- But today we're gonna make these sweet potato biscuits.

I grew up eating these for breakfast.

My mom and grandma and great grandma love to make 'em.

So it's real easy.

Just a few ingredients.

So we're gonna start with a little bit of all purpose flour.

This is just about 1 1/2 cups of all purpose flour.

We'll mix up our dry ingredients first.

- Got a little bit of salt here.

- [Rebekah] There's some baking powder.

- [Rebekah] And then about-

- [Paula] That's gonna make 'em fatty.

- [Rebekah] Yeah, help 'em to rise up good.

And about three tablespoons or so of sugar

for a little sweetness.

- [Paula] Okay, yeah, you've got to bring the sweetness

of those sweet potatoes out don't you?

- Yes, exactly and that's all there is to that.

And then we have our wet ingredients here.

This is two sweet potatoes that have been peeled and cooked.

They've been boiled and just mashed up.

So we may not need all of these

but I'm gonna go ahead- - Okay, yeah.

- Put em in this bowl.

- Oh yeah, yeah.

- Now just added a little bit of milk

to these sweet potatoes,

and you don't need to use all of it.

You wanna add it a little bit at the time

so you don't have too much moisture.

But we'll add more later if we need that.

I love sweet potatoes and they're so good for you.

We put 'em in biscuit.

- Much better than a white potato, but,

- So I need a little, a knife,

and a little cutting board so I can dice up this butter.

- And it's important - I will get you one.

Fresh out of the fridge.

I'm just dicing up this butter into little cubes,

so it'll make it easier to combine

in our flour mixture.

All right and then we're just gonna add this butter

into our flour and we're gonna use a,

you can use your hands or a fork.

If you have a pastry cutter, that's fine too.

All right, so I just wash my hands, y'all.

But I got our flour and butter mixture

to little pea size crumbles.

We're gonna add our sweet potato mixture.

Combine our wet and dry ingredients right in here now.

And this is where we make that dough.

- [Paula] So that was two potatoes

and it looked like you used-

- [Paula] Maybe 1/3 of a cup of milk.

Or maybe even 1/4 of a cup of milk.

And we might need some more,

but we're just gonna mix this up.

- [Paula] You can add it as you go, can't ya.

And if your batter's too wet

you can add a little more flour.

If it's too dry, add a little more milk.

You know, I was worried when you told me

you needed two tablespoons of butter.

That's just for dressing the top.

This can be a little bit of a messy job

but don't be scared of it.

- I had to add a good bit more flour

'cause these were sticky, but now we're good.

I've padded this out to about an inch thick.

And you can see I've got my biscuit cutter here.

And here's a little tip, you just wanna dip

that into your flour so it'll help it not stick.

And Paula's got my cast iron skillet going over here.

We're going to transfer these biscuits to this hot skillet.

- And that helps 'em rise up.
