Get in this kitchen with me.
0:04
'cause you know what?
0:05
I am walking way far down memory lane
0:09
with this recipe that I wanna share with y'all.
0:13
long before I ever saw Savannah in my future,
0:20
but it was one of those dishes that I thought,
0:22
"Well, if I can get my children to eat them,
0:25
you know it will be good
0:28
because it's got so many veggies in it."
0:32
So depending on how big you cut...
0:37
This is called a vegetable casserole, y'all.
0:40
And I used to feed it to my boys
0:43
when they were little, little bitty boys.
0:46
Depending on how fine,
0:48
how fine you cut your celery and your onions,
0:53
depends on whether you should saute them off.
0:57
And I am, I'm gonna saute,
0:59
because this recipe truly is a heat meat.
1:04
You just wanna put it in the oven long enough
1:06
for it to get hot and bubbly.
1:08
So I wanna give the celery and the onions a minute
1:19
And I put just like a teaspoon of butter in there,
1:23
and I've sprayed my cast iron pan
1:32
so that it won't stick.
1:35
So this is one of those recipes
1:38
that y'all almost embarrassed.
1:40
It's so easy because you start with a can of Veg-All.
1:45
It's the soup, it's the vegetables that a lot of people use
1:50
when they're making vegetable soup
1:52
because it's got so many veggies in it.
1:56
And I'm gonna add a can of sliced water chestnuts.
2:00
And I adore, adore water chestnuts.
2:05
You know, they really don't have any flavor to speak of,
2:08
but I love the crunch in them.
2:13
So we're gonna add our mayonnaise.
2:20
And this is gonna be our binder
2:24
for our vegetable casserole.
2:27
Now, while our celery and onions are getting tender,
2:30
I'm gonna go ahead and add the cheese.
2:34
Oops, get back in there.
2:39
And stir that up real good.
2:42
And then I've got my crackers
2:46
that I'm gonna toss with a little melted butter.
2:54
We got something ready to come out of the oven, I think.
3:01
So this is just easier doing the melted butter this way
3:06
over our cracker crumbs.
3:08
It's better than just cutting slices of butter
3:12
and putting it on top
3:13
because not all the crackers will get that wonderful,
3:16
sweet, buttery taste.
3:19
But this way, I've got them.
3:21
Every one bathe in that sweet, creamy butter.
3:27
All right, our celery and our onions are nice and tender.
3:30
And like I said, if you cut them smaller,
3:36
if you really mince them up good,
3:38
you don't even have to do that.
3:44
today I decided I wanted to just soften them.
3:51
(spray container clattering)
3:56
And I'm just gonna pour this back into the skillet.
4:05
Oh, this is a perfect size, Eddie.
4:09
Eddie and I looked and looked
4:10
and we couldn't find a small-enough casserole dish,
4:18
so we found our cast iron skillet, so that's perfect.
4:23
And I do love cooking in my cast iron
4:28
every opportunity that I get.
4:31
So in the oven, maybe 20 minutes,
4:35
and then our crumb's going top
4:40
about five, eight, 10 minutes.
4:42
Whoo, this is so hot.
4:43
(oven door scratching)
4:45
Okey-doke, I'm gonna top our vegetable casserole now.
4:54
Look how good that looks with our breaded cracker crumbs.
4:59
Throw it back in the oven a minute.
5:05
I can't work with that glove on.
5:12
And remember, I had buttered them so they're good to go.
5:15
- [Michael] We close this?
5:17
- [Paula] No, baby, I'm fixing to go back in there
5:19
with my little skillet.
5:22
- [Michael] It'll reach through.
5:27
So how good does that look?
5:32
So just a few more minutes, and...
5:39
I want y'all to look at this beautiful little casserole.
5:47
Like I said, if I hadn't have sauteed the onions
5:51
there would have been nothing to it.
5:57
But it is just so good.
6:00
So good, and like I said, I love the crunch
6:08
of the water chestnuts in it.
6:10
You like water chestnuts, Michael?
6:12
- [Michael] Yeah. - I can't remember.
6:18
Like I said, not a lot of taste,
6:20
but the crunch is so incredibly good, y'all
6:26
You know, Michael, I don't think I've made this for you.
6:31
- [Michael] I don't think you have, either.
6:37
I want you to taste it, though, okay?
6:44
- It's a vegetable casserole,
6:46
and it's one of those casseroles
6:47
that offers a lot of different veggies for your children.
6:55
- Like a pot pie. - Mm-hmm.
7:00
Y'all it was like a pot pie.
7:02
- That one was little.
7:04
If I got one of those green peas in my mouth.
7:08
- You'll live. - Oh, my God. I was just...
7:15
- Tell everybody how you used to...
7:18
When your mama would make you eat green peas,
7:23
- I'd hold my breath and swallow them.
7:30
There's a whole lot I don't eat now,
7:32
but if I would've got one of green peas in my mouth
7:35
when I was a kid, I'd just...
7:38
I don't know what I'd do.
7:43
- I was thinking you put it in some plants or something.
7:46
I was thinking you told me you...
7:49
- I tried to get Hank to eat on.
7:53
- Because Hank would eat everything, wouldn't he?
7:55
- It wasn't anything he would turn down.
7:57
Well, don't you like that?
8:00
- It's a wonderful, wonderful dish for mothers on the go.
8:05
But you still wanna make sure your children
8:07
get their vegetables.
