- Hey y'all, it's a wonderful day here
0:04
in my kitchen in Savannah, Georgia.
0:07
And do you know why?
0:09
Because we just had the biggest storm blow in,
0:12
and there's nothing any better than being on that back porch
0:16
and just watching it come over that water.
0:19
Go see if you can see it, Eddie.
0:24
I bet we got time 'cause the recipe I'm gonna share
0:26
with y'all is a short one.
0:34
Look at that.
0:36
Isn't that wonderful?
0:38
Oh, look at the plants are blowing over.
0:42
Out here.
0:45
I mean, that was a blowing rain.
0:49
And I do love a rainy day.
0:52
And my favorite thing about a rainy day is,
0:56
I love getting in the kitchen and cooking.
0:59
When it's like this, it's kind of dark outside
1:03
and you're so thankful to be inside and dry and cozy.
1:07
Isn't that right, Lulu?
1:09
- [Eddie] She's not liking it.
1:11
- (laughs) I know it. She's not liking it.
1:13
And where did Gus go? Bless his heart.
1:16
Gus is so frightened of thunder and storms and rain.
1:21
Where did he go, Eddie?
1:24
Gus?
1:25
Is he with you Theresa?
1:27
- [Theresa] He is. - Oh, okay.
1:28
- [Theresa] Well, he was holding my hand.
1:29
- He's holding in your hand.
1:31
- [Theresa] He had my hand, he gave me his paw.
1:32
- Yeah, he loves to hold hands.
1:35
I put this chair in here thinking he might come
1:37
in here and sit up in the chair,
1:40
but Lulu beat him to it, so.
1:44
All right, (thunder rumbles)
1:46
listen, y'all.
1:47
Isn't that wonderful?
1:51
Well, I wanna cook up something good
1:53
and I want cook up something satisfying.
1:57
But before I do that, I just want to tell y'all,
2:01
I said I would never ask again but I am.
2:03
Just please hit subscribe if you're enjoying the video.
2:07
I would appreciate your help.
2:09
All right, so the recipe that I'm sharing
2:11
with you today is another good one for Father's Day.
2:16
And this is Michael's favorite potato,
2:19
it's all right, baby girl.
2:21
It's all right.
2:24
You wanna sit in a chair? Do you wanna sit in a chair?
2:28
Come on.
2:29
Come on. You sit in a chair right here, okay?
2:32
That'll get you up close and higher.
2:34
Come on, come on,
2:37
come on.
2:38
Here, let me help you.
2:42
All right now, that'll get you up a little closer.
2:47
- [Eddie] There she goes. (laughs)
2:49
- I'm not going anywhere.
2:50
(Eddie laughs)
2:52
I'm not going anywhere, little girl.
2:57
This is Michael's favorite potato dish and every Christmas,
3:02
Michael makes his shrimp-stuffed potatoes
3:05
for our Christmas meal.
3:08
So if you got a father that you're needing to cook for,
3:14
this Father's Day, I can promise you this is a good one.
3:18
In fact, we noticed it had a lot of five stars on it,
3:22
out there in that land.
3:25
You know that land where everybody's living now?
3:28
All right, I've got four potatoes
3:31
and there's really no rules on a stuffed potato.
3:37
Now I have four potatoes.
3:42
I really like a real large potato for stuffing
3:46
because if I cut it half in two,
3:49
I get two servings out of it rather than just one.
3:53
But these, I'm just gonna come in here and cut the tops.
3:56
(thunder rumbles)
3:59
Lulu,
4:01
Lulu, oh cuss.
4:04
Poor thing while Eddie's filming me,
4:06
he's got one hand on Gus and one hand on the camera.
4:14
All right, so you wanna bake your potatoes and then,
4:21
you wanna let 'em cool enough that you can handle 'em
4:24
and I'm cutting just a little portion off the tops.
4:30
And I'm wanting to cut the part off that, uh oh,
4:40
I'll just cut him right out.
4:42
Little spot on him.
4:45
I like to cut 'em so that they lay flat
4:51
and this is the side that they wanted to lay on.
4:53
All right, so I'm gonna take my spoon.
4:56
Okay, Lu, come on.
4:59
I'm gonna take my spoon and get the meat out of the potato.
5:06
And there was a little in the top,
5:07
so I'm going to go for it.
5:15
Okay, so you'll wanna come in there
5:19
and you'll wanna leave enough
5:24
to hold the stuffing in.
5:28
So you don't wanna like, skin it.
5:32
You wanna leave enough it to still be sturdy.
5:38
Just like that.
5:42
See, it looks like a boat.
