0:00
- It's Labor Day, y'all.
0:02
The last hoorah before the snow comes, right? (laughs)
0:08
Savannah, we ain't gonna see no snow, but if we're lucky
0:12
maybe it'll get down to like 60 degrees.
0:14
All right, I've got a question for y'all.
0:19
Everybody takes a day off on Labor Day.
0:22
Why do they call it Labor Day if we're not working?
0:26
- [Theresa] I think it's to celebrate working.
0:32
Is that what you think too, Eddie?
0:35
- [Eddie] It's a break, a break from work.
0:36
- It's a break from work.
0:39
- [Theresa] You're supposed to go and enjoy yourself
0:41
- Yes, and that's why I'm here today is to do a recipe
0:47
that will make your Labor Day go so easy.
0:52
It's a delicious recipe.
0:54
It sounds like a lot of ingredients, but it's not really.
0:57
I have whole Greek yogurt, lemon zest, lemon juice,
1:04
So that's gonna be the dressing part to our pasta salad.
1:10
So let's just start dumping, y'all,
1:16
because Theresa has made this so easy for us.
1:20
She has just gotten everything together.
1:23
In goes our lemon zest,
1:29
every piece of that lemon zest,
1:32
along with our lemon juice and our olive oil.
1:50
So we'll just whisk this together
1:55
and then we're gonna start adding our seasonings.
2:01
You know, for those of you that don't like yogurt,
2:07
you know, you can substitute mayonnaise.
2:10
- [Theresa] Sour cream.
2:12
Okay, I'm gonna need,
2:16
I think a teaspoon of fresh thyme.
2:25
And remember, fresh versus dried,
2:33
takes more fresh than your dried does.
2:43
In other words, your dried herbs
2:46
are more potent than the fresh.
2:51
All right, so I'm gonna need about a teaspoon of fresh dill.
2:59
And this is such a wonderful flavor.
3:05
I love dill in salads, any kind of salad,
3:09
a protein salad or just a green salad.
3:23
That looks like about a teaspoon.
3:28
All right, now we're gonna add about a teaspoon of sugar,
3:35
a little salt, a little ground pepper.
3:42
See how easy that is, y'all?
3:44
- [Theresa] Did you add the parsley?
3:46
- Not yet, but thank you.
3:49
- [Theresa] I didn't prep that for you.
3:52
I noticed that I had made it look
3:53
kind of like an arrangement.
3:55
- No, (laughs) it is pretty, but yeah, you had told me
4:00
that you had stuck the parsley up here,
4:08
and, you know, this is really mainly for color, you know.
4:15
Parsley definitely has a flavor.
4:20
A lot of people say it doesn't, but it really does,
4:23
and you can almost smell what it tastes like
4:26
before you ever put it in your mouth.
4:32
But it's one of those herbs
4:33
that we love to color up our dishes.
4:40
And I'm using a flat leaf.
4:44
Sometimes I'll use flat leaf, sometimes I'll use curly.
4:51
And we needed a teaspoon of that, so that gets that.
4:59
And now for our green onions.
5:12
And we've got our pasta already cooked off.
5:19
And we're gonna need two cups of arugula.
5:30
It's all right, kind of got
5:32
a little hot flavor to it, doesn't it?
5:36
Yeah, I just love it.
5:40
I'm gonna kind of push that down a little bit.
5:45
And we've got some beautiful fresh carrots
5:49
that have been ribboned
5:53
and we've got some cherry tomatoes,
5:55
a cup of cherry tomatoes that's been been cut in half.
6:01
And we've got our penne pasta.
6:10
I may not use all of that.
6:15
Where'd I put my spatula? (laughs)
6:19
Right there. (laughs)
6:24
Look how pretty this is gonna be to put
6:27
on a picnic table or even an inside dining table.
6:33
This is just pretty and delicious.
6:40
All right, so I'm just gonna put
6:44
what I think is a appropriate amount
6:47
of carrots to the pasta.
6:50
You can put more, you can put less.
6:59
All right, now for the arugula.
7:18
So this is not gonna be drowned in a dressing.
7:25
So if you like your pasta salad drowned,
7:29
you can always double your dressing ingredients.
7:37
This is beautiful just like this.
7:42
Put that in a pretty clean glass bowl
7:46
and take it to the table and let your family enjoy.
7:52
Because that's what I think I'm fixing to do.
8:01
Look how pretty that is.
8:09
And y'all, I finally moved my utensils into a box over here,
8:17
because you know, I said every time I wanted to get a fork
8:20
somebody was standing there at the sink washing dishes.
8:24
So now I don't have to worry about the drawer being blocked.
8:29
Don't ever put a sink in a corner.
8:35
I learned that. (laughs)
8:45
The lemon flavor is pungent.
8:57
Can I fix y'all a bowl?
9:04
- [Theresa] Let sit for just a little bit.
9:07
So hopefully this will help y'all
9:13
in a small way towards making it through Labor Day,
9:17
because I know what it's like to feed our
9:21
or have our whole family here,
9:25
because there's what, 20 of us?
9:28
22, something like that.
9:29
And that's just like the immediate family.
9:35
So anytime you can produce something delicious
9:40
and not labor intense,
9:45
that will help us celebrate Labor Day in a true fashion.
9:51
Happy Labor Day, y'all.
9:56
Hey y'all, it's Paula Deen.
