- Again, y'all, I'm thinking about our Easter meal.
0:04
In the last video, I shared with you a recipe
0:08
for incredible, a banana pudding casserole
0:20
with a wonderful custard.
0:22
It's great for breakfast.
0:24
And so now I'm thinking those of y'all
0:27
that wanna do lamb or pork or whatever you do,
0:31
this is a great side dish and it's broccolini
0:35
with a creamy garlic sauce.
0:37
Now I'm just gonna steam this broccolini.
0:40
I've got a little tray down there
0:43
that's keeping this above the water,
0:46
because I just wanna steam it
0:48
until it's somewhat tender.
0:55
So I've got my little steaming rack down there
0:59
and you don't want to bring the water up
1:05
so that it touches your broccolini.
1:07
You want it just below your steamer rack
1:11
that you've got in there.
1:12
So we are gonna steam this for about six to seven minutes.
1:18
All right, so we're gonna need,
1:23
got a third of a cup of onion.
1:25
You know, this is not gonna make
1:26
a tremendous amount of sauce,
1:29
but we're just gonna pour it on top of our broccolini.
1:33
You don't wanna drown the broccolini.
1:38
All right, I'm gonna drop that in our skillet.
1:43
(laughs) Listen to the pitter-patter of Lulu's little feet.
1:48
She's so desperate for another treat.
1:52
She wants to eat treats all day long.
1:54
Alright, so I've got about a third of a stick of butter.
2:01
So let's see, I think I'll go to this eye.
2:04
It's a little bit bigger.
2:11
It'll always fire when I'm just about ready
2:13
to cut it off and give up trying.
2:21
Broccolini is just steaming back there.
2:27
Alright, there's a little onion peel I got in there.
2:33
I'm gonna get that out. Just a little piece of onion skin.
2:40
Okay, so I'm gonna saute these
2:43
until they're nice and tender.
2:46
Y'all, I've been telling y'all
2:48
to watch the chicken and dumpling cook off
2:54
between me and Michael.
2:55
I think he was such a sport.
2:58
So last night, I got a package from my friend, Greg Cantor,
3:03
and his partner Michael.
3:07
Look what they sent us. This was so funny to me.
3:11
It says "Winner, Winner Chicken Dinner Award."
3:15
And it said "Best Chicken and Dumplings"
3:20
and it announces the winner
3:22
but I'm not gonna let y'all see what that says
3:24
in case you haven't seen it,
3:27
'cause it was a very big surprise ending.
3:30
So Greg, you are so dad gum cute
3:33
and you just come up with some of the neatest things.
3:36
I love you, Greg Cantor,
3:38
and he was a good friend of my Aunt Trina's.
3:41
And Michael, I hope you're doing well dear and love you too.
3:44
Thank you, guys. This will sit proudly in our kitchen.
3:52
On whose end of the kitchen? I don't know yet.
3:56
I know, but I can't tell you. (laughs)
3:59
Now my onions are soft or getting soft.
4:04
So I'm gonna go ahead and add our garlic
4:09
and ooh, that is so fragrant.
4:12
I'm gonna sprinkle my two teaspoons of flour over that.
4:20
I'm just gonna stir that up.
4:22
That little bit of flour is gonna, you know,
4:25
give us a nice, thick, creamy sauce.
4:33
Alright, and now I'm going add our chicken stock.
4:37
And that's a half a cup.
4:43
Alright, I'm gonna turn this back up now I think.
5:05
See, it's getting just a little...
5:08
Starting to get a little thick
5:12
and I'm going add two tablespoons of
5:15
a grainy Dijon mustard.
5:22
Theresa had that measured out exactly
5:24
I think for two tablespoons.
5:33
So I'm gonna let this thicken and reduce
5:35
for a couple of minutes, just a few minutes.
5:41
And then lastly, we will add our cream
5:46
and let it cook for a few more minutes.
5:49
All right, Eddie just reminded me
5:51
that, that broccoli has been steaming,
5:54
that broccolini has been steaming
5:57
about six or seven minutes.
5:58
So I just go ahead and cut that off.
6:06
And I'm gonna give this a chance to reduce a little bit,
6:15
and then we're gonna add our cream.
6:18
I think it's safe to add our cream now.
6:24
And this is three quarters of a cup of heavy cream.
6:34
And we're gonna let this cook for about
6:38
five or six more minutes.
6:41
Give it a chance to keep getting thicker
6:45
and reduce a little bit more.
6:48
I didn't add any pepper to this, did I? Nor salt.
6:51
So just a little pepper. (pepper mill screeching)
7:02
and just a little kosher salt.
7:07
Not much, not that much.
7:19
This has tightened up some.
7:31
And you can actually let this get even tighter, but
7:43
yeah, I should let it get a little bit tighter.
7:57
Now you can serve this and let everybody...
8:02
I'm gonna put a little bit more sauce over here.
8:05
And let everybody get the amount of sauce they want
8:10
to go along with their broccolinis.
8:30
Broccolini with a garlic mustard, onion sauce.
8:46
Steamed perfectly, Eddie.
8:52
Your Easter table or on a Friday night
8:55
when you have your friends over and cook a steak,
8:59
or barbecue chicken, this would be a wonderful side, y'all.
9:04
So love and best dishes.
