs)
6:25
And while that's getting cold, I'm gonna go ahead
6:29
and mix up our coconut
6:35
with cinnamon and nutmeg,
6:43
because we gonna roll our balls in this.
6:51
It's gonna give it another little kick.
6:53
Okay, Ashley. (laughs)
6:55
Let's see if we can figure out these sweet potato balls.
7:00
I did put these in the refrigerator
7:03
and got 'em nice and cold.
7:06
So, we wanna make like a two or three inch ball,
7:13
and I'm gonna sit that on some of our coconut,
7:27
and form our sweet potatoes around that.
7:36
I know that you do have
7:37
to be careful when you're baking these Ashley,
7:41
because the sweet potato will burst (laughs)
7:47
if the marshmallow gets overcooked. (laughs)
7:53
All right, Ashley, I hope this has helped you, honey,
7:57
watching me do this.
8:02
And hopefully they will turn out and won't be flattened.
8:07
So just a review.
8:09
I decided to try one tablespoon of flour
8:12
for each sweet potato that we used.
8:16
And I added a tablespoon of flour to our coconut
8:21
and nutmeg mixture.
8:24
And you just wanna make sure,
8:29
you know, I did my coconut out
8:32
and then I set my ball on top of that coconut.
8:36
Giving it a base, something to hold onto.
8:39
So the important thing now is bakin' 'em.
8:43
You know, you don't wanna over bake 'em,
8:45
because if you do that marshmallow's gonna swell
8:48
and it's gonna burst open.
8:50
Although I'm not opposed to that.
8:52
I'm not opposed to a marshmallow running out of it.
8:55
But I would prefer that it kind of stay
8:58
as a surprise, you know, in there.
9:02
And the other thing, I removed the orange juice
9:06
and I replaced it with a half a teaspoon of extract,
9:10
because we didn't need any more liquid
9:13
in those sweet potatoes,
9:15
because the sugars brought out the moisture,
9:18
making 'em even softer.
9:20
So, you would just have to keep an eye on these, stay close
9:24
to your oven, and before they start bursting, take 'em out.
9:29
But the recipe calls for 15 to 20 minutes,
9:33
but it's like a chicken breast.
9:37
I don't know how big your breast is that you're cooking.
9:40
I don't know how big your ball's going to be
9:43
when you get it rolled out.
9:45
Those different hand sizes come up
9:48
with all different, you know, sizes.
9:51
So like I said, I hope this works
9:54
and I hope that it's helped you, Ashley.
9:57
Okay, Ashley.
10:01
Here's our balls.
10:03
(plates sliding)
10:10
(silverware clanging)
10:11
And they look very, very good.
10:15
Look at that.
10:17
Do you see the marshmallow beginning to melt?
10:20
So I didn't cook 'em as long as the recipe calls for.
10:24
Okay, this one's fixing to go.
10:25
Look, look at it.
10:32
All right.
10:32
(plate sliding)
10:33
See that marshmallow.
10:39
Ain't that pretty? (laughs)
10:44
And like I said, I'm not, I don't panic if it burst.
10:48
You know, you just have to work with things
10:52
until you get a real feel for it.
10:57
- [Woman 1] I'm glad she told us though,
10:58
so that we could correct this one,
11:00
'cause it definitely needed some correcting.
11:03
- I am so glad you did Ashley,
11:07
because, you know, I can't fix something
11:09
if I don't know about it.
11:12
You know, so I never get upset with people that say,
11:16
so and so needs looking at, you know, at the restaurants.
11:21
Because like I said, if I don't know, I can't fix it.
11:29
So I hope that that helped.
11:33
It's really got a lot of orange flavor.
11:35
You might wanna bring back, bring down that orange extract
11:39
to a fourth of a teaspoon, because it's nice and strong.
11:43
But delicious and I just love the way they look.
11:48
I wish I had a pretty plate.
11:51
(paper rustling)
11:56
But you know, people will have no idea
11:59
what you've prepared for them until they bite into it.
12:03
Until they cut into it.
12:06
So thank you, Ashley.
12:09
So try one more time, girl, before you give up
12:15
and do whatever you need to do to it.
12:19
You know, whether it be add more sugar, add less sugar.
12:26
Make sure you got plenty of coconut, you know,
12:30
to really give it a coating.
12:34
So, I wanna hear from you.
12:39
I wanna see if this helped any and if you had better luck.
12:43
So thank you, darling.
12:44
Love and best dishes to all of y'all out there.
12:49
And I'll see y'all tomorrow.
