0:00
- Well, hey everybody, it's Bobby here,
0:02
and today I've got a great recipe for you
0:04
that I think everybody's really gonna like.
0:07
Some of you may know that I used to make
0:09
I was the baker, the lead baker, for The Lady and Sons,
0:13
before it was even, "and Sons," it was just The Lady.
0:17
Mom said, "Maybe one day."
0:19
And after she put, "and Sons" on the awning, she said,
0:21
"I can take that down just as quickly as I put it up."
0:24
So anyhow, I started out lead dishwasher and dessert baker.
0:28
So today I'm gonna do a dessert for you all,
0:31
and this comes from our second offering.
0:34
My brother and me did a couple of great cookbooks,
0:37
and one of 'em was called "Y'all Come Eat."
0:38
And I really liked it.
0:40
So this is an offering from that book,
0:43
and it's a macadamia nut dream bar.
0:46
Sounds really good already.
0:48
So you can see I got the food processor out,
0:50
got all purpose flour, brown sugar,
0:52
a pinch of salt, and some butter.
0:54
So we're gonna make our crust.
0:56
And we'll start with just filling up our food processor
1:00
with the first three ingredients.
1:06
And I'm going to get them combined.
1:11
And now we'll add our butter. (coughing)
1:17
- [Camera Operator] I was like, is that smoking
1:19
or is that flour? (laughs)
1:21
- Our mixer been around for a while.
1:26
And now we'll pulse in the butter.
1:30
All right, I've got everything combined in the mixer.
1:38
And now in an ungreased pan, I'm just gonna press that in.
1:45
"Why don't we need any grease in the pan, Bobby?"
1:49
Well, because there's a stick of butter in here,
1:52
and that's gonna keep everything
1:54
from sticking to the bottom of the pan.
1:58
"Y'all Come Eat" was one of my favorite cookbooks
2:02
to make with my brother.
2:05
And I still remember, if you've got a copy of it,
2:09
you'll see on the cover,
2:10
we're outside at Jamie's house with a bunch of friends.
2:17
Outside at Jamie's house with a bunch of friends
2:21
sitting around his pool deck.
2:23
And we brought a big road sign in,
2:25
they brought a big road sign in for the cover and said,
2:30
We'll put this right in the center of the shot
2:35
and we'll put 'Y'all Come Eat' up on the road sign."
2:38
So they did that and they said,
2:39
"Bobby, jump up on there and sit down."
2:42
Man, it was summertime, and they had that sign plugged in,
2:48
and I was sitting on the top of it,
2:50
and I was so on fire hot
2:52
by the time that shoot was over with,
2:55
and I was wearing jeans, and my butt was burnt. (laughs)
3:01
We had so much fun doing that.
3:03
This is a really thick crust that we've made,
3:08
and it's gonna take me a minute
3:09
to get everything even in here.
3:11
So why don't we take a short break
3:12
while I get this perfect, and we'll come right back.
3:15
Okay, well that was a lot of fun.
3:17
I got my base into the baking pan here.
3:22
So let's go ahead and throw it in the oven.
3:24
We're gonna bake it for about 10 minutes
3:25
or until it's golden brown.
3:27
I'll pop it in the oven and we'll come right back.
3:29
Our crust is in the oven for about 10 minutes
3:32
or until it's golden brown, so now we'll do our filling.
3:35
We're gonna whisk together brown sugar,
3:41
flour, bakin' powder,
3:46
not bacon, baking powder.
3:50
Sounded like I said bacon powder.
3:52
Eggs, and a teaspoon of vanilla.
4:03
All right, and we'll whisk, whisk, whisk
4:06
until we get these combined.
4:08
And then we'll add in stars of our dream bars,
4:15
macadamia nuts, chocolate chips, and coconut.
4:18
Whoa, what a great combination that'll be.
4:27
And now we'll fold in our chocolate chips.
4:37
Ooh, I could eat 'em all with a spoon.
4:39
Our macadamia nuts, and our coconut.
4:45
What a trio of wonderful flavors,
4:50
and things that I like so much, all.
4:54
We'll get this combined.
4:57
Check our crust, which is, I'm smelling it.
5:04
And we'll layer these two things together,
5:06
and oh boy, we'll be off to the races then.
5:12
Great, okay, let's get our crust.
5:15
And now we're cooking with gas.
5:17
Take a break and we'll be right back.
5:21
And the aroma coming off of that is so, so great.
5:24
It smells like a really nice graham cracker crust
5:28
or something like that.
5:29
It's a beautiful golden color,
5:31
and it's hot, so we gotta be careful.
5:33
I don't wanna break that up
5:34
as I'm spreading my top layer on,
5:36
so I'm just gonna put it right in the center,
5:40
and that's probably going to make this more pliable anyway,
5:45
landing on top of that hot bed of crust.
5:49
This is gonna become super smooth,
5:51
and probably pretty easy to spread out,
5:53
but I don't want to tear up my crust.
5:56
Gosh, that smells so good.
5:58
I don't eat desserts that often,
6:01
but I really do appreciate a nice, like, bar, you know?
6:08
Like the gooey butter cakes that we do at our restaurant.
6:11
Boy, are those things so good.
6:13
My pan's hot, so I gotta be careful, I don't wanna touch it.
6:17
We'll just spread this out evenly.
6:19
Now, this is a macadamia nut bar,
6:22
but if you wanted to use something different, you could.
6:26
Hazelnuts would be great.
6:30
You could use walnuts.
6:37
Spreading beautifully to perfection.
6:43
And now what we'll do is pop this back in the oven
6:46
for a few more minutes until it is wonderful
6:56
You know, it would be so good with something like this?
6:57
Gosh, I don't drink a lot of milk, but oh boy.
7:03
And here comes my wonderful, beautiful assistant, Theresa.
7:07
Take it away, Teresa. - 'Cause it's hot.
7:09
- Take a break and we'll come right back.
7:11
Wow, y'all, I gotta tell you these macadamia nut dream bars
7:15
look and smell so wonderful.
7:19
I'm gonna try to take myself a little bite
7:22
without messing it up so we can still serve it.
7:42
That is so very good.
7:49
Mm, it'd be great with a glass of milk.
7:53
Macadamia nut dream bars.
7:55
Really simple, really wonderful recipe,
7:58
and I think you'll like it a lot.
7:59
So until next time, enjoy your sweets.
