- Hey y'all, hey y'all.
0:02
You know the vegetables they're coming in,
0:04
the good vegetables are still coming in.
0:07
And I'm gonna share with y'all the recipe
0:09
that everybody has always loved
0:11
that we made at the Lady & Sons.
0:14
People loved it.
0:16
And it's very easy, very simple.
0:19
You can use any kind of squash.
0:21
I've been going to Davis Produce
0:24
and getting me the pattypan squash, that's so good.
0:28
So you can just mix it up.
0:30
You can even add some zucchini.
0:32
All we want right now is like eight cups of squash,
0:38
and the recipe may tell you to put it in water,
0:42
but you know, there is so much water
0:47
in these vegetables,
0:49
so I'm just gonna add a little butter
0:53
and it's gonna make its own water.
0:55
And the reason I don't like to add water
1:00
is because I don't want it to make my casserole soupy.
1:03
So I wanna make sure I drain it good.
1:05
So I'm just gonna keep stirring
1:08
and let the natural water come out of the squash
1:12
and then I will still drain it.
1:15
All right, so I hear our squash
1:18
starting to respond to the heat
1:24
that we've got it on.
1:26
Now in this pan and don't ask me why, because I don't know.
1:33
But I always preferred my onion
1:36
that I put in my squash casserole and my broccoli casserole.
1:41
I always like to cook those onions in butter first.
1:44
To me, it tastes better in the casserole
1:48
and I don't know why, but that's my opinion.
1:55
So you do it any way you want to.
2:00
And I like to do the onion separate from the squash.
2:05
No interference.
2:07
My precious little Kari was here.
2:11
She came and spent almost a week with me on the 4th of July.
2:15
And she brought me this little duster.
2:17
She's so sweet, but she can be so mean sometimes.
2:23
But this visit, she was so sweet,
2:26
she only snapped at me like three or two times.
2:32
And that's just when she gets hungry.
2:35
From the time that child was a baby,
2:40
you had to feed her on time
2:44
or she would get very
2:49
hangry, yes, wanting her food.
2:54
And every Friday night she would spend the night with us
2:59
and she would sleep in the bed with us
3:02
in between me and her Granddaddy Deen, well, her uncle,
3:11
Uncle Jimmy, she called him.
3:14
I can't remember.
3:16
But anyway, and as soon as we'd pick her up, she said,
3:22
I want catfish tonight.
3:27
We go find catfish.
3:31
Those are wonderful memories.
3:33
All right, y'all, I'm gonna put the lid on that now
3:37
and kind of let it do its magic.
3:41
And our onions are starting to stew.
3:47
So from here on, it's so easy, you know, in fact,
3:51
if you wanted to go ahead and prep your onions,
3:53
prep your squash, get it cooked, put it in the refrigerator,
3:57
and it will take you all of three minutes
3:59
to put this together if you've got your prep done on it.
4:03
And if you go into somebody's house
4:06
and ask to bring a dish, this would be a hit, y'all.
4:10
It would be a hit.
4:11
So we've got our sour cream we're gonna add to it.
4:15
Our house seasoning, our cheese,
4:19
and then we're gonna top it with our buttery crackers
4:22
that I'm gonna toss in a sauce pan with a little butter.
4:26
'Cause you know it's hard to dot and get it all on it.
4:31
No, you know what I think I'm gonna do right now, Theresa?
4:35
I think I'm just gonna go ahead and do it
4:39
and not think about it.
4:43
I'm gonna just use my,
4:49
my butter that's already been clarified,
4:54
and that way I won't have to mess up a pan.
4:58
Just stir that up.
5:01
And that's the way you get all your crumbs buttered,
5:08
just like that.
5:10
I told you I was gonna put the lid on this
5:13
and let it do its magic.
5:15
And its magic is putting steam,
5:20
which turns to water.
5:22
And see, I didn't use one drop of water in this squash
5:26
and it's got plenty of liquid.
5:30
So I like my squash pretty done.
5:33
So depending on your
5:37
preference, I mean, it would work at this state right now.
5:42
But like I said, I just like my squash
5:44
a little bit more done.
5:46
I also wanna share with y'all a casserole
5:51
that is incredibly delicious.
5:56
And it's from my friend in Albany.
6:00
Her name is Q,
6:02
and she's got a shop.
6:06
I know she was thinking about moving downtown,
6:09
so I can't tell you where Q's operation is right now,
6:13
but she was one of the first, well, she was the first
6:16
to put these machines where people could walk up to 'em
6:19
and get 'em a slice of cake or a slice of pie.
6:23
And I just thought that was genius.
6:30
I really admire and respect her.
