And this is just a fun, southern chicken casserole

that I think most southern women would know how to do

and are used to making something similar.

And so this is just my version.

One of my dear, I call her Mama Jen, she taught me this.

She lives in Atlanta, Georgia,

and she's a good ole southern lady

and she taught me how to do this.

And so I've elevated a little bit

with just some unique ingredients

and some fun stuff that I think you guys will enjoy.

And so to start, what we're going

to do is dice up our chicken breast.

A lot of southern casserole recipes actually

will use rotisserie chicken.

You can use that. This is just my personal preference.

I eat every single part of the chicken.

But for this, I like to have the chicken breast, the chunks

of the chicken breast, just because it adds a nice texture.

And so I'm just gonna chop this up, dice this up,

and then we're gonna put it in a pan with some oil

to cook, par cook.

Basically, we're gonna not cook it all the way through

until it's done, because it's gonna finish off in the oven

and you don't wanna overcook your chicken.

So now what we're going to do is just take our olive oil

and pour some in the pan.

And I don't measure, so we're just gonna put enough in there

so that it doesn't stick.

But this is a little secret that I like to do.

People always tend to say they don't like chicken breasts

because it can be dry.

This is a secret to keep it from being dry.

Make sure that you put olive oil on your chicken

and season it with the olive oil so

that it sticks directly on it.

So we're just gonna season this with a little bit of salt,

little bit of pepper,

fresh ground pepper.

We have some garlic powder

and onion powder here too as well.

So we're just gonna add that on.

Don't worry about, you know, sprinkling it all over.

If you don't, you don't want to,

'cause we're gonna mix this all together

with our hand, okay?

So just mix it until it's well evenly coated.

You wanna make sure that all

of your chicken breasts are covered with olive oil

and all of those seasonings are evenly distributed.

And so we're gonna just take this, throw it into our pan.

And again, we're only going to cook this partially

because the rest of this is going to cook in the oven.

And so I'm gonna wash my hands real

quick and then we'll be right back.

Okay, and so now we're just gonna add a little bit more

seasoning to this.

You might be thinking, Joseph, are you over seasoning it?

No.

Any chef will tell you that you season in layers.

The first time I was ever on TV cooking,

my first TV show, the yelled cut

and they said all of the 10 home cooks that were on set,

they said, you guys did a great job,

but not one of you know how to season food at all.

And we're like, what?

So they ended up taking a chicken breast just like this,

and they said, we're gonna show you how to season.

They took some salt, put salt on top of that chicken,

and we're like, okay, we all did that.

Then they put the chicken in the pan

and started to cooking it, started to cook it,

and then they added more salt to it.

I'm like, okay, that's a lot of salt.

Took the chicken out of the pan, put it on the plate,

and seasoned it with salt one more time.

I'm like, they're gonna give people a heart

attack, ate the chicken.

It was the best chicken in the world.

And this is why they said, as food continues to cook,

the salt cooks into the food.

And oftentimes when you have seasoning, you need

to build layers of flavor, not just once,

but several layers of flavor.

And so what I'm going to do also is Jack,

just add a little bit of Cajun seasoning to add a little bit

of just some extra into it.

It doesn't make it spicy, it just adds another level

of flavor into the chicken.

And so, as you can see, we're not going

to cook this all the way through.

You don't even have to brown the chicken.

You're just wanting to cook it

and seal some of the flavor in this

before we mix it all together in the casserole.

So now what we're going to do is we're gonna take our butter

and we're going to melt it

and put in some crackers, some butter crackers

that we're going to use as a crust for this.

Now I'm gonna pull a Miss Paula move

and add a little bit more butter to this just

'cause I'm cooking this for us to eat.

And y'all know we like butter.

I say it all the time, probably in every video we've done.

Fat equals flavor. It does equal calories sometimes.

So, but as long as you go to the gym, you'll be fine.

Work out a little bit and just don't eat this,

you know, every day January is a great time

to, what do they call it?

Do New Year's resolution.

And so you can start your New Year's resolutions

after you eat this recipe.

So we're just melting it

and once it's melted, we're actually going to just crush

our crackers, our butter crackers.

And I would just use butter crackers.

Don't use, you know, like a another type.

Just use butter crackers that you can crunch up

and it just adds another level of flavor

and texture to this.

We are going to use probably one

and a half sleeves of the crackers.

I'm just gonna break this up with our hands.

Don't be afraid to cook with your hands.

Just wash, make sure they're washed in between, you know,

working with raw meat and all that goodness.

So we're just gonna mix this up together

and it's going to toast in the oven once

we put everything together, okay?

And this does not need to be seasoned

or anything like that on with this, because of the butter

and the crackers already have salt on it.

So, okay, now that we've mixed that together, let's go ahead

and put our casserole together.

Put this over here. Okay?

And what we're gonna do is we're gonna take our chicken

breast, put it right in the bowl,

put all that good seasoning and gravy, natural gravy.

See that natural gravy in there?

All that's gonna get infused into our casserole.

We're going to take a can of cream of chicken soup.

I'm just gonna put, make sure you get all of it in there.

This is a 10 ounce can,

10.5 ounce can of cream of chicken.

And then what you're going to do is take

eight ounces of sour cream and add it in.

If you're needing to do this for a, you know,

a rather large family, this is good.

Probably for a family of four, you can double the recipe.

So we're gonna just take this

and we're gonna add in our green onions.

That adds another level of flavor.

And we're also gonna add some more fresh

and I just always put a little bit extra in there for myself

And so now we're just gonna mix this all together

Then we're going to take our mixture, we're gonna add it

to our casserole dish.

Now this is beautiful.

This is a perfect size actually for this.

Now we're just going to take a spoon

and add our Ritz crackers to our casserole.

And I like a lot of Ritz crackers,

so we're just gonna do it generously.

This is a a lot for this dish, but that's okay.

We don't need to use all of this.

If you have extra, you can actually put it in a Ziploc bag

and put it in the refrigerator for another time

or just, you know, keep it in your pantry.

And so the only thing that we're going

to do now is just put this in the oven

and we're going to allow this not only to brown,

but we're gonna have the chicken

to finish cooking in the oven.

And what I like to do too as well is take

a cookie sheet and we're going to put

the casserole dish on top just so

that if it does overflow,
