0:00
- Y'all, I've got another dish to prepare,
0:03
and Michael and our friends Wendy and Robert,
0:05
they're all sitting at the table,
0:07
eating baked spaghetti casserole.
0:10
So you'll hear them in the background,
0:13
but I think they'll be happy
0:15
that I'm over here in the kitchen making this,
0:16
because it's an easy, breezy crab stew.
0:21
I can say that the last few videos I've done,
0:23
it's been all about taste and easy.
0:28
So this one is really good
0:31
if you're looking for a quick crab stew.
0:33
Now, the first thing I'm gonna do is melt my butter.
0:36
Y'all continue to talk.
0:37
Y'all talk amongst yourselves. (laughs)
0:39
- [Wendy] Did you say crab?
0:40
- And I'm gonna listen!
0:42
(Paula laughs) - Oh, okay, great.
0:47
- Just remember, language, Mikey, language. (laughs)
0:53
When my butter melts, I'm gonna saute these onions
0:56
for probably three or four minutes,
0:59
just until they become translucent, kinda clear.
1:06
I've put this on the smallest eye on the stove.
1:10
I don't know why I did that.
1:13
All right, it's melted enough
1:15
that I can go ahead and start the process
1:18
of cooking those onions off.
1:23
And I've got my crab meat.
1:25
This is a lot of crab meat.
1:29
(clears throat) Now, if you use lump crab,
1:37
it's gonna be so, so, so expensive.
1:40
So, quite often, I will mix the claw and the lump together.
1:47
Easy, easy crab stew!
1:49
All right, it calls for two cans of soup,
1:53
one is a cream of potato,
1:55
and the other one is cream of celery, I believe it is.
1:58
Yeah, cream of celery.
2:01
Because normally, if you were making crab stew,
2:04
you would be sauteing onions and celery together,
2:09
So we gonna get our flavor from our soup.
2:19
Okay, and this is cream of celery.
2:29
I mean, this is one of those five-minute dishes.
2:33
Unless you have caught your crabs in the crab trap.
2:39
It would take Michael hours and hours
2:44
to get out this much crab meat.
2:46
I mean, hours. (taps spatula)
2:49
And he knows how to pick some crabs, he can do it fast,
2:52
but it's very labor-intense.
2:55
So fun to catch 'em, but labor-intense.
2:58
All right, so I'm gonna add a soup can of half-and-half.
3:12
I'll finish off with a little heavy cream.
3:16
Don't need but two tablespoons.
3:25
All right, let's see.
3:26
We're gonna need a little salt and pepper.
3:34
There may be some chillun watchin' us.
3:49
And now, I'm gonna use a can full of milk.
4:16
Now, you want to get this hot.
4:18
You want it to just come to a boil.
4:28
And you'll wanna pick through your crab meat,
4:31
and make sure that you've removed
4:33
all the pieces of the shell.
4:37
And an easy, easy way to do this
4:39
is to spread it out on a cookie sheet
4:42
and put it in the oven for just a couple of minutes,
4:45
and if it's got any shells on it,
4:47
they'll turn bright pink, a bright coral color.
4:51
So you can just pluck 'em out that way. Makes it real easy.
4:57
Our crab stew is basically ready.
5:00
All I have to do is add the crab and the sherry.
5:05
And you can add your sherry to your pot,
5:09
or you can put this in a little pitcher
5:11
and let people pour it on top of their stew.
5:15
Whatever you wanna do, however you wanna do that.
5:19
So, how about if I just do a little sherry,
5:22
and leave some for those that want more?
5:33
I've gotten a messy...
5:38
Gotten a messy spoon.
5:40
Okay, so, I'm gonna fold in our crab.
5:47
And you wanna do this rather gently,
5:56
'cause I don't like to break up my crab very much.
6:00
(pepper mill whirs) It's amazing, the flavors
6:02
that you get out of those two cans of soup.
6:05
Gives it all the flavor you need.
6:11
So you can make this dish as easy as you want to
6:14
or as hard as you want to.
6:21
So today, I'm picking the easy way.
6:24
'Cause you know what?
6:26
I wanna join Michael and my friends over there.
6:29
I wanna hear what they're talkin' about! (laughs)
6:32
'Cause I'm nosy that way.
6:37
All right, 'cause I wanna get this pipin' hot,
6:41
and I'm just funny that way.
6:48
All right, now where's the hot sauce? There it is.
6:53
I like my cold food cold,
6:56
and I like my hot food hot.
6:59
Now, I'm just gonna top this with a little Parmesan cheese.
7:15
And I think this is ready to serve!
7:21
Hope I got it hot enough. I think I did.
7:24
(silverware clatters)
7:30
So I got three guinea pigs! (laughs)
7:36
All right, guinea pigs!
7:41
I hope I got it hot enough.
7:46
Pass that to Miss Wendy, please.
7:51
Pass that to Miss Wendy.
7:54
Looks really good. - And hot sauce.
7:57
- [Michael] Do you have any other type of-
7:59
- You better shut up, man,
8:01
before I pop you! (Michael chuckles)
8:05
You know Paula Deen is the best hot sauce in town!
8:09
All right, who wants more sherry?
8:12
Because I didn't put all the sherry...
8:17
I didn't put all the sherry in,
8:19
so you can always add more if you like it.
8:25
- That's good. - I like that.
8:27
- Thank you. Five-minute crab stew, Robert.
8:31
Can't beat it, honey! (laughs)
8:34
