0:00
- So, y'all get tired of making the same vegetable
0:06
You know, you have the potato, you have your rice,
0:09
and then you have your broccoli or your asparagus
0:12
or your Brussels sprouts.
0:14
Well, this recipe that I'm gonna share with y'all is
0:19
And it's a nice change from just a steamed vegetable.
0:26
And I'm gonna fry these zucchini and yellow squash patties.
0:31
I'm gonna fry 'em in like half olive oil and half butter.
0:36
The olive oil will keep the butter from burning on these.
0:41
And the hardest part about this recipe y'all
0:44
is grating your zucchini and your yellow squash.
0:49
You'll want to grate it very, very fine
0:54
in your finest grater, part of your grater.
0:58
And you'll wanna make sure that you put these
1:00
in between paper towels because they contain a lot of water
1:06
and you don't want 'em to be soupy.
1:11
So, look how pretty that is.
1:13
All right, I've got some diced,
1:15
some really nicely diced onions.
1:26
And I've got Italian seasoning.
1:33
Sorry, my watch is making a lot of noise.
1:36
And I've got a couple of beaten eggs.
1:46
So, all of this together.
1:50
And then I'm adding a cup of Parmesan cheese.
2:00
And I've got one cup.
2:02
I don't wanna get that too dark.
2:04
I've got one cup of panko in the oven that I'm toasting
2:09
that I'm going to add to this.
2:10
And then we're gonna form 'em into patties
2:15
and we're gonna pan fry 'em.
2:20
And it'll be a nice, nice little difference
2:26
from our normal side vegetable.
2:30
Okay, I'll be right back y'all.
2:32
I'm going to check on our breadcrumbs.
2:34
Okay, I toasted my panko y'all.
2:38
And that was one cup of panko.
2:45
Now, we're gonna do a shake these into patties and fry 'em.
2:51
Now, if you don't have panko,
2:53
I think the original recipe even called for breadcrumbs.
2:57
But you know, I've already told y'all
2:58
how I feel about panko.
3:01
But if I was going to use breadcrumbs,
3:03
I think I would do fresh breadcrumbs.
3:11
All right, so you'll just press these
3:14
the size that you want.
3:15
Thank you. Was I fixing the burner time well?
3:17
- [Cameraperson] I was just getting it out the way.
3:22
- All right, so I think that's a nice shape.
3:28
And this would be really good no matter what
3:32
entree you're serving them.
3:36
Uh-oh, kinda let crumble.
3:45
You can see there's still some water in them.
3:46
So, squeeze that out as I go.
3:58
See, the water's still coming out.
4:03
So, you almost can't over squeeze your squashes.
4:13
And you'll want to cook these,
4:17
well, a couple of minutes on each side
4:26
and you can cook these up ahead of time y'all.
4:29
And then pop 'em in your air fryer
4:33
when you're ready to serve.
4:35
And that'll get 'em hot
4:36
and keep them crispy at the same time.
4:46
Look how pretty these are y'all.
4:51
So pretty and just different.
4:55
If you've got leftover mashed potatoes,
4:59
you can prepare potato cakes about the same way.
5:09
You just change your potatoes for,
5:11
I mean, your squashes for potatoes with mashed potatoes.
5:15
Okey dokey, do those look pretty good, don't they?
5:19
About three and a half minutes on each side.
5:23
And like I said, if you wanna do these earlier in the day
5:27
and you wanna throw 'em in the air fryer
5:29
and heat 'em up when you have the rest of your meal ready,
5:32
it'll work out perfectly.
5:38
Now, I'm wanting to drain these a little bit y'all.
5:41
A paper towel. Ooh, I smell the Italian seasoning in it.
5:49
Okay, y'all. This is the way that I would serve them.
5:53
Hopefully, that one's cooled down.
6:01
with a little dollop of sour cream
6:06
and garnish it with some diced green onions.
6:19
And it looks good and fancy schmancy, doesn't it?
6:23
Kinda like you've done a lot of...
6:26
Go into a lot of trouble.
6:28
You know what? And sour cream always screams for salt.
6:36
Because it's so not salty.
6:49
It's been a long time since I've made these y'all.
6:53
And you can use any kinda vegetable.
6:56
You could use parsnips, carrots,
7:05
any kind of root vegetable.
7:07
Squash and zucchini is not a root vegetable,
7:10
but anything with some firmness to it, potatoes, carrots.
7:14
Throw 'em all in together,
7:18
and your family would never, ever, ever know
7:22
that they're eating a bunch of vegetables.
7:40
The Parmesan cheese in there is really good.
7:44
So, love and best dishes to y'all, always and forever.
