0:00
Hey y'all, today I'm doing like a summer harvest recipe
0:07
and that's gonna be succotash.
0:09
You know, the other day I made okra and tomatoes and
0:12
Succotash just takes it
0:16
over the top, maybe to another level, uh, it involves
0:20
more, more vegetables.
0:22
Uh, now I put on, Theresa found these beautiful fresh butter
0:28
beans at Davis, didn't you?
0:33
Now I put those on to cook those, and I've
0:35
probably been cooking them about 20 minutes maybe.
0:39
And, uh, so to my succotash, I'm gonna add some okra.
0:47
And I'm gonna let those cook for a few minutes.
0:49
And then I'm gonna drain them.
0:54
This is delicious y'all.
0:58
All right, let's see.
1:00
Now while we're cooking those, I think I might need
1:04
to, all you have to do to cook your butter beans is I
1:08
just covered them with water and put some salt in it.
1:12
And I'm going to add a little bit more water
1:14
since I added the okra.
1:18
We want it to have something to cook in and then we're
1:22
going to drain them real good.
1:24
And we're going to come to our pot over here.
1:27
While that's cooking, we'll do this.
1:37
Now the, the, uh, okra and tomatoes, we used bacon to
1:41
season that with, but we're not, you could do bacon.
1:46
if you wanted to, but I don't think it's necessary.
1:51
I think this is gonna just stand on its own.
1:58
so let's see said the blind man and I'm, I got that blind
2:04
man almost it's literally,
2:12
All right, so we're gonna melt our butter and we're gonna cook
2:15
our green onions and our garlic.
2:21
Gonna get that going.
2:23
I've got my garlic powder.
2:30
And as soon as our butter melts, we're gonna put that all in and
2:36
wait for our okra to get tender.
2:41
And we'll be on the way to some wonderful succotash, y'all.
2:46
Now I'm gonna add two tablespoons of olive oil.
2:51
All right, so I'm gonna add my onions,
3:03
you know, garlic can burn pretty quickly.
3:07
So you'll want to make sure.
3:11
You keep that stirred.
3:13
All right, now that's my garlic powder.
3:18
So, succotash is one of those recipes, one of those dishes,
3:23
y'all, that, uh, again, you can do, you know, really
3:30
what you want to with it.
3:34
And people that want to go by a recipe, you know,
3:40
they need a recipe, You can certainly go buy this one
3:44
and you'll have good results.
3:46
But if there's something you'd rather have in your
3:49
succotash, maybe, um, you would rather have maybe black
3:54
eyed peas or ladyfinger peas.
3:57
Uh, you don't have to use the okra.
4:01
So I do like to use what I have.
4:03
Now I'm going to add our corn
4:12
And it doesn't take long for kernel corn to cook at all.
4:19
It doesn't take nearly as long to cook the corn as it does
4:21
the butter beans and the okra.
4:25
Okay, so tossing that around in that garlicky butter.
4:43
Okay, I think that has um, cooked plenty long enough.
4:50
So I'm gonna take this over here to the sink.
4:52
Where did I put my, oh, there it is.
4:58
I wanna make sure I drain this good
5:05
because we're gonna have the heavy cream as our liquid.
5:09
And we do not want, we
5:14
do not want a lot of water left into our vegetables.
5:26
turn this back up a little bit.
5:27
Let that corn start to cook.
5:44
like a tablespoon I think it called for,
5:50
and I'm gonna add a little bit of sugar
5:56
and a little bit of salt.
6:00
I may come back and get the rest of that salt in a minute, but
6:09
I'm gonna leave it there.
6:10
I'm gonna leave it alone.
6:13
Y'all, the recipe called for two tablespoons of thyme,
6:17
two tablespoons of thyme, so,
6:22
I'm gonna go ahead and put the rest of that thyme in.
6:26
Y'all know it's very hard for me to follow a recipe.
6:33
Cause I got a wild streak in me.
6:46
I would drive her crazy.
6:47
I'm used to each other's recipes now.
6:50
When we first started though, that was struggling.
6:53
Yeah, but you've gotten where Teresa wasn't so
6:57
in love with cooking.
7:02
You know, Theresa was used to just being in the
7:05
office and taking care of, taking care of business.
7:12
Taking care of partners.
7:14
Alright, so now I'm going to add our butter beans and our okra.
7:20
Uh oh, I left some down there.
7:25
Alright, I feel like.
7:28
Yeah, they're all off.
7:31
So we're gonna let this cook for about 20 minutes, y'all.
7:36
And it'll be time to eat.
7:41
When this comes back to a boil, I'm gonna cut it down, cover my
7:47
pot, let it cook for about 15 or 20 minutes, and, um, stirring
7:53
it often, because I don't want any scorching going on.
7:57
Y'all make sure you take advantage of
8:00
the bounty of summer.
8:02
Cause it's delicious and it ain't here long.
8:06
I want y'all to look at this beautiful succotash.
8:11
And the last ingredient we're going to add is our
8:17
little cherry tomatoes.
8:21
And I'm just going to stir them in there and look how pretty.
8:25
You know, I always say you eat your food first with your eyes.
8:29
So I do like that to be pretty, but of course I ain't above
8:34
eating ugly food either.
8:37
Cause sometimes ugly food is the best.
8:42
So like I said, we don't want to cook those till they're mush.
8:47
just a couple of minutes.
8:58
Bountiful, bountiful.
9:06
Look at this hoe cake.
9:07
Some butter fell on it.
9:16
We both said it at the same time.
9:18
He has to hold the camera.
9:24
That's why you need to wrap it up.
9:26
Or you need to take the camera and film him.
9:31
He already shook his head no.
9:40
What's with that, Theresa?
9:45
Y'all do take advantage of these beautiful,
9:49
wonderful summer vegetables.
9:51
Everything's in season.
9:55
That's a funny name, isn't it?
