- Y'all, I'm gonna share a banana bread recipe with y'all.
0:07
a friend of mine had made this
0:11
that she found on some website out there,
0:14
and she said "I know you make a lot of banana breads.
0:17
You ought to try this one.
0:18
It's like a salty caramel banana nut bread or banana bread."
0:26
I don't even think it calls for nuts.
0:28
So you could certainly add nuts, which I probably will.
0:32
So I've got two cups of all purpose flour.
0:35
I've got my baking soda, my salt.
0:39
Oh, is that baking powder? I can't remember.
0:42
Teaspoon of cinnamon.
0:43
But y'all can find the recipe at the end of this video,
0:48
So I'm just gonna mix all of our dry.
0:52
I didn't mean to mix that in.
0:55
I think I'm gonna do something else.
1:05
I've got a stick of butter at room temperature.
1:14
You know the one thing that you wanna remember
1:17
when you're making muffins and breads like this,
1:22
you don't wanna overbeat them.
1:25
So I'm gonna get my butter going
1:30
and then I'm going to capture my brown sugar
1:34
that I put in my flour.
1:37
Just gonna take it out and beat it with my stick of butter.
1:43
So I'm gonna add my eggs one at the time.
1:48
Okay, and the last thing I'm gonna put in there
2:16
And our four very, very, very ripe bananas.
2:22
I've always thought that the riper the banana,
2:28
the more strength those bananas have.
2:32
So we'll see how it works with this one.
2:41
All right, I'm gonna add some vanilla,
2:58
And now I'm going to take the whisk
3:06
and just kinda whisk our dry ingredients together.
3:14
And from this point on, this is where I don't wanna overmix.
3:34
Come on out of there, flour.
3:43
And we wanna mix this until just moistened.
3:58
And that looks about right.
4:12
You think I oughta put some nuts in it?
4:17
I'm a nut eater. - [Theresa] I know.
4:20
- [Eddie] Maybe sprinkle on the top of the glaze.
4:23
- Yeah, we could do that.
4:27
- [Theresa] Or just sprinkle them over the top
4:28
when we bake and then the glaze holds it.
4:30
- Yeah. Yeah, we could do that too.
4:33
- [Theresa] Or we could just put them in?
4:34
'Cause I know you're dying to.
4:37
- Or I could put no nuts at all.
4:40
All right, now I'm using a spray,
4:42
a non-stick spray that has flour in it.
4:44
So I wanna make sure that this bread
4:47
does not stick to the pan.
5:00
I don't think that stuff can be good for our lungs.
5:05
Oh, okay, so here we go.
5:14
And I'm cooking this in a nine-by-five loaf pan, y'all.
5:29
I always tell people, you know, when you're making a recipe,
5:33
go right by the recipe the first time you make it.
5:36
And I'm just now fixing to eat my own words.
5:39
So I've decided I am gonna make the recipe
5:42
just as my friend sent it to me.
5:49
In the oven, I believe she said 350
5:56
for some kind of minutes.
6:02
- [Theresa] It's like 45.
6:03
- Yeah, I think it is too.
6:06
So I took our banana bread out of the pan
6:14
and it came out beautifully.
6:15
You know, I sprayed it real good.
6:26
Now I'm gonna stick a piece of parchment paper
6:30
under that rack so I won't make a big mess
6:36
when I put the glaze on it.
6:41
Let's see if I can do it that way.
6:43
I think I can. I think I can.
6:44
With Eddie's help, I know I can.
6:47
Okay, thank you Eddie.
6:49
Perfect. Perfect, perfect.
6:52
All right, now to make our glaze,
6:54
I'm gonna first add our butter
6:58
and then I'm going to add brown sugar.
7:00
And then I'm going to add a little heavy cream.
7:04
And I think that's it, isn't it?
7:07
Butter, brown sugar, confectioner sugar,
7:13
and like one or two teaspoons of heavy cream if we need it.
7:27
This is pretty much...
7:34
Pretty much very easy to do.
7:41
I'm gonna go ahead and add our brown sugar.
7:45
And I wanna stir this until our brown sugar dissolves.
7:54
I wanna make sure that don't burn it first though.
7:57
Okie dokie, now we're gonna need a half a teaspoon
8:04
Which, you know, kosher salt is more powerful
8:11
So that's where the salted caramel comes in.
8:22
And I hope this is good.
8:23
My girlfriend told me it was real good, so we shall see.
8:39
Okay, so definitely gonna have to add a little
8:51
But it won't take much.
9:07
It's hot. Hear it sizzling?
9:11
All right, now our instructions say to let this cool
9:14
for five minutes before we put it on our banana bread.
9:20
Has it been five minutes yet?
9:23
- [Theresa] I vote yes.
9:36
This does make for a different kind of banana bread,
9:44
And then I'm just gonna put nuts on part of it.
9:49
So if somebody has a piece that doesn't want nuts,
9:53
all they have to do is cut from the other end.
9:58
But if you feel like a nut, you got it, right?
10:11
This one piece got little hard.
10:14
Yeah, I could have added a little bit more cream.
10:18
That's all right. I did what the recipe said.
10:26
Okie doke. Bon appetit, y'all.
10:34
I'll put a little more nuts on mine.
10:35
Come on, Theresa. Get in there and get you.
10:49
- [Theresa] Girlfriend did you well.
10:52
- Winner, winner, chicken dinner.
10:57
And I like the salty, soft, salty of the caramel.
11:12
Thank you Elaine for sharing that recipe with me.
