0:00
- All right, hey, everybody.
0:01
I've got with me Aunt Peggy and Father John Lyons,
0:04
and Ed, of course, is behind the camera,
0:06
and then Theresa is here
0:07
and we are making some wonderful dishes here
0:10
and this one is my recipe.
0:14
This was from mama's table to mine.
0:17
I had one book that went to number one
0:19
on the New York Times bestseller list
0:20
and it was when I was doing a show called,
0:23
"Not My Mama's Meals."
0:25
"From Mama's Table to Mine" was the book,
0:28
and it was chock full of really good,
0:29
really just simple, honest recipes,
0:32
and this one is no different.
0:34
There's nothing here that's gonna blow your hair back,
0:36
but it's few ingredients,
0:37
it's low in fat and calories,
0:39
and it's really simple to put it together,
0:41
and it's got really good, real protein in it.
0:44
It's gonna be a salsa chicken salad.
0:47
So, as you can see in front of me, I've got a jar of salsa.
0:50
This is not sour cream, this is Greek yogurt, okay?
0:53
Cheddar cheese and this is a magic ingredient right here.
0:58
This is a buttermilk dressing mix, the powder mix,
1:01
and it's something that you can use, or I do use,
1:04
whenever I'm doing a crockpot roast or something like that,
1:07
I always put a package on top of my roast with onions
1:11
and butter and stuff like that,
1:12
but anyhow, it adds a lot of pop and flavor.
1:16
So, I started out with, I think this was five,
1:19
I've been cutting chicken for quite a while here.
1:20
I think this was five or six,
1:23
probably eight-ounce chicken breasts,
1:25
nice and thick chicken breast.
1:26
Now, this'll be however you'd like to prepare them,
1:28
so you can get however you would like to prepare them.
1:32
I do a lot of stuff in the air fryer.
1:34
These are simply seasoned with a,
1:39
Theresa, you did these in the air fryer earlier,
1:41
and what is it, salt and pepper
1:42
or did you do some sort of an herb?
1:43
- [Thersa] Just a house seasoning.
1:44
- Just a house seasoning on 'em.
1:45
But, if you wanted to get fancy
1:47
and do like a fish sauce with honey and toasted almond,
1:49
you could do whatever you like.
1:51
The seasoning of the chicken breast and the cooking process
1:54
is not the important part here.
1:55
The important part is that this is a really simple,
1:58
easily put together sort of dump and stir dish
2:01
that everybody's gonna like
2:03
and when you see the presentation of it,
2:05
it's gonna be really light, but it's gonna be satisfying.
2:08
So, it's gonna be, well, I'm not gonna give it away yet.
2:13
We'll go ahead and cut up our chicken breast.
2:14
So, I'm not exactly dicing it,
2:16
I'm just cutting it into sort of rustic chunk,
2:21
but, you know, chunks here,
2:24
and trying to keep 'em somewhat similar in size.
2:30
I'm going to start with my Greek yogurt.
2:32
This is a pint of Greek yogurt,
2:34
which I use a lot at my house
2:36
and for a long time I've been touting the benefits
2:39
of Greek yogurt and how much I like it
2:40
and the reason that I like it so much
2:42
is because I love sour cream.
2:45
Because I grew up with sour cream in our house.
2:47
We ate it on baked potatoes, we ate it on,
2:49
gosh, anything we could put it on.
2:51
I mean, from nachos to tacos to some salads.
3:00
Yeah, sour cream was just a staple in our house
3:03
and I like it, but I've replaced it with Greek yogurt.
3:06
My children don't know any differently yet.
3:09
If you add a little salt to it,
3:12
you can make it sour cream-like
3:16
but but an added benefit.
3:19
- Beef stroganoff. - Beef stroganoff.
3:21
Well, yeah, yeah, now you're talking.
3:22
Who are you? Paula Deen or something?
3:23
(Paula Deen laughing) - No.
