- So remember I promised y'all cookie sheet, one pan meals,
0:08
and I'm taking these recipes
0:11
out of "Cooking with Pauline Deen" magazine.
0:15
And as y'all know, my contract ran out on my magazine
0:19
after 11 or 12 years, so it's no more.
0:25
But when you come into the stores,
0:27
you can find copies of maybe your favorite issue
0:30
and you can pick 'em up that way.
0:32
But I really miss my magazine.
0:35
And so this is one of those sheet pan, one pan meals
0:43
from the article that was done
0:44
in "Cooking with Paula Deen" magazine.
0:48
And I'm probably all, total,
0:49
they'll be doing what, five, Theresa, you think?
0:52
- [Theresa] Yes. One full week.
0:54
- One full week. Five days.
0:56
Okay, so this next one is a chicken pot pie,
1:02
a one sheet pan of chicken pot pie. (laughs)
1:08
All right, so I'm gonna turn my skillet on.
1:13
I've got a couple of tablespoons of butter.
1:18
Aunt Peggy, did you ever make chicken pot pies?
1:20
- No dear. - I didn't think you did.
1:23
- [Aunt Peggy] We'd almost just bring anything
1:25
out of the oven. - (laughs) Why?
1:29
- [Aunt Peggy] Because I couldn't get it in.
1:31
- (laughs) Oh my gosh.
1:34
She has had me laughing the last couple of days,
1:39
laughing, laughing, laughing, 'cause she's funny.
1:41
She doesn't know it, but she's funny. (laughs)
1:45
All right, so I've got my couple of tablespoons of butter.
1:48
I've got some beautifully diced carrots that Theresa did.
1:53
Look at that. What a beautiful size.
1:58
And she told me, tomorrow she's a gadget gidget. (laughs)
2:04
She loves gadgets.
2:06
So she said she's gonna bring that chopper tomorrow
2:08
to show me. (phone rings)
2:10
All right, so I've melted my butter in my skillet,
2:13
and I was telling y'all that Theresa,
2:15
tomorrow she's gonna bring me the little gadget
2:19
that she has that does all this precise chopping.
2:23
And she says it's easy, and I like easy.
2:27
All right, so I got my carrots,
2:29
got my onions,
2:34
got my celery.
2:36
So we're gonna let those cook for,
2:40
oh probably at least five minutes,
2:44
until they're kind of tender.
2:46
I'm gonna go ahead and add my garlic.
2:53
And it's not much garlic, but if you want more, add it.
2:59
All right, and we'll salt it.
3:03
And pepper it.
3:09
Oh, that was what I had the butter in.
3:11
I thought, what kind of design is that? (laughs)
3:16
See it? (laughs)
3:18
Okay, so I'll let this cook
3:19
and I'm gonna be stirring it occasionally,
3:23
and then we'll move on to the next step.
3:26
Okay, (claps hands) on with our chicken pot pie.
3:31
Now I probably cooked that maybe six, seven minutes,
3:34
five minutes, until they're kind of,
3:39
you know, almost totally tender but not quite,
3:42
'cause we gonna be cooking 'em some more
3:44
once we put this in the oven.
3:47
So I'm gonna take our flour,
3:50
and I've got about maybe three tablespoons,
3:55
and I'm gonna toss that onto our veggies
4:00
to give us a little thicker, you know, stock.
4:05
I may need some more, but I don't want my pie to be dry.
4:11
I want it nice and moist.
4:14
Okay, I'm gonna add just frozen green peas.
4:19
Like I said, I feel a vegetable soup coming
4:23
(chuckles) with all these veggies.
4:32
Okay, let me turn that up a little bit.
4:42
And,
4:47
the recipe calls for one cup of chicken base.
4:55
So I'm going to slowly add my chicken base into my veggies
5:04
that have the flour, which is going to thicken it up.
5:14
There we go.
5:15
And I asked Theresa to double my stock
5:20
because like I said, I don't want this pie dry.
5:29
Okay.
5:36
I think.
5:39
I think, I think, I think...
5:44
Okay, you can see it's getting a little thicker,
5:51
and I'm gonna add some more stock.
6:00
Oh that's almost a cup and a half of stock.
6:09
Okay, (spoon taps) gonna let that cook.
6:15
And...
6:20
Think I'm gonna sprinkle it with a little bit more flour.
6:24
I wanna be careful though.
6:25
I don't want that to plump and lump on me.
6:29
Something tells me
6:32
that I'm not going need that many veggies.
6:37
So I'm gonna take some of them out.
6:40
(utensils clanking)
6:46
I'm gonna take some of 'em out and save for my soup.
7:02
That's a lot of veggies.
7:10
(bowl clanks) Okay,
7:12
now I'm gonna add a cup and a half of heavy cream.
7:23
Get that mixed up real good.
7:36
Oh that's some heavy cream.
7:38
(measuring cup clanks)
7:43
(spoon taps)
7:45
All right, now I'm gonna add my chicken.
7:51
And if you wanna make this real easy on yourself,
7:55
you know, pick you up a roaster from the grocery store.
8:01
Those are very, very popular items,
8:05
and you can count on them to always be good.
8:10
All right, look at that cream, how it's setting in,
8:13
and started to thicken.
8:21
(measuring cup clanks)
8:25
Yeah, and now see, I like my chicken pot pie creamy.
8:33
I don't wanna bite into a dry piece of chicken pot pie.
8:39
(spoon taps)
8:40
All right, easy, easy.
8:45
And I might even wind up adding more chicken base.
8:51
You know a lot of things in the kitchen,
8:55
it's very hard to formulate things.
8:58
You know, some things you just have to make a judgment call,
9:03
you know what I mean?
