0:00
- I just love it when all you friends share with me.
0:08
I'm gonna share with y'all
0:09
through Teresa Gettle.
0:16
sent a note saying she just loves us,
0:23
that her mother used to make all the time.
0:25
And they called it a Summer Salad, she said,
0:27
even though it ain't got a stitch of salad in it.
0:31
She said she used to request this so much
0:34
that her mother changed the name of it
0:36
from Summer Salad to Theresa's Summer Salad.
0:41
So Theresa, I appreciate you sharing this with us,
0:44
and I'm sure that y'all have had some form of this salad.
0:50
Like I said, just maybe a little different,
0:52
different ingredients in it.
0:54
But it's hard to beat, especially during the summer.
0:58
So you want to start by taking
1:00
1/2 cup of apple cider vinegar,
1:05
1/2 cup of canola oil,
1:07
and one cup of sugar.
1:09
And you want to bring that to a boil.
1:14
And then add your black pepper.
1:17
And then allow this to cool completely.
1:23
this is the combination that
1:30
And you drain all your vegetables that you're putting in.
1:39
And I love these little
1:46
In fact, Michael asked me last night, he said,
1:48
you got a can of those little peas in the pantry?
1:53
All right, and we've got shoepeg corn.
1:56
And I highly recommend that you use a white shoepeg.
2:03
And then diced celery.
2:06
I'm gonna go back over the measurements
2:08
in a minute with y'all.
2:14
four ounces of drained pimentos.
2:19
And it calls for just 1/4 cup of onions,
2:22
which seems like just a little bit of onion.
2:26
Theresa, I'd probably increase that onion,
2:33
- [Man] So sweet onion?
2:34
- Yes, a sweet onion.
2:36
Vidalia, if you can get it.
2:42
boil this to start with
2:45
is to melt your sugar,
2:48
melt all those flavors together.
2:51
And you don't want to pour it hot over your vegetables
2:56
because it would cook them.
2:58
It could cook them and you don't want to do that.
3:02
So look at this beautiful salad.
3:04
Theresa said, just put this in a pretty bowl,
3:09
a pretty glass bowl so you can see all the colors
3:17
that are in this yummy looking salad.
3:22
All right, so I'm gonna go back
3:26
over Theresa's recipe and tell y'all amounts.
3:34
I sure do hope y'all enjoy it, she said.
3:37
I would love to know what you eat along with it.
3:42
Gosh, I don't know, Theresa.
3:45
It'd be wonderful along with a roasted chicken,
3:49
you could have like a salad night
3:51
and have a scoop of chicken salad,
3:53
a scoop of tuna and a big ol' scoop
3:56
of your Summer Salad.
4:01
Or you can just have this and a nice bowl of crackers.
4:05
So here are the measurements now for Theresa's Summer Salad.
4:09
One can of white shoepeg corn,
4:13
a four ounce jar of sliced pimentos,
4:17
one can of Le Sueur small sweet peas,
4:28
(timer buzzes) Uh, oh.
4:32
And I said the corn, didn't I?
4:36
And then you have in your marinade,
4:39
you have 1/2 cup of apple cider vinegar,
4:42
1/2 cup of canola oil, and one cup of sugar.
4:46
And you bring that to a boil and let it cool.
4:50
And she tells me to add black pepper
4:57
and then let it cool completely.
5:00
And she said, then once it's cool,
5:02
mix it all together and put in a beautiful bowl
5:05
to enjoy all the colors and shapes.
5:13
I just love, love, love it.
5:22
I'm gonna dip me up a bowl right now
5:24
and I'm just gonna put it back in.
5:27
Now this is, I will say this y'all,
5:29
this is much, much better
5:34
if you let it marinate.
5:36
Because the vegetables still might taste a little canny,
5:56
'Cause I got to take some cookies out of the oven y'all.
5:59
Thank you, Theresa. Love you.
