0:00
- (laughs) Hey, y'all.
0:01
(laughs) My tickle box is turned over
0:05
because I was chopping this garlic
0:07
and Eddie was just sitting there looking at me.
0:09
I said, "You wanna film this, Eddie?"
0:12
He said, "No, I think I'm just gonna sit here
0:14
and watch today." (laughs)
0:18
And that tickled me. (laughs)
0:21
So he decided, no, he was gonna film it.
0:26
So for the next few videos,
0:31
I'm gonna be preparing things
0:35
that people are calling a one-sheet-pan meal
0:43
because I know all of y'all are
0:48
probably so time-sensitive
0:53
to everything that you have to do.
0:54
So I'm gonna share a few of these recipes with you
0:59
that are so easy and actually healthy and good for you,
1:04
something that you would want to feed your children.
1:07
So I've got couple of pounds of broccoli,
1:10
maybe a pound and a half of broccoli,
1:14
and I've got my sheet pan.
1:18
I tell you what, I think I wanna spray this just in case.
1:23
Just in case it wants to stick.
1:25
But I'm gonna just put my raw broccoli.
1:28
Now, if you like your broccoli real soft,
1:32
you could always blanch this first,
1:35
but we're trying to make this meal as quick
1:44
but a lot of children actually like broccoli,
1:49
which is if you can get 'em to eat anything green,
1:53
it's a good thing, right? (chuckles)
2:00
Okay, so we're gonna spread our cherry tomatoes
2:04
that we've sliced in two.
2:06
Ooh, I would love to have shown them the trick
2:09
to slicing cherry tomatoes.
2:11
Remind me the next time we have to have a lot sliced.
2:16
Theresa, remind me that I wanna show people a quick,
2:21
quick way to get that done.
2:24
Did our camera quit again, Eddie?
2:27
- [Eddie] I have a lens cover.
2:31
- [Eddie] And it slipped down.
2:33
So it wasn't on the, (Eddie chuckles)
2:36
it wasn't on the thing from the start, was it?
2:40
- You know, that reminds me of a story. (chuckles)
2:44
I hope y'all ever don't get tired of my stories
2:47
'cause I've lived long enough to have some stories.
2:51
But when Jimmy and I got married in 1965,
3:00
my daddy was really not in good health,
3:07
and he was getting ready to go to Emory for surgery.
3:13
And Daddy said, "Blue, I can give you a decent wedding
3:21
or I can get you a stove and refrigerator."
3:24
I said, "I'll take the stove
3:26
and refrigerator, Daddy." (laughs)
3:29
So I said, "We'll have pictures that we can look back on."
3:37
my Uncle George, Aunt Peggy's husband,
3:40
said that he would take all the pictures of the wedding.
3:44
And my family and I just went down after church service.
3:50
Reverend Perry Webb married us.
3:52
All right, I'm tossing this with some olive oil, y'all,
3:57
and then I'm gonna shake it around,
3:59
try to get it all covered.
4:01
But anyway, Uncle George said,
4:03
"I'll take the wedding pictures
4:08
so you won't have that expense."
4:11
And we said, "Oh, gosh, that's wonderful.
4:14
That's wonderful, Uncle George."
4:17
Well, so he took all the pictures.
4:19
We had a little reception at Mama and Daddy's house,
4:25
which was also my house.
4:28
All right, I'm gonna put this in a single layer, y'all.
4:34
So Uncle George went to have the film developed.
4:43
He had forgotten to take the lens cap off.
4:47
Every picture was just a black sheet of paper. (laughs)
4:56
We didn't have cellphones back then with cameras.
4:58
So I mean, not one picture of anything.
5:03
That should've told me something right then.
5:05
Don't y'all think? (laughs)
5:08
That should've said something to me.
5:10
All right, so we're gonna put this in the oven.
5:12
I'm gonna salt and pepper it,
5:14
but I got to wash my hands first.
5:17
I'm gonna salt and pepper this
5:19
and I'm gonna cook it for about 10 minutes,
5:21
and then I'm gonna make room for some salmon filets.
5:33
Well, come on, Paula, think of it.
5:42
One of those easy P words.