9:09
All right, I'm gonna clean this up
9:11
and then we're gonna start on our crust,
9:14
which to me, is the best part of chicken pot pie.
9:18
Okay, let's get going with the crust.
9:23
Now if you look this recipe up,
9:27
it is gonna tell you to use the refrigerated pie crust,
9:34
but I'm gonna tell you to use, or suggest,
9:40
that you use something else, like puff pastry.
9:48
This is what I used at the restaurant
9:53
in our chicken pot pie and people loved it.
9:59
So I'm gonna roll it out
10:01
because I want strips to be at least that long.
10:06
(pan clanks)
10:08
So, I will try to get it that way.
10:15
You know what, I was gonna use parchment paper,
10:18
but I think...
10:23
I think I'm just gonna cook it directly on it.
10:25
I don't want any interference.
10:29
And I'm gonna use, in the center of this,
10:36
I'm gonna use my spray that you use for cakes.
10:40
That's some serious spray right there.
10:44
Okay, so we need to decide what size,
10:49
how wide do you want your dumplings?
10:53
That's not shrinking back up, is it?
10:56
Maybe a little. (laughs) Think so, Eddie?
10:59
(Eddie speaks indistinctly)
11:01
- Okay, I'm gonna make my dumplings about that wide.
11:12
And don't stress, they don't have to be perfect.
11:15
All right, so I'm gonna pour our filling onto our pan
11:25
and I'm so glad that I took some of those vegetables out
11:39
because I don't want this dry.
11:43
And just to make sure it's not, I'm gonna...
11:47
Oh darn, (laughs) I had the spoon upside down.
11:52
I was (laughs) trying to sprinkle it,
11:55
filling up that side, Eddie.
11:58
I miss my vision the most.
12:03
Because our crust is going to drink up some of that.
12:13
Get down there.
12:17
Little ornate.
12:20
Along with the next piece.
12:25
And I think I want 'em about that far apart.
12:29
See I remembered I had to stretch, I had to stretch that,
12:33
and I didn't stretch that first one.
12:38
I'm gonna have to go in and pick it up
12:40
and stretch it. (chuckles)
12:44
Uh oh, that was already shrunk back on me.
12:48
I like them hanging over a little bit. Okay, here we go.
12:54
Now this is how you lattice a top.
12:58
You're gonna take every other strip and pull back,
13:05
and then...
13:10
Gonna measure this.
13:16
(utensil clanks)
13:18
Okay, and then we're gonna put those back,
13:22
and now we're gonna come and pull back the opposite.
13:31
The opposite side. (utensils clank)
13:45
See what we doin'?
13:48
Then you got your lattice going on.
13:55
Get back into you little pea. (laughs)
13:58
You little pea.
14:06
Look how pretty that is. Isn't that pretty?
14:09
You think that's pretty Eddie? - I think so.
14:12
- I think it's pretty.
14:16
All right, so I'm just going come along
14:21
and trim these some.
14:23
Like I said, I just like some hanging off.
14:25
I think it looks pretty 'cause it'll kind of curl up.
14:30
You know, make...
14:36
Oh darn it, I almost cut my finger.
14:46
Come over here and do the same thing.
14:51
That one's good.
14:54
Two more.
15:01
Okie doke.
15:03
Now, I'm gonna spray this,
15:09
or I could egg wash it.
15:15
Let's egg wash it.
15:16
Okay, like I said, I could have sprayed it,
15:20
you know, with our non-stick, but you know,
15:24
I want this to really be shiny and pretty.
15:32
So I've just got the whole egg
15:35
and I put just a tad of water.
15:47
And the egg's gonna make it shiny and pretty
15:53
without anything being artificial on it.
15:57
Okay, in the oven it goes.
15:59
This recipe also says about 45 minutes,
16:04
but it's not gonna take that long,
16:11
and I definitely don't wanna overcook it
16:13
because I don't want that juice to dissipate.
16:17
- What timer do you want me to put on?
16:20
- I'd say, let's put it on 25 minutes, Theresa.
16:25
Or just to have fun, how about 20 minutes?
16:28
- [Theresa] I was gonna do 20. (Paula laughs)
16:32
- Wow. Gotta look at this.
16:34
Wow. (chatter distorts)
16:39
Look how creamy and good that is.
16:43
See, you can see the cream coming out of it?
16:47
If I had not added that extra stock, it would've been dry.
16:53
Look at that.
16:56
And remember how much of those vegetables I took out?
17:01
I probably didn't use half of those.
17:04
Did you say you had a fork? - No.
17:11
- Yum, I love puff pastry.
17:16
There you go, so let me know, Joe.
17:22
All right now see, you see how our filling is running out?
17:27
That's the way I want mine.
17:29
I want you to know I've got that wonderful filling.
17:35
To me it's a prettiest of all the sheet pan recipes.
17:41
- It is pretty. - Look.
17:45
- [Theresa] I thought they were all pretty.
17:47
- They are all pretty,
17:48
but there's something about puff pastry.
17:55
You know, there's just something about it.
17:57
And you know, every sheet pan recipe
18:00
that we have shared with them has been delicious and easy.
18:06
(people chatter off camera)
18:07
I'm so glad you like it.
18:11
This is our last sheet pan recipe.
18:13
- [Theresa] I wonder if people have sheet pan recipes
18:15
that they would send in.
18:17
- Do y'all? I would love, love to hear from y'all.
18:22
If y'all do any sheet pan, one pan meals,
18:28
please share it with us. - Sheet yeah.
18:31
- Sheet yeah, Micheal said. (laughs)
18:36
That would be wonderful if you would.
18:38
And of course you know I'll give you credit
18:40
because I give credit where credit is due.
18:45
