0:01
I'm getting ready to fix supper for Michael and Aunt Peggy
0:06
and I'm going to do some black pepper shrimp
0:09
for their dinner tonight.
0:11
You know, I have people all the time asking me,
0:14
"What seasonings do you use?
0:17
So this is strictly a tutorial
0:21
to share with y'all my favorite seasonings.
0:25
And since I've got my shrimp,
0:27
this will be the one thing that I will be putting on 'em,
0:30
is lemon pepper and I'm not associated
0:34
with any of these people as far as brands or anything.
0:37
- [Eddie] Some of them you are.
0:39
I see your face on 'em. - Some of 'em, yes.
0:42
But this will definitely go onto my shrimp
0:48
and it does have salt in it,
0:50
so you'll need to be careful.
0:53
Okay, so I'm just gonna go down the line.
0:55
This (bottle thudding)
0:59
is my Paula Dean Steak Seasoning.
1:01
If you're gonna cook a steak out on the grill,
1:05
or even if you're just roasting, you know,
1:08
cooking a chuck roast in the oven
1:11
or in the on the stove in a pot.
1:15
This is Italian seasoning.
1:17
I could not do without my Italian Seasoning.
1:22
It saves me from thinking about,
1:25
well, did I put the rosemary,
1:26
did I put the basil, did I put the thyme?
1:31
And my meatballs would not be the same without this.
1:37
All right, help me keep it straight, Eddie.
1:39
And this, (bottle thudding)
1:42
this is a Blackening Seasoning.
1:46
It happen to have my face on it. (laughing)
1:49
- That's Michael's favorite. - Yes,
1:51
this is Michael's favorite.
1:52
He loves it on chicken or fish,
1:55
you know, it just gives it that kick.
1:56
But if Michael's got a choice of blackening,
1:59
he will choose that every time.
2:04
this (bottle thudding) is my House Seasoning
2:09
and people fell in love with this years ago.
2:12
We used to make this up in a five gallon bucket
2:16
for our kitchen because it went in everything we made
2:20
except the banana pudding, the cobbler
2:22
and the gooey butter cakes.
2:24
We don't put it in that.
2:26
So this is a mixture of salt, pepper,
2:31
onion powder and garlic powder.
2:33
So, it'll take anything
2:37
(clapping) that you want it on.
2:40
And this is Garlic Powder.
2:43
I use a lot of garlic powder.
2:46
Sometimes I don't want to go the trouble
2:49
of chomping up or crushing fresh garlic
2:52
and this works out very, very well for me.
2:56
And this is another one.
2:58
All right, no, this is Garlic Salt.
3:05
like last night I made french bread
3:08
and I buttered it real good
3:10
and I sprinkled it with garlic salt
3:13
because I like the salty taste with the bread.
3:17
Don't use the garlic powder, the garlic salt on that.
3:22
Okay, this next one is another one of my favorites
3:25
and the House Seasoning and the Silly Salt,
3:30
they jump off the shelves in our store.
3:32
- That's the one that I use. - This is the one you use?
3:36
- [Eddie] That's what I use on everything.
3:39
So, Eddie can tell y'all all about this one.
3:43
I especially, I know Eddie uses it on everything,
3:46
whether he's cooking hot or cold,
3:49
but I love this one in my potato salad,
3:52
my shrimp salad, my egg salad, my tuna salad.
3:56
I especially love it in cold things.
3:59
What is your favorite way to use this, Eddie?
4:02
- [Eddie] Well, I use it on, if I'm doing salmon,
4:06
You know, it has a little bit of thyme in it
4:10
and the flavor is really, really good.
4:12
- Now, you made you- - We had lamb.
4:16
- Gus and Max, lamb that night.
4:18
- [Eddie] Yeah, we got lamb and potatoes.
4:19
- Did you put it on the lamb? - We sure did.
4:22
And Eddie's a good cook, y'all.
4:25
All right, couldn't do without this one
4:28
and that's onion powder
4:31
because there's some people in my life
4:34
that don't like onions.
4:37
But it is mainly, mostly my children
4:40
and grandchildren, more my grandchildren.
4:44
But this gives me the flavor of onion
4:47
without them being able to see it.
4:50
So the potato salad that I made a couple of days ago,
4:53
this is definitely in it.
4:56
All right, let's see what this one is.
4:58
Oh, this is my boy's,
5:01
this is Jamie and Bobby's seasonings.
5:06
These three that I like so much.
5:09
This is a Funky Chicken Seasoning
5:15
This is one formulated for them and that's real good
5:21
and this one is five seasonings in one.
5:28
"If you ask us, there's a fifth season in the year.
5:31
"Grilling season, which last all 12 months,
5:36
"we salt garlic in a blend of spices.
5:39
"You'll use this seasoning salt all five seasonings."
5:45
So this is really, really good.
5:48
And you can see it's a hardy, it's a hardy seasoning.
5:59
You can see it's got substance to it.
6:09
So I talked about their Five Seasons.
6:15
Oh, I don't think I've told y'all about this one yet.
6:18
I got the Funky Chicken and got this.
6:21
I love this seasoning on my fish
6:25
and it's called Hook, Line and Sinker.
6:30
It is so, so good on fish.
6:39
And this one has substance to it also.
6:49
In fact, that one just put that right down on the shrimp.
6:53
I'm not gonna waste it.
6:59
(Paula laughing) Wait.
7:02
I swallowed some chunks, y'all.
7:07
And this one, this is right up there at the top to me
7:12
and this is a Jack of All Spices.
7:16
- [Eddie] Some of my family members love that.
7:20
I can't remember when I put it on the other night.
7:23
But it took it to another level.
7:26
And again, this is Jamie and Bobby's seasoning.
7:39
"This versatile," this is what the boys said.
7:42
"This versatile seasoning is one of the only flavor helpers
7:48
"you really need, with salt, sugar, onion, garlic,
7:52
"paprika and turmeric.
7:54
"You'll get a full flavor profile
7:57
"from just one seasoning."
8:00
All right, so the thing that I will be sprinkling
8:03
on a Michael's shrimp tonight is this.
8:09
And I could make my own shrimp ball,
8:14
but I really, really like this one.
8:18
So that's what I use.
8:19
This goes in every low country ball I cook
8:23
and it's got a little bit of heat,
8:25
but not like some of those shrimp balls
8:29
that you can get that are almost incredibly hot.
8:36
I've just been thinking since I get asked so much,
8:41
oh, I've got one more left
8:44
and girls and guys, you new cooks,
8:47
and you're trying to prove your worth on some gravy,
8:55
this is a little trick that you can use.
9:01
You know, you have to learn,
9:02
after I fried chicken in this,
9:06
I will drain that grease
9:08
and all the stuff in the bottom
9:10
plus a couple of tablespoons of oil,
9:12
I will leave in there and I'll add my flour
9:16
and my salt and pepper and I will slowly
9:20
get that to a rich color.
9:23
But just in case I'm in a hurry
9:25
and I don't have time to get to that rich color,
9:30
you put about two or three drops of this Gravy Master
9:34
and it'll bring it up to that dark, rich,
9:37
warm brown color you want for your gravy.
9:42
And that's the secret.
9:43
That's just between you and me.
9:46
Love and best dishes, y'all.