5:50
Mm. So good.
5:51
This one's still real soft.
6:05
Like I said, there's no rules with a stuffed potato.
6:09
You really just put anything you want.
6:13
You know, if you're cooking for a father
6:14
that's allergic to shrimp,
6:16
then you might wanna figure out something else
6:20
to stuff it with.
6:22
You know, I love them stuffed with chicken.
6:23
I love them stuffed with steak,
6:26
pork,
6:28
you know, whatever good meat you have
6:34
in your house or your freezer.
6:39
In fact, you could just do bacon.
6:42
If that was a meat you wanted, or ham.
6:47
Just experiment.
6:50
'Cause I grant you, you can't go wrong with a potato.
6:55
All right.
6:56
Now, while that's still warm,
6:58
I'm gonna wanna beat it up so that the butter will melt.
7:07
(mixer clinking)
7:12
And I like using the electric mixer
7:15
because it's just a little faster.
7:19
(mixer clinking)
7:26
Okay.
7:29
Next I'm gonna cut this eye on the stove on,
7:34
so our pan can be getting hot
7:35
because I'm gonna need to saute off our shrimp.
7:37
You definitely want them cooked
7:40
because we are just gonna put 'em
7:41
in the oven and really bring them back up to hot again.
7:46
So we do want to make sure they're cooked.
7:54
All right, the next thing I'm gonna do is add sour cream.
7:57
Now the recipe that will be coming up,
8:00
it calls for six large potatoes.
8:04
And I don't consider these large.
8:07
To me that's kind of a medium.
8:09
So it calls for two cups of sour cream
8:11
but using a smaller potato,
8:14
which this is a perfect size for one person,
8:18
I'm not putting two cups of sour cream in it.
8:23
I put maybe almost a cup.
8:29
I'm just gonna stir that in.
8:33
And now I'm gonna stir in some cheese.
8:42
Let it melt in,
8:42
let's see how much cheese it tells me to use.
8:45
An eight ounce package of cheddar cheese
8:47
but I am going to save some
8:50
to put on 'em at the last minute,
8:53
because you know, if you put your cheese
8:55
on top of 'em,
9:00
it'll tend to get kind of hard,
9:02
the cheese will get hard and I don't want my cheese hard.
9:15
Okay.
9:16
All right, now let's do a little salt and pepper in 'em.
9:26
Like some heavy, heavy pepper.
9:28
All right.
9:32
I think I got about a pound of shrimp so,
9:35
you can make it as heavy or as light as you want
9:37
as far as the shrimp.
9:43
Okay, little shrimps.
9:46
And I do leave them whole.
9:47
So when you're dipping up that potato,
9:50
you know you got a shrimp.
9:54
I should have put it on a larger eye.
9:58
Okay, and I've got like a teaspoon of parsley,
10:03
of dried parsley just for a little color.
10:07
A green onion would be awfully good chopped up in here
10:10
and that would give it color.
10:14
But this is a very simple, basic potato stuffing.
10:20
Okay, I may add just one more little dollop of sour cream.
10:30
Yeah, that looks like a even cup-full now, that I've used.
10:38
Let's get this out the way.
10:48
And to give it a little color when I get 'em stuffed,
10:52
I'm gonna sprinkle a little paprika on 'em,
10:55
which'll give 'em that little red tint.
10:57
Is Gus still by you, Eddie?
10:59
- [Eddie] Oh yeah, they're both over here.
11:02
- I bet. (laughs)
11:10
Okay, they're coming.
11:15
I should have turned them on earlier.
11:20
- [Theresa] Are you all okay?
11:21
- Say we scared to death, Aunt Theresa.
11:24
- [Theresa] Oh Lord. You're okay.
11:27
(stove igniter clicking)
11:35
- I dunno why that does that.
11:37
I'll just do it on this one.
11:41
See that little bitty eye.
11:42
That was really tiny.
11:45
Woo. You smell the gas, Eddie?
11:49
- [Theresa] Yum, it looks good.
11:51
- Oh, it's gonna be so good.
11:53
Now Michael would definitely
11:57
put a lot of onion in his, which-
12:01
- [Theresa] That's kind of the cool thing.
12:02
You could put all kinds of stuff in it.
12:04
- Whatever you want to.
12:07
You know what?
12:07
I think it could use a little bit more salt.
12:10
- [Theresa] Jamie made some, do you remember the potatoes-
12:13
- Oh my gosh.
12:15
- [Theresa] They need to look that one up too,
12:16
that was a good recipe.
12:18
It was a stuffed potato.
