0:01
- Hey y'all. (laughs)
0:03
Have y'all ever made a no-bake cheesecake?
0:10
Well, if you haven't,
0:12
you're gonna want to try this one, y'all
0:14
because you don't bake it.
0:16
You put it all together
0:17
and then you put it in the refrigerator
0:20
for about four hours.
0:21
And I am making a no-bake, raspberry cheesecake.
0:28
And it's another one of those wonderful recipes
0:31
that I have in cooking with "Paula Deen Magazine."
0:34
I love it, love it, love it.
0:36
All right, so I've got my graham crackers,
0:39
my graham cracker crumbs,
0:41
two tablespoons of sugar, and some butter.
0:47
Got to have a little butter to hold our crust together.
0:52
So I've just softened that butter.
0:57
You know I'm gonna get every drop out.
1:04
so we just wanna moisten all those graham cracker crumbs.
1:11
All right, so I'm gonna press this into our cheesecake pan.
1:21
I'm just gonna press that on the bottom,
1:27
I'm not gonna try to do it up the sides,
1:29
you know, I'm just gonna cover that bottom.
1:38
I'm going to add two tablespoons of sugar to my pan,
1:43
along with, I think it was a tablespoon of corn starch.
1:50
And I'm gonna whisk that together.
1:57
Along with a tablespoon of fresh lemon juice.
2:01
Is that a tablespoon, Theresa?
2:03
- Yes. - Can't remember.
2:05
All right, we just wanna get that all wet.
2:10
So it'll thicken for us, but not clump.
2:15
So you wanna just make sure
2:22
that it's all real soft.
2:26
All right, I'm gonna add my raspberries,
2:28
and this is just one package.
2:31
You know, that you get in your produce department.
2:34
And we're gonna cook this for about 10 minutes.
2:43
You can see that I'm mashing up my raspberries
2:45
'cause I want all that juice out of there
2:49
because that's what's gonna make
2:51
our raspberry swirl in our cheesecake.
2:55
Now all I have to do y'all
2:57
is beat up three eight ounce packages of cream cheese,
3:02
three fourths a cup of heavy cream.
3:06
No, three fourths cup of sour cream,
3:08
a cup of heavy whipping cream, and our confection sugar.
3:12
I believe it's a cup and a half of confection sugar,
3:15
and our vanilla. (claps hands)
3:19
And in four hours, we going to be eating cheesecake, y'all.
3:24
All right, my sidekick, Theresa,
3:26
is gonna watch our raspberries
3:28
because we are gonna let those kind of simmer, you know,
3:33
a little bitty boil, about 10 minutes,
3:36
but you do need to stir it
3:38
because we don't wanna scorch our raspberries.
3:42
All right, so I'm gonna start with my three,
3:44
eight ounce packages of cream cheese.
3:48
All right, so I just added my confectioner's sugar.
4:01
This is not a overly sweet cheesecake either.
4:08
Okay, now it's fixing to get easy
4:09
'cause I'm gonna add our wet ingredients,
4:12
and like I said, that's the cup of heavy cream.
4:21
Three fourths a cup of sour cream.
4:29
I'm so glad I'm making this
4:30
because I actually have a girlfriend coming in
4:35
to spend the night tonight with us.
4:40
if she comes in the house with a sweet tooth,
4:42
I'll be ready. - Exactly.
4:50
I'm gonna add almost a tablespoon of vanilla flavoring
4:57
because right now there's not a lot of flavors going on,
5:00
so I wanna make sure...
5:04
Oh no, look what I've done done. (chuckles)
5:16
Well at least it's white
5:17
and it got on the white part of my shirt. (laughs)
5:22
- Can't take you anywhere. - Uh uh.
5:29
Now we are gonna take our raspberries
5:32
and the little bit of sugar.
5:34
Now, it was not much sugar in this,
5:37
so it's gonna give it like that tart taste,
5:42
and I'm just gonna get rid of most of the seeds.
5:47
I'm gonna try to get rid of 'em
5:50
by putting them through my little do dad here.
5:59
About ready to put this baby to bed, y'all.
6:04
Beautiful and creamy.
6:09
All right, we're just gonna transfer that to our pan.
6:18
These glass bowls are great.
6:20
I like it 'cause you can see your food,
6:22
but they're heavy as all get out.
6:33
Heavy, heavy, what is that?
6:38
Okay, so we're just gonna take our, ooh, that's hot,
6:42
from cooking our raspberries.
6:47
I thought, "Well, what is burning my finger? (laughs)
6:53
And it was a hot eye.
7:10
Now we're gonna take our syrup from our raspberries
7:17
and we just gonna pour,
7:20
pour that, or drizzle it, really, over our cheesecake.
7:28
I could have made a face out that, couldn't I? (laughs)
7:33
Eddie could, his drawing's so beautiful.
7:40
All right, I wanna make sure I get every bit of it.
7:48
Just gonna dot it around.
7:56
And then we're just gonna take our knife
8:01
and we're gonna swirl it.
8:04
Just cut it through that cheesecake.
8:11
Kind of looks like a spiderweb, doesn't it?
8:24
How does that look, kiddies? - Good.
8:30
- They have to help me with my eyes,
8:32
with my seeing. (laughs)
8:47
Okie doke, I think that's pretty.
8:55
What do y'all think, y'all see anything it needs,
8:57
besides eating? (laughs) - Looks good.
8:59
- Going in the refrigerator- - Yum.
9:04
So what do y'all think about our raspberry cheesecake?
9:29
I enjoy a no-cook cheesecake so much.
9:36
Not having to cook it and I don't have to worry
9:38
about it cracking, in the center.
9:45
You know what, I think I'm gonna just put this
9:48
over here on my little cow. (laughs)
9:53
Looks good, doesn't it, Mikey?
9:58
- [Mikey] I'll take a little bite.
10:04
And remember, y'all, that we
10:09
ran our raspberries through a,
10:13
what do we run it through?
10:16
Like a little- - A mesh, a strainer.
10:18
- Yeah, a little strainer.
10:20
And I mashed it down and got all the juice out
10:23
and so all we use is the juice.
10:32
Yep, all we use is a juice from the raspberries
10:36
and the sugar to put the little red doodads on it.
10:43
(laughs) That's delicious.
10:47
Look at that, y'all.
10:50