6:32
She's got quite a story.
6:34
And what is the name of her little book?
6:41
It was about being bad, but you had to, something like that.
6:44
But she's got one hell of a story.
6:47
- [Theresa] And her squash casserole amazing.
6:49
- Her squash is amazing,
6:52
and her squash casserole recipe is in this book.
6:59
And she was making a squash casserole one day.
7:03
And she said she didn't have all the ingredients,
7:04
but a regular one.
7:06
So she did good.
7:09
It's so good.
7:10
And she cooks her squash in water where I don't,
7:13
I mean, mine's cooking in water now
7:16
because the steam has produced the moisture.
7:22
So I think this is gonna be good.
7:25
And I do like my squash sliced real thin.
7:32
'Cause the thicker it is,
7:32
the longer it's gonna take to cook.
7:35
So I've got my,
7:41
I've got my colander over here for me to pour this in.
7:45
And I will try to mash as much of the water out of it
7:50
as I can get.
7:52
All right, it's looking good.
7:55
And now I'm gonna add my onions.
7:59
And the onions really, really do
8:04
make a big difference in this recipe.
8:07
But I think I told y'all in another video, you know,
8:11
if your family just refuses to eat onions,
8:16
but you need that flavor, you can use onion powder
8:21
or I like the dehydrated onion bits
8:25
'cause I used that for years.
8:28
And my children's daddy never figured it out
8:32
that he was eating dehydrated onions,
8:35
whether he wanted them or not.
8:38
So there's a couple ways to get around it.
8:42
All right, so I'm gonna add my cheese to the squash
8:47
so it can melt
8:50
while it's all real hot.
8:55
I am gonna add my house seasoning,
8:59
which is salt, pepper, garlic and onion powder.
9:06
So we might wanna taste it
9:07
and maybe add a little bit more salt.
9:15
And now the sour cream.
9:18
So see how easy this is?
9:20
And I'm sure you probably got all those ingredients
9:23
in your refrigerator.
9:26
Well, maybe except for the squash.
9:29
Okay, so you know, sour cream, once you add
9:33
that sour cream, to me, sour cream just screams for salt.
9:41
So like I said, I'm gonna give it a little taste
9:46
and we going to see if it's screaming at me.
9:55
I could actually eat this squash casserole
9:57
just like this without even baking it.
10:11
Maybe just a little
10:15
and a little more pepper.
10:18
You can always add salt and pepper at the table.
10:29
See now eight cups of squash didn't make that much.
10:34
I was trying to decide which size casserole dish
10:38
I wanted to put it in so I got a larger and the smaller.
10:41
But I definitely am gonna use the smaller.
10:55
Plop, plop, fizz, fizz.
10:58
Where'd I put my spatula?
11:03
Well, I didn't have one I don't guess.
11:06
I thought I had a spatula out, but I got plenty.
11:09
I'll get another one.
11:13
I wanna get all that goodness
11:17
out of the bottom of that pan.
11:22
These pans are getting harder and harder.
11:26
Well this is my line, so I can hold it pretty good,
11:29
but I couldn't no more do this with a cast iron pan,
11:32
you know, or some of those heavy aluminum ones.
11:37
Okay, so this is hot.
11:40
It's not gonna take long in the oven at all
11:45
because we did
11:48
mix it up very quickly while it was hot,
11:54
so I'm just gonna top it with these butter crumbs
12:01
and oh my goodness, to me,
12:05
I just love the crunch
12:08
and look, making it in that smaller casserole dish.
12:11
Look, we're gonna have a thick layer of crunchy crunch.
12:17
Love it.
12:19
So we're gonna put it in the oven, 350,
12:21
maybe for 20 minutes, just until it's hot and bubbly.
12:25
So our squash casserole is ready, y'all.
12:30
And it looks delicious.
12:36
And just to prove that it is, look at this dish I got me.
12:43
Whoa.
12:46
And I love my casseroles like deep.
12:50
I don't like a little thin layer, you know?
12:53
I like 'em deep.
12:54
So I'm glad that we chose the smaller,
12:59
the smaller dish to cook it in.
13:05
'cause it made it nice and thick.
13:14
And it's gonna be so hot.
13:19
People ask me Paula, why do you torture yourself
13:22
trying to eat that stuff right outta the oven?
13:24
It's so hot.
13:25
And I know your mouth is on fire.
13:27
Yeah.
13:31
Mm.
13:40
You will love it.
13:44
I guarantee it.
13:48
I can't wait for you to taste it Therese,
13:51
look at some of those breadcrumbs right there I done lost.
13:57
Never met a breadcrumb I didn't like either y'all.
