- Hey everybody, it's Bobby
0:01
and I'm here with another great recipe for you today.
0:04
Look, I love salads. That's no secret.
0:06
People who know me know that.
0:08
And when I say salad, you might just go,
0:13
There's all different types of salads
0:15
and what I really like are some
0:17
specific flavors, tastes and root vegetables.
0:20
And today we're gonna start with beets.
0:21
This is a great salad.
0:23
It's super simple and I think that you're gonna like it.
0:25
Okay, 'tis the season for root vegetables.
0:30
You can find beets in your local grocery store
0:32
in the produce, but if you'd like, you can do
0:34
what I'm doing, which is to use some canned beets today.
0:36
I've drained them, they've been sitting here
0:38
for a few minutes, and they're nice and dry.
0:41
I'm gonna put them in the oven on broil
0:44
for just a few minutes and I'm gonna turn 'em.
0:47
I'm gonna check 'em and turn 'em,
0:48
make sure I don't burn 'em,
0:49
'cause you know that these beets will burn.
0:51
I've sprayed down my pan to make sure that they don't stick.
0:57
And the first step, super simple,
0:59
put your drained beets on the pan,
1:01
stick 'em in the oven on broil,
1:05
and check on 'em every two to three minutes.
1:06
So let's go ahead and put them in the oven
1:08
and then we'll come right back.
1:10
Our roast beet salad is gonna be really, really good.
1:14
And it might look like sort of Ed just said,
1:17
that looks like a one-person salad.
1:19
Well, the reason for that is because I cut recipe in half.
1:22
So, but anyhow, I told you these
1:23
were some of my favorite flavors,
1:25
but I didn't tell you what they were.
1:26
So let's go over 'em.
1:27
The beets, love 'em. One of my favorite things.
1:30
Olives, give me more.
1:32
I can eat the whole jar and drink all of the juice.
1:34
And I used to do that as a kid.
1:36
Feta cheese, love it.
1:37
Little rice wine vinegar, olive oil,
1:39
little hot sauce, garlic powder,
1:43
So our beets, we roasted,
1:45
or excuse me, our beets, we broiled
1:49
for just a few minutes in the oven.
1:51
Give 'em a little color, cook 'em a little bit.
1:54
I put them on a greased pan
1:58
to make sure that they didn't stick.
2:01
So I'm gonna go ahead and toss them into the bowl.
2:04
Let's quit goofing around and just do it.
2:09
Embrace beets! If you don't like 'em, try 'em again.
2:13
They're really good and they're really good for you.
2:16
And this might be a great way to introduce others
2:23
So our olives, we'll start with our big chunky stuff here.
2:30
Little rice wine vinegar.
2:37
(measuring cup clinking)
2:38
The hot sauce, a dash if you like.
2:40
If you don't like hot sauce, you could always
2:43
add it later (measuring cup clinking)
2:48
The dill is a little bit big,
2:52
so I'm gonna give it just a quick little cut
3:02
on the smallest cutting board that we got.
3:07
I don't know about you, but I really like dill.
3:11
And the smell of it once you take a knife to it,
3:13
oh, it just really opens up.
3:16
I like dill on my salmon too.
3:20
Salmon with lemon, dill, Dijon.
3:26
Okay, I'm gonna mix this and sort of just fold it together.
3:29
I don't want to tear it up.
3:31
Look how just so quickly that became beautiful.
3:34
Once the liquid hit everything,
3:37
you get the shine on the beets.
3:41
Beets, feta, olives, dill, wonderful flavors together.
3:47
Little bit of garlic powder.
3:49
Just a little, not a whole lot.
3:54
Just enough to know it's there.
3:57
And the hot sauce I'm gonna save off to the side.
4:01
And if we feel that we need it, we will.
4:06
That is so beautiful. (bowl clunking)
4:07
The beets add an amazing color
4:09
and I don't have a plate to put it on.
4:13
Why don't we take a break and we'll come right back.
4:17
We've got all of our ingredients combined.
4:20
And again, this looks like a small amount
4:22
because I cut the recipe in half.
4:24
So I could easily eat this by myself,
4:34
Beautiful, wonderful aroma coming from that salad.
4:39
It's a step above just a regular salad.
4:41
So if you've got some friends coming over
4:43
and you, you know, want to make a nice meal
4:47
and do something a little bit different
4:49
for them as their starter,
4:52
this roasted beet salad would really do the trick.
4:55
It's beautiful. I'm sure it's flavorful.
5:08
A sophisticated little salad.
5:09
It's a step above just lettuce and cucumbers
5:12
and tomatoes and what have you.
5:13
So for your next party or gathering,
5:16
make a roasted beet salad with feta cheese, olives,
5:20
little dill, rice wine vinegar, and olive oil,
5:22
little salt and pepper to taste,
5:23
and a dash of hot sauce if you like,
5:27
and I think that you'll be really pleased.
5:28
So till next time, bon appetit.
