0:03
I got a question for you.
0:07
How many of y'all out there
0:09
are kinda glad all the holidays are behind us?
0:16
I got two out of four.
0:19
So I'm gonna join the majority.
0:22
Aunt Peggy's the only one that didn't raise her hand,
0:25
so I guess she's sad.
0:26
- [Aunt Peggy] But I'm waving it.
0:27
- Oh, she did wave it.
0:29
- [Theresa] She's got both hands up.
0:31
- I know, she's extra glad the holidays are over.
0:35
It's so much fun for them to come
0:39
and it's kind of fun for it go to,
0:43
'cause you can only celebrate so long, so much.
0:49
And speaking of celebrating, Jamie asked me the other day.
0:52
He said, Mama, I'm doing some.
0:57
- Eddie had a. - [Eddie] A malfunction.
1:00
- A malfunction, yeah.
1:01
It still works though, doesn't it?
1:02
- [Eddie] Yeah. - It's still working.
1:05
So Jamie asked me the other day, he said, Mama,
1:07
would you help expand the videos that I've done?
1:11
'Cause they're easy, easy, easy and for children,
1:15
things for children to do.
1:17
And I said, absolutely, Son, I would love to.
1:28
Two children's cookbooks
1:32
because there's wonderful recipes in here.
1:35
And I would be willing to bet
1:38
that there's some children out there that got one
1:40
of these books, maybe for Christmas.
1:44
One's yellow and one's red.
1:50
So you can tell I was younger in that picture.
1:56
But they're great little cookbooks.
1:58
Anyway, so I told Jamie, yes, I'd be happy to, Sonny Boy.
2:02
So I'm gonna make peanut butter oatmeal muffins.
2:07
And I meet so many children, y'all,
2:10
especially at my book signings,
2:12
that love to get in the kitchen with their mama and cook.
2:18
And I think that's wonderful
2:20
because the kitchen is a great place to bond.
2:24
And just getting to talking.
2:28
All right, so I've got two eggs that I've just beat.
2:33
Half a cup of peanut butter with nuts.
2:37
Now you can use plain or those with peanuts,
2:43
but for the muffins, I think the nuts
2:46
just add a little bit to it.
2:50
So I'm gonna have to mix this peanut butter up real good
2:56
and I think it's gonna work better with a fork
3:01
than a spoon or a whisk right now.
3:08
There we go, we getting it, we getting it.
3:11
But we still got to add some more liquid
3:15
and we are gonna add one cup of buttermilk.
3:20
And we won't tell the kids it's got buttermilk in it.
3:22
We won't let them see the carton
3:24
that we're measuring out the milk.
3:28
'Cause they might not, they might go, yuck.
3:32
And we don't want 'em going, yuck.
3:41
So that's two eggs, half a cup of peanut butter
3:47
with peanuts, and one cup of buttermilk.
3:51
So that is our wet ingredients.
4:02
So now I'm gonna go to the whisk
4:05
and see if I can get it incorporated just a wee bit better.
4:14
Okay, let's get these outta the way.
4:18
Those are our dirties.
4:22
We wanna be sure when we're teaching our children to cook
4:29
because it's a very good habit to get into,
4:32
is clean as we go 'cause it makes it so much easier.
4:37
All right, now I'm gonna put our dry ingredients together.
4:41
And that's all purpose flour, quick-cooking oatmeal.
4:55
And a little baking powder
4:57
since we're using all-purpose flour,
5:02
we've gotta have something to make 'em rise up.
5:07
And then one cup of a packed light brown sugar.
5:16
Or if you got dark brown sugar, that'll work too.
5:23
All right, I got my bowls mixed up.
5:27
I was supposed to do the flour in this one.
5:34
Because this ain't gonna work, Paula.
5:38
All right, so I'm gonna have to go get a bigger bowl.
5:43
All right, so we gonna kind of make a little well
5:50
And now we're just gonna pour our wet ingredients in there.
5:59
We're gonna take our spatula
6:01
and make sure we get all the goodies out of it.
6:14
I think I'm gonna go back to my fork for this.
6:18
We just wanna mix it just enough to make sure
6:22
that there's no dry ingredients
6:26
that didn't get incorporated.
6:30
There we go, we're about to get rid of
6:32
all the dry ingredients.
6:42
Saw one more little piece, but we got him.
6:46
All right, so we are going to use a third of a cup,
6:52
measuring cup, to fill up our muffin tins with.
6:59
- [Theresa] Paula, what do we need to preheat oven to?
7:01
- Oh gosh, that would help, wouldn't it?
7:08
Let me make sure I'm right.
7:15
Don't over mix, it says, I know that.
7:21
I don't think I told them.
7:24
- [Theresa] 375. - Thank you.
7:27
Y'all know I have a little seeing eye problem, right?
7:32
So these are going to be full muffins.
7:36
They're gonna be big.
7:40
Because I have a feeling
7:43
that these could wind up in some lunch boxes.
7:48
But the one thing about this recipe
7:54
is it's really fairly good for your children,
7:58
even though it has a little sugar in it.
8:02
But it can be eaten at breakfast.
8:08
Or an afterschool snack.
8:20
Uh oh, look, there was some dry that I missed.
8:24
I'll stir that back in.
8:26
But like I said, you don't wanna over mix.
8:30
The less you do to like blueberry muffins, oatmeal,
8:34
peanut butter muffins.
8:36
You just wanna handle it as little as you can.
8:42
Okay, my friends, we have preheated our oven to 375 degrees
8:48
and I told y'all that it makes 12 muffins.
8:53
Well, I think I have had that third of a cup measure
9:02
So since I have an empty spot,
9:06
I'm gonna just pour a little water in there
9:09
and that will keep the muffin tin from burning
9:12
or getting some yuck stuff on it.
9:18
So I think this is like 18 to 20 minutes, y'all,
9:23
So before you know it, we'll be eating muffins.
9:27
Our muffins smell and look delicious.
9:32
I've let 'em cool a little bit so I can manhandle it.
9:45
Perfect, perfect, perfect.
9:52
I can't remember, did this have any butter in it?
9:55
- [Eddie] Peanut butter.
9:56
- [Theresa] It doesn't.
10:01
- [Theresa] Shocker.
10:05
As good as I remember it.
10:07
Don't go anywhere, Aunt Peggy.
10:08
I wanna fix you a muffin.
10:10
- [Aunt Peggy] I'm moving.
10:13
- [Aunt Peggy] I'm not going anywhere.
10:15
- You're moving, but you're not going anywhere.
10:19
So try these and see how your children like 'em.
10:24
Personally, I bet they're delicious.
10:28
