- Y'all know nothing makes me smile bigger
0:04
than y'all sharing a family recipe with me.
0:08
I just love that y'all do that.
0:11
And I got a sweet, sweet note along
0:14
with a wonderful sounding recipe,
0:18
which is perfect for this time of year.
0:21
And it's from Kathy McCutcheons.
0:25
And she sent it to us to do it in the fall shows,
0:29
but she didn't send it to us until almost mid-October.
0:34
we were already into Thanksgiving by that time.
0:37
So, after the first of the year, Kathy, I'm getting to it.
0:42
So Kathy has sent us a sausage, bean and kale
0:48
So we're gonna start with one pound of.
0:53
Excuse my back, excuse my back.
0:58
I'm gonna start with one pound of Italian sausage,
1:02
and we're gonna just break this up, you know,
1:06
and have it like for soup size.
1:10
You don't want it the size of golf balls
1:12
'cause that'd be hard to get in your mouth.
1:15
Okay, I drained our sausage.
1:18
There was not much fat in it at all, which is good.
1:22
And I'm putting in a little olive oil in the pot,
1:26
and I'm gonna saute my onions, my carrots,
1:31
and my celery in that olive oil.
1:33
And speaking of olive oil y'all, I'm so proud
1:38
to announce that we have got the most wonderful line
1:42
of olive oils in our stores now.
1:48
And I got 'em out here.
1:49
I got 'em back here so I won't have to dig for 'em.
1:54
Look, this one is blood orange.
2:05
Balsamic, aged balsamic.
2:09
- [Eddie] That one's so good.
2:10
- Yes, they're all so good, Eddie.
2:16
Can you believe it, y'all?
2:17
We have a butter flavored olive oil,
2:25
I think the champagne is wonderful too.
2:27
Is that your favorite, Eddie?
2:28
- [Eddie] That's my favorite.
2:31
Have you tasted that, Theresa?
2:32
- [Theresa] I have not.
2:33
- Well you got to taste it honey.
2:36
- [Theresa] Ooh, I love red apple.
2:42
I just can't wait to use all these.
2:45
- [Theresa] I bet the lime would be great on Salmon.
2:50
And this is from, Divine.
2:54
Is who we've, Greg and Shirley.
2:58
Always first, cold- pressed, 100% real,
3:03
extra virgin olive oil, organically produced,
3:06
lovingly and procured by Greg and Shirley Divine.
3:14
Now I'm gonna add the garlic
3:17
to our carrots and celery.
3:24
And Kathy, I thank you so much, honey,
3:27
for sharing this recipe with us.
3:30
Because it's, it's a good chance you got everything on hand.
3:42
Alright, I've got marjoram, I think.
3:51
I'ma go ahead and put that in.
3:54
And I'm gonna go ahead and put a little salt and pepper.
4:04
And then we've got two cans of white beans.
4:08
We've got our crushed tomatoes,
4:10
and we're gonna let this simmer.
4:11
Kathy said, the longer it simmers, you know,
4:15
the more flavorful this soup gets.
4:17
So, I'm all for that.
4:20
And it calls for two tea, one teaspoon of dried thyme.
4:25
But since we've got so much fresh out there in the garden,
4:32
And you know, when you use fresh versus dried,
4:36
it takes at least twice the amount fresh
4:42
to equal a teaspoon of ground.
4:47
So if you got fresh, always use a little bit more.
4:52
All right, now I'm gonna put our sausage back in there.
5:03
See, that was a little fat, but not a whole bunch,
5:07
because I didn't drain it, you know,
5:09
before I poured it on the,
5:12
before I poured it on the paper towel.
5:17
I'm gonna need to come back in there
5:19
and cut these, these sausage bites down some.
5:25
All right, now I'm gonna add our crushed tomatoes.
5:34
And I just love crushed tomatoes.
5:36
That's all I ever use.
5:37
Once in a while I might use a diced, petite tomato cut.
5:45
But I don't know, it's just like the diced,
5:51
For some reason it just doesn't wanna cook down.
5:55
All right, we've got four cups.
6:00
No, we got eight cups of chicken stock.
6:12
Now if you got some fresh homemade stock, even better.
6:26
Alright, now I'm gonna add our two cans
6:28
of drained white beans.
6:38
Golly bum, it looks good.
6:43
I dunno if we're gonna need this much stock
6:47
I mean it will be real soupy if we do.
6:52
So, I'm gonna have it there
6:54
and as it simmers along, then I'll make a judgment call.
7:00
This is pretty, pretty kale,
7:05
So you can use kale or spinach, whichever y'all prefer.
7:13
Get rid of some of that stem.
7:37
And this is gonna cook up also.
7:43
All right, that's probably a little over a cup
7:53
Oh, that makes it so pretty, getting that green in there.
7:57
I love all the colors.
8:03
As many colors as I can get in my pot.
8:08
I put this whole five ounce package, Theresa,
8:11
in there, because I felt like diced
8:14
that equals four cups.
8:16
And you can see how it looks like plenty to me,
8:22
but if it cooks up too much,
8:23
I'll just throw some more kale in there. (laughs)
8:27
But it looks very good.
8:28
And I did finish putting in the eight quarts,
8:33
wasn't it eight quarts of broth?
8:34
- [Theresa] It's two quarts. - Four quarts.
8:36
- [Theresa] Two quarts. - Two quarts.
8:37
- [Theresa] 64 ounces.
8:40
Eight cups, not eight quarts.
8:41
Y'all, I'd need a pot that big. (laughs)
8:45
I'm goofy-headed today.
8:47
Kathy, this soup just looks delicious, girl.
8:53
And I let it cook all afternoon.
8:56
Eddie, say when, for you.
8:59
- [Eddie] I'll, I'll take a little more than that.
9:00
- Okay, well that'll be mine.
9:06
And do you like a lot of broth, Eddie, or?
9:09
- [Eddie] More, chunky?
9:11
- You like it more chunky?
9:16
- [Eddie] I've been smelling this for hours now.
9:22
- Okay, there you go.
9:25
- And I'm gonna, might be, get me a little bit.
9:30
I don't want too much meat.
9:37
Look at the steam coming off of it.
9:46
Ooh, that's good, Kathy!
9:51
I taste a little bit of heat.
10:02
Thank you, Kathy, for the sweet letter
10:05
and all the sweet words of love and support.
10:11
I thank you very much
10:13
and I send you loving best dishes as well.
