0:00
- I am so happy to share this recipe with y'all
0:04
because it was shared to me
0:10
Susan is a very high-end
0:15
caterer here in Savannah,
0:17
and I would say nine out of 10 hootie-tootie things,
0:22
she probably does 'em, doesn't she, Eddie?
0:25
- [Eddie] Oh, yeah. - Yeah.
0:26
I mean, she's got a great staff.
0:29
She's got a great product.
0:31
You know, you can always expect a roasted
0:40
and two or three different kinds of seafood.
0:43
I love it when she does the fried oysters on the spoon,
0:47
with some kinda little sauce dropped on it.
0:52
It's been a long time since I've had that one.
0:54
But she's very well respected
0:58
in the food industry here in Savannah,
1:01
and I'm happy to call her my friend.
1:04
In fact, she did a show with me.
1:06
So if you wanna go back into the archives
1:12
just look up Susan Mason
1:14
with Paula Dean, something like that.
1:17
But anyway, she has these at almost every function she does
1:22
because they are that loved.
1:25
And she also shared this in one of her cookbooks
1:31
but I can't remember which book.
1:36
So simple, y'all and tastes so great.
1:39
So what she does is she takes a loaf of white bread,
1:49
round circles of dough
1:52
outta one slice of the bread,
1:55
and she uses a 2 1/8 inch biscuit cutter.
2:00
All right, so up here we have mayonnaise,
2:03
we have fresh grated Parmesan cheese,
2:06
we have onion rings, and we have mustard.
2:11
That's it on the ingredients.
2:13
Now, she tells us to put these under the broiler,
2:17
and she says, her words exactly,
2:20
"Broil until golden, about one minute,
2:23
but don't ever take your eyes off these.
2:26
The times vary with different ovens."
2:30
And she recommends working in batches of 24.
2:34
And she said the idea is to serve one batch hot
2:38
while the next is cooking.
2:41
So yeah, those are constantly coming out hot.
2:45
(baking tray scraping)
2:46
I'm gonna put these in our broiler,
2:50
and you better believe
2:51
I'm not gonna turn my back on them,
2:54
because when you're broiling stuff,
2:59
and this one is set up high
3:03
because look, see how quick?
3:06
Look, that's how quick.
3:08
These didn't even last a minute (laughing),
3:16
So we're gonna turn these over
3:27
and they get a little thin layer of mustard.
3:33
And I'm thinking it might be safer
3:36
to brush mustard on rather than squeezing outta the top.
3:57
Kari Harris could eat her weight in these.
4:02
First time she was at a party that Susan catered,
4:08
Kari came home and she said,
4:09
"You have got to find out what Susan Mason
4:12
was serving as an appetizer."
4:14
She said they were the best things.
4:16
I don't know how many I ate of 'em.
4:23
Now I'm gonna take my mayonnaise
4:33
and my Parmesan cheese
4:37
and I'm gonna mix that together.
4:49
Just right by itself.
4:55
Now on top of our mustard,
4:59
I'm gonna place a very,
5:03
very thinly sliced onion
5:10
on the center of each one of these.
5:17
pick up that round again.
5:25
You don't wanna put too, too much.
5:30
Let's see what she says.
5:34
"About one teaspoon of the mayonnaise mixture
5:38
spreading it across the onion and the bread."
5:48
I'm gonna stick a little bit more.
5:50
I love the onion on it.
5:59
I just wanna make sure that top is covered.
6:03
All right, so here we go.
6:10
broil these for one minute.
6:12
Let's see, what did she say about,
6:13
"Toast the bread on one side until they get golden brown."
6:17
So she was talking about this step
6:19
of not taking your eyes off of 'em,
6:28
they're gonna get brown real quick
6:38
Gonna go in and fill that up.
6:47
so now that that pot is out of there,
6:52
I need to be wearing my no-butt-shot-Eddie apron.
7:05
I've got to get me a...
7:07
Well, I was thinking more of the cutting board.
7:13
So they all lay flat.
7:16
- [Woman off screen] This one?
7:17
- Anyone of 'em that'll hold these, it don't matter.
7:22
(cutting board blanking)
7:23
Look at those, y'all.
7:27
And they will eat these
7:29
like a bunch of starving children eating cotton candy.
7:35
(spatula scraping baking pan)
7:38
And I so appreciate you sharing this recipe
7:39
with me and everybody else, Susan,
7:44
because it's one of those wonderful simple things
7:56
is just standing over that broiler,
7:59
and you know to broil with your oven door cracked.
8:05
That's why they make those ovens
8:10
so that the door will stay open
8:13
because that's to be used when you're broiling.
8:17
(baking pan crashing on stove top)
8:18
Otherwise, it's gonna get so hot.
8:21
(oven door slams closed)
8:24
(cutting board scraping)
8:25
Ooh, I wish y'all were here.
8:29
Eeny, meeny, miny, moe.
8:32
That one looks awfully good.
8:33
I think I got a little bit more stuff on it
8:35
than I did on some of the others.
8:37
I might have been skimpy with my mayonnaise stuff
8:41
which would be very unusual for me.
8:56
They needed to cut off just a little bit.
9:01
But that mustard, and mayonnaise and cheese
9:05
along with that onion is so very good.
9:15
So loving best dishes y'all from me and Susan Mason.
