So what I brought is we're gonna do something,

We're gonna need a little sweet or a little, little dessert.

But everybody always, and if you go to Key West,

you're gonna have key lime pie.

There's not a doubt about it.

So, but a lot of times key lime pie is a lot

for people to eat after a meal.

- So what we're gonna do is,

we're gonna make a no-bake old sour key lime pie,

but we're gonna make it a little bit of different way.

So what we're going to use is,

this is Key West Old Sour Sauce.

- So you can get that online at Key West Legal Rum.

Some stores are gonna start carrying it down the road.

And everything, we're doing all that.

This has been a secret for 110 years.

So I got a lot of locals starting to get a little mad at me,

but they approve of it, so I'm allowed now.

- Okay, good. - To do that.

And this is key lime, sea salt,

and it's got this little bird pepper in it

that only this one bird will eat,

'cause the pepper's very spicy,

but this is no spicier than like white pepper.

That's not where it comes from, is it?

- It would be a little painful I think and everything.

So no, this isn't like those coffee beans that the cats eat.

- Well, you know, what is that thing

that grows that birds or cows or something?

- It's the cat's eat the coffee beans in Africa.

- Yep, and then they go and clean it,

and everybody pays all this money for it.

I was asking how they got the hot pepper if it was done.

- So we don't, and we don't use a lot of it.

- It was just a thought I had in my weird head.

- And, and see that's, but that's a good,

- Well, I thought it was 'cause I know I've seen something

like that on TV before. (both laughing)

- So, and this is used as a condiment,

because in Key West, everybody had this on their table,

and what they did was they put it on pork, chicken, seafood.

You just use it.

And we used to do these things called cutups

where you throw, everybody would bring

whatever they had grown on their trees,

cut up, dump it in a bowl, put old sour on it,

maybe go sit around, have a couple drinks,

and about a half hour, 45 minutes later,

the old sour would start to cook and marinate it

and put all the flavors together,

and then you'd sit there and eat it.

- And what would they bring in from their trees?

- Mame, star fruit.

Whatever was growing, you know, mangoes.

I mean, yeah, they'd bring all sorts of fruits

and even some savory ones,

some bread fruit and things like that.

So what I discovered, I love history.

So I was looking back in history, and I said,

what happens when they were making key lime pie,

and there was no key lime pies on the tree?

And I found in one lady's writing this,

they used some old sour.

And I went, I've never heard old sour key lime pie.

- So I made some for my wife.

So basically the recipe you use sweet and condensed milk.

Now that's what you used for key lime.

Now for us in Key West,

sweet and condensed milk was because back in the days

no refrigeration, and the other thing was,

this is what we used in our cafe con lecia, our coffees,

and those little buccies

that when you're drink 'em you start shaking.

That's why people get things done in Key West.
