0:01
- I got the sweetest email
0:03
from a young lady named Stephanie Long,
0:07
and she said, "I would love to ask Paula Deen a question
0:12
about a recipe that I've seen
0:13
where people have sent her recipes
0:16
and she makes them on a show,
0:18
and I have one for her.
0:21
I wanna share with her something
0:22
that my grandmother used to make for me
0:24
when I was a little girl,
0:26
and my grandmother used to make homemade buttermilk biscuits
0:30
and chocolate gravy, but my grandmother passed away
0:34
and I no longer have her recipe for chocolate gravy.
0:38
So I was wondering if Ms. Paula knew
0:39
how to make chocolate gravy.
0:41
And I know my grandmother used to use
0:44
Hershey's cocoa powder,"
0:47
so I am gonna make chocolate gravy this morning,
0:56
and she sent me her grandmother's biscuit recipe,
1:00
which sounds wonderful.
1:01
And I think we need to post her grandmother's recipe
1:05
at the end of this tape.
1:10
So I've got the biscuits ready,
1:12
I've brushed them with butter,
1:14
and we're going to put these in the oven
1:16
and we're gonna make our chocolate gravy
1:18
while these are baking.
1:20
Here we go, Stephanie. It's really, really easy.
1:23
And this recipe goes back, the first time I did it
1:27
was over four years ago now
1:31
when I started quarantine cooking,
1:33
when we were all made to stay in our house
1:37
and not go anywhere, I started quarantine cooking,
1:41
hopefully to just fill the long days
1:45
with something positive for folks.
1:49
So here we go. It's easy.
1:51
You'll have no trouble doing it.
1:54
I have melted a third of a stick of butter, Stephanie.
2:02
All right, now I'm gonna add my sugar,
2:05
and let's see, how much sugar was that?
2:10
- I'm gonna add. - It's two thirds of a cup.
2:13
- [Paula] Two thirds of a cup of sugar,
2:15
and that looks like about two teaspoons of flour,
2:20
which is gonna give us our thickness.
2:23
So we just wanna incorporate that, Stephanie,
2:27
and I would recommend using a whisk,
2:31
because you don't want lumpy chocolate gravy, do you?
2:35
I'm sure your grandma's wasn't lumpy.
2:38
All right, now I'm gonna add my cocoa
2:41
and I wanna make sure I give you the right measurements.
2:46
That was two teaspoons of flour and the cocoa.
2:49
- It's a third of a cup. - Third of a cup.
2:51
That's what I thought.
2:53
Okay, so in goes our chocolate cocoa.
3:06
I wanna make sure the last thing you want to happen,
3:09
Stephanie, is to scorch this,
3:12
so I've turned the heat down some,
3:19
'cause you know, you can fix a lot of things in the kitchen,
3:23
but the only way to fix scorched anything
3:29
is by putting it in the trash and starting over again.
3:33
All right, so I've got a cup of milk
3:37
and I'm gonna slowly- - It's actually two cups.
3:40
Oh, it is two cups. I've got it, thank you, Theresa.
3:44
I got the two cup measure here,
3:47
and we're gonna slowly incorporate that using our whisk,
3:52
making sure that we don't scorch it.
4:01
And I sure do hope that this tastes
4:06
like your grandma used to make it for you,
4:11
but I found that I'll crave a taste
4:16
that I knew from years ago,
4:20
and when I finally reconnect with it,
4:25
I think the memories are better than the actual thing.
4:33
That's kind of the way I felt about my peanut butter balls.
4:37
And I went to a little country school in Baconton, Georgia,
4:42
right outside of Albany,
4:43
and it was truly a little country school, and on Fridays,
4:49
they served us peanut butter balls for dessert.
4:53
Well, I want y'all to know, when I was in my 30s,
4:59
I met the daughter of the woman
5:06
that was a cook in the cafeteria.
5:09
And she said, "Oh, Paula, yes, I'll give you that recipe."
5:14
I said, well, it was just always,
5:16
it was soup, toast, and peanut butter balls,
5:20
and I swear I would run over somebody's back
5:23
and get that peanut butter ball.
5:27
Oh, and I loved them so much
5:30
that I served them at Jamie and Brook's wedding reception
5:35
with a chocolate fountain, just crazy delicious.
5:39
But so I finally got the recipe that my Aunt Trina
5:43
and I, she went to school there as well,
5:49
wanted to know how they made them, and it's so simple.
5:53
And so I made it and I said, "Well, that's it,"
5:56
but that memory of eating that as a kid,
6:01
it was nothing like those memories.
6:03
So I hope this memory is very, very satisfying
6:10
So I've got this on low,
6:14
and I will eventually ease up the heat a little bit
6:21
while we're waiting on our biscuits to cook.
6:25
I did this in a very, very slow process,
6:30
and I don't know how thick your grandmother
6:33
used to make her chocolate gravy,
6:37
so my recommendation, two teaspoons of flour,
6:41
is not very much, so I keep this product on hand.
6:47
It's a quick mixing flour, and it's all purpose,
6:52
and you can sprinkle it right on top of the gravy
6:55
that you're making and it won't lump, it'll blend right in.
7:00
So I did sprinkle a little bit of this quick mixing flour
7:04
to mine because I just wanted it a little bit thicker.
7:11
And now I'm gonna do something now
7:16
that I hadn't done before.
7:18
Well, I think Eddie looked back in that video,
7:23
the quarantine cooking video, and I said,
7:26
"Well, I think I'm gonna add some vanilla to it,"
7:28
so I did, but this time,
7:30
I'm going to do something a wee bit different.
7:35
I'm gonna add a half a teaspoon of almond flavoring
7:39
because I love almond and chocolate together,
7:43
and then I'm gonna add a half a teaspoon
7:47
of vanilla flavoring.
7:50
So you can try those, Stephanie.
7:52
You may like it. You may not.
7:55
This might be on this side of sinful, y'all.
8:04
How good does that look?
8:10
- [Theresa] You had me at biscuit.
8:12
- Stephanie, I wish you were here, girl.
8:29
I adore the almond flavoring in it, Stephanie,
8:35
but it's certainly optional.
8:40
And I wanna thank you, girl,
8:45
for sharing these great memories with you
8:49
and all of our friends out there.
8:52
So now, you know you can make the chocolate gravy,
8:57
hopefully very close to what your grandma did.
9:00
So love and best dishes to all of y'all out there,
9:04
Start it with chocolate gravy biscuits.
9:12
So Stephanie, I'm guilty of changing my own recipes,
9:17
so I showed you how I added vanilla extract
9:21
and almond extract to it.
9:23
So I'm gonna cover my biscuit with the chocolate,
9:30
and then I'm gonna take it one step further
9:37
by adding some chopped pecans to the top
9:42
because I'm a nut lover,
9:45
which works out real bad, real good
9:48
because I'm surrounded by a bunch of nuts
9:52
and me being the head nut.
9:59
- That looks good. - Uh huh, if you like nuts,
10:04
this is the way I would serve it.
10:06
I would serve it in a custard dish
10:11
with plenty of gravy and nuts.
10:14
- [Theresa] I like Eddie's idea
10:15
of putting the chocolates sauces over pound cake too.
10:19
- You could put that on anything, Theresa,
10:21
and it would be delicious, I promise.
10:29
The nuts just take it to another level, Stephanie,
10:31
so try that too, baby.
10:37
Thank God for grandmas!
10:43