3:26
- But, you also have the benefit
3:29
of having the Greek yogurt in your refrigerator
3:30
and if you like fruits and fruit salads
3:32
and things like that, I will often just cut up fresh fruit
3:37
and just a big bowl of Greek yogurt
3:39
with a little honey or whatever it may be
3:41
and just toss it together with some like chopped walnuts
3:44
or something like that
3:45
and it makes for a really hearty little stack.
3:47
Plus you get, you know, you can get them with cultures,
3:52
there's a lot of protein,
3:53
you can get 'em with a lot of fat,
3:55
a little fat, however you like it.
3:57
So, anyhow, Greek yogurt,
3:58
to me is a little bit more versatile.
3:59
This is a kind of a magic ingredient, I love it,
4:03
and that is the, well, I think I already talked about that,
4:06
but it's a buttermilk dressing powder.
4:10
I'm gonna add that to the Greek yogurt,
4:15
get it mixed in nicely
4:17
and we will add our salsa.
4:27
So, your salsa choice is gonna be, you know, your choice,
4:30
if you like hot and spicy,
4:32
or if your family does, then have at it.
4:37
I would go with a more mild, for me, salsa.
4:43
And you can see that's already beginning into,
4:45
you're changing your mind.
4:46
See, you were thinking,
4:47
you were thinking, "I don't like this,
4:49
"this is not gonna be good."
4:50
Yeah, but you're changing your mind now
4:51
because you see what this looks like.
4:54
That Greek yogurt is gonna be lent a big hand.
4:57
Now if you wanted to add some Chipotle peppers or gosh,
5:02
I mean, anything, then you certainly could.
5:05
But we're gonna go right by my recipe because it's a winner.
5:11
So, we'll get those two things mixed together.
5:16
So, this is gonna thicken it up.
5:17
You see, it looks a little thin right now,
5:21
but we're gonna thicken it up
5:22
and gosh, this is one of my favorite things.
5:24
They add almost no flavor,
5:26
but that wonderful little crunch
5:29
that it's hard to put your finger on sometimes.
5:32
It's like, "What is that?"
5:33
It's a water chestnut and they're really, really great
5:36
and they add to this recipe quite a lot.
5:40
Needs a little bit of salt.
5:48
Greek yogurt is really good,
5:49
but it's kind of a blank palette.
5:58
Greek yogurt, salsa, water chestnuts,
6:00
a little salt and pepper,
6:04
a packet of dry ranch dressing,
6:09
my chicken breasts and it looks really nice.
6:11
I'm gonna wash my hands, I'm gonna get some lettuce
6:13
and we are going to, to finish this recipe out.
6:16
So, we'll take one quick break and be right back.
6:19
So, our salsa chicken salad,
6:26
I let it sit in the refrigerator for about 30 minutes
6:29
to sort of cool and come together
6:32
and we're making lettuce wraps.
6:36
I like to do, you know what,
6:38
for a little while I was doing my burgers like this too.
6:41
I would make hamburgers and I would make the buns lettuce,
6:48
just trying to be inventive.
6:51
And, gosh, I really liked it.
6:54
So, anyhow, just a really simple lettuce boat.
7:03
We'll make sure the boat is full
7:06
and look how nice that looks.
7:08
Now if you wanted to put a little,
7:10
no, I wouldn't add anything to that at all,
7:12
what am I talking about?
7:13
Eddie was just saying this would be good on like nachos.
7:16
If you were to dice the chicken a little finer,
7:22
you could put it on nachos.
7:23
And I thought, "Ooo, that's a good idea."
7:29
So, voila, lettuce wraps.
7:31
So, you got a lot of protein, nice and light.
7:35
Few ingredients and a lot of greenery.
7:45
You may clap. (laughing)
7:48
Everybody's ignoring me.
7:51
They look very, very good
7:52
and I think, thank you Father John
7:54
and thank you Aunt Peggy
7:56
and I think they're gonna be quite tasty
7:58
and I think my guests are ready to eat.
8:01
So, until next time, bon appetit.