12:20
- Do you know I ate,
12:23
potato skins like you get from a restaurant.
12:26
I never order those 'cause they're just not-
12:30
They're probably frozen.
12:31
- [Theresa] These were the bomb.
12:33
- These were wonderful.
12:35
I had one of them for lunch and one for dinner.
12:38
They were out of this world.
12:40
So look that up, Jamie Dean's...potato.
12:46
- [Theresa] It would've been in this very last round
12:48
that he was on, so it was potato, yes.
12:50
- Potato skins.
12:51
Uh oh, I just got shrimp on my coat.
12:56
All right, so while these are cooking,
12:58
I've got, you know,
13:00
I get some of the sweetest mail from y'all
13:04
and I was just rereading this letter that I got
13:10
from Heather Crib, just the sweetest letter.
13:16
And I thank you, I thank you.
13:21
(shrimp sizzling)
13:25
Bobby was telling,
13:28
we went to a function here
13:30
in Savannah last night for Union Mission.
13:34
It's an organization for the homeless
13:39
and my foundation, the Bag Lady Foundation,
13:44
is happy to be one of its supporters.
13:48
And so on my ride home last night,
13:50
we were talking about Bobby's triplets.
13:53
And he said all of a sudden,
13:54
"Millie has started kind of,
14:01
manipulating her daddy a little bit."
14:04
He said he doesn't know where it came from,
14:06
how it started, but she'll do something
14:08
and then look at her daddy kind of sly and say,
14:11
"You like that?"
14:14
Knowing he doesn't like it.
14:18
And she gets a big kick out of,
14:24
making his hair kind of stand up.
14:27
"You like that?"
14:30
No, you know I don't like it. (laughs)
14:34
Wow, these are popping.
14:37
All right, so those are ready.
14:41
It's funny, the smaller the shrimp,
14:44
the quicker it seems to get done.
14:50
These little ones can take a while.
14:52
So I'm just gonna put those in there.
14:58
Now Michael, when he makes these at Christmas,
15:01
he always leaves one large shrimp and puts on top.
15:06
And that's pretty that way,
15:08
but I'm gonna put every one of 'em in the center.
15:20
Mm mm.
15:22
Okay, so here we go.
15:30
That's a lot of shrimp, Eddie.
15:33
You know it, for four potatoes.
15:35
- [Eddie] Yeah, that's a meal all on its own.
15:38
- Oh yeah.
15:42
And I'm gonna stuff them, you know, pretty good
15:46
because a salad is really all you need.
15:53
I'm gonna try to open that up
15:56
and give you a little bit more room.
16:06
Michael should be home in a few minutes and he's gonna say,
16:10
"That's not like my potatoes."
16:14
Oh, and don't give up on us.
16:17
He has really challenged me
16:19
to that chicken and dumpling-
16:24
- [Eddie] Cook off? - cook off, yes.
16:25
I mean, and he's serious.
16:27
And he said he wasn't even gonna make his here
16:30
in this house.
16:31
He was gonna go to Michelle's kitchen
16:33
and make it at her house.
16:36
So I won't be stealing any tips from him (laughs)
16:42
because if he doesn't here he will swear
16:46
that I stole some of his ideas.
16:52
Okay.
16:56
Looks good.
16:57
Looks really good.
17:00
We're gonna have some left over,
17:03
which is perfectly fine because I can put this
17:07
in a casserole dish,
17:11
and use it as a side dish,
17:15
a little side casserole,
17:21
for another meal.
17:23
Opening that up a little bit.
17:27
It's a lot of shrimp.
17:29
Okay, now I'm gonna sprinkle it with a little paprika
17:36
to give it just a little hint of a color.
17:46
And then right before it's time for them
17:48
to come outta the oven,
17:50
I'll put some more cheese on top,
17:53
and it depends on how cold your stuffing is,
17:58
but 20 minutes ought to do it in like a 350 degree oven.
18:03
So there you go.
18:06
Mm, it's good Eddie.
18:08
I wanna wish all you dads out there happy Father's Day.
18:15
And hopefully somebody will make
18:18
these shrimp-stuffed potatoes for you this Father's Day.
18:23
Request it. (laughs)
18:26
Yum.
18:31
Mm, mm.
18:35
I love potatoes!
18:38
With shrimp in 'em!
18:43
Mm, mm, mm, mm.
18:50
Mm.
18:53
Oops, get back up there.
18:58
Mm.
19:01
I love eatin' 'em just like this.
19:02
Just like I would if it was a cookie.
19:08
It's so good. (laughs)
19:13
Loving best dishes, all you fathers.