5:44
I've got some pesto right here.
5:46
And I'm gonna put that on top of each salmon piece.
5:53
If for some reason you don't like pesto, that's all right.
5:58
Just put a pat of garlic butter
6:02
or something like that on it, whatever you like.
6:04
But I'm gonna wash my hands.
6:06
Get that in a 350-degree oven, I think.
6:12
So it's gonna go into a pretty hot oven for 10 minutes.
6:16
Then we gonna pull it out, work the filets in there,
6:19
and cook it for 10 more minutes.
6:22
All right, a little salt and pepper.
6:26
(salt and pepper rattling)
6:28
Now you can add anything you want to this
6:34
if you like onions, or bell pepper,
6:36
or cauliflower, whatever you want.
6:40
But the thing is you're trying to get a quick, healthy,
6:46
one-pot, one-sheet-pan meal.
6:57
I just got to make...
6:58
- Smells real good. - I just got to make...
7:00
I just got to make sure that tin foil
7:03
is good underneath there.
7:04
So 10 minutes at 450.
7:07
Now I'm gonna make a little room for our salmon filets.
7:13
I'm just gonna kinda nestle 'em
7:16
in all this broccoli and tomatoes.
7:21
Ooh, this is so pretty.
7:34
Now some people like their salmon...
7:38
I salt and peppered our salmon a little bit.
7:40
Some people like their salmon well done.
7:46
I kinda like mine what I call a medium.
7:50
Maybe just a little pink in.
7:53
All right, so I'm gonna spray this
7:57
with some more olive oil.
8:00
Just using the spray.
8:03
And now I'm gonna take our pesto
8:08
and I'm gonna put a dollop on each one of these filets.
8:13
And like I said, if you don't like pesto,
8:18
just use some garlic butter.
8:25
10 more minutes, y'all.
8:29
And then just a little bit
8:33
of pure olive oil on the filet.
8:39
But I have found that the best,
8:42
that absolute best salmon that I've ever cooked,
8:47
I cook in the air fryer, like seven minutes.
8:50
It's beautifully perfect.
8:53
But we're gonna do this for like 10 minutes.
8:56
My cousin, George, is here.
9:00
Look what I have for y'all's lunch.
9:02
- [George] Oh, Paula.
9:05
- I'm especially ready.
9:06
- And I know you're trying to watch stuff.
9:08
- [George] I am trying to watch my diet.
9:10
I'm gonna watch some Netflix.
9:13
- Would you like for me to go ahead and fix your plate?
9:15
Or do you wanna wait and eat with your mother?
9:17
- [George] Yeah, let's get my mother when she's ready.
9:19
- [Paula] Well, she's not gonna eat for a while now.
9:21
- [George] Oh, she's not?
9:23
- [George] Well, am I the official tester?
9:25
- [Paula] Well, you can be,
9:26
and I would love it. - Just a little bit.
9:28
Let me get a little bit on that one.
9:29
- I would love it for you to be my official taster.
9:34
- [George] Okay, gonna get my...
9:35
- (laughs) All right, here we go.
9:41
- [George] That's delicious.
9:43
- [George] The pesto is really good.
9:51
Pesto has never been one of my favorites.
9:54
- But it's delicious on that salmon.
9:56
- [George] You know, Kelly and I were talking
9:57
about pesto the other day.
9:59
- Mm-hmm. - Pesto is not one
10:00
of my favorites either, but I eat it.
10:01
- [Kelly] Yeah, it was.
10:02
- [George] But then-
10:03
- [Kelly] Now it is.
10:04
- [George] She said, "George, I don't know why you say that
10:05
because you like everything that's in pesto."
10:09
- [George] And I do.
10:10
I like- - I know it.
10:11
- Every single thing- - I do, too.
10:11
- That goes into it. - I do, too.
10:14
- Well, mm, broccoli's good.
10:21
- [George] It's delicious.
10:22
- I'm so glad you like it
10:24
'cause it was so easy for me to make. (laughs)
10:27
And that's what we're after, y'all.
10:30
Love and best dishes.
10:32
Like I said, some more one-tray meals are comin' up.
10:38
