- Hey, I'm Jamie Deen, and honey, it's cold outside,
0:05
but it's nice and warm here in Mom's Kitchen.
0:07
We're at that time of the year where we get a little bit
0:09
of winter down here, and I know y'all got winter,
0:12
and nothing fights off winter better than a pot of soup.
0:16
I love soup. It's one of my favorite foods to eat.
0:19
And my mom has made delicious soups my whole life.
0:22
And today's no different.
0:23
We're doing a split pea soup today.
0:25
This is a Shaggy Man Split Pea Soup,
0:29
and we've started with about a half a pound of bacon.
0:32
And I'm gonna brown this off.
0:34
Now, you don't have to be too worried about this part
0:37
of the cooking process, y'all
0:38
'cause this is gonna cook
0:40
for two hours once we get everything together.
0:43
So, let's get it going, okay.
0:45
We got a quarter of a stick of butter in here,
0:47
and I've added this to my bacon to it,
0:49
about a pound, maybe a half a pound.
0:51
And now, that I've got this browned off,
0:53
we're gonna add our vegetables.
0:54
We've got some carrots that Theresa has done.
1:00
Y'all know my son is up in school in Boston this year,
1:03
and it's his first winter, and his mother and I have prayed
1:06
and worried over him.
1:08
My gosh, it is so cold up there. Onions, celery.
1:13
It's just the traditional three vegetables
1:16
that we use down here to start everything.
1:20
I'm gonna add some celery leaves to it.
1:22
Y'all know, I like to save the tops of my celery.
1:25
It's just like having a little fresher herb in there.
1:28
Gives it flavor, body, texture. Beautiful.
1:35
I am gonna coat all this.
1:36
We're gonna let this cook for just a few minutes.
1:39
What I wanna do is really marry as much
1:41
of this bacon flavor to these vegetables
1:43
as I can in this process.
1:45
And I know you're thinking, well, gosh,
1:46
it's gonna sit in there for two hours.
1:49
But this part right here, where we really introduce heat
1:52
to our vegetables the first time, open it up to get all
1:56
that delicious bacon flavor in there.
1:59
See how pretty it is? Hmm hmm. Beauty.
2:04
Once this softens up a little bit,
2:06
I'm gonna throw in a pound of our sausage that we have.
2:10
I'm rushing it a little bit,
2:12
but I don't wanna keep y'all too long.
2:14
Now, we're gonna brown this off all the way.
2:16
This will take me a few minutes to get this browned up.
2:20
So why don't we take a break.
2:21
I'll go put an extra pair of socks on and get your coffee.
2:25
Thanks for tuning in today.
2:26
Y'all come back, we'll finish this soup.
2:29
Okay, y'all, I have got all my things going,
2:31
and my mama has stumbled into her kitchen,
2:33
so you know she's got something to say.
2:36
- [Mom] I ain't got nothing to say, except it smells mighty,
2:39
mighty, mighty fine. - Mighty fine.
2:41
We've got our butter, bacon, onions, celery, carrots.
2:47
Then I browned off a pound of sausage in here.
2:50
Doesn't that look good? Now, we gotta have some liquid.
2:54
So, we're doing chicken stock.
2:59
I've got every bit of chicken stock in here.
3:01
This is two quarts of chicken stock.
3:04
You can buy it, or you can make your own.
3:07
Oh, yeah. Get all that stuff out of the bottom.
3:11
Now, we're looking like some soup.
3:14
Now, the star of the show are split peas.
3:18
Man, I like, this has got me swallowing hard in the morning.
3:21
- [Theresa] And Jamie, don't forget to tell them you
3:23
have to soak them overnight.
3:24
- [Jamie] Yep. You gotta soak these babies overnight,
3:26
or they'll never cook.
3:27
So, Theresa, last night,
3:29
made sure that our peas were soaked.
3:31
I'll give you a little insider information.
3:33
We were going to do this recipe last week
3:36
and peas didn't get soaked, so.
3:40
- [Theresa] Thanks for throwing me under the bus.
3:42
- I'm not throwing you under, baby.
3:44
I'm dragging you with me. (both laugh)
3:47
All right. Our split peas are in.
3:49
All of our proteins are in here and cooking.
3:52
Now, all we have to do, I'm gonna turn this down,
3:57
turn it down to a little bit on medium.
4:01
I'm gonna put a little cover on this,
4:04
and we're gonna stand here for two and a half hours.
4:10
Y'all hungry? All right y'all, it's been about two minutes.
4:16
I didn't make it two hours.
4:19
I appreciate y'all tuning in today.
4:20
This is a delicious soup.
4:22
Mama's gonna bring it over to great, great later.
4:24
It's got two hours to cook here.
4:27
I hope y'all had a wonderful holiday season. Stay warm.
4:29
Thanks for tuning in today. I'm Jamie Deen.
4:31
I'll see y'all around the kitchen.
4:36
