0:02
Back during the summer,
0:07
with people that send me letters and recipes.
0:11
And so this was probably late August
0:15
that I got the sweetest card
0:19
from a man named Luke.
0:22
And he said, "Dear Paula,
0:26
Miss Paula," he called me Miss Paula,
0:28
"Love watching your videos.
0:29
You have always been a bright spot in my day.
0:32
Your cooking reminds me so much of my mama,
0:35
who is also a wonderful cook.
0:38
I've attached a few recipes of hers.
0:41
One is for a casserole.
0:43
The squash casserole tastes just like cornbread dressing.
0:47
The dessert is a favorite of everyone in the family
0:50
and expected my mom to have it every holiday."
0:54
So I haven't seen the dessert recipe yet,
0:58
but I'm gonna check it out.
0:59
And he said, "PS, blessings to you and your family,
1:03
Theresa and Eddie too,"
1:05
because he knows they're part of my family also.
1:15
I can't tell you what it does to me
1:18
to hear these kind of words come in from y'all.
1:21
In fact, now is a perfect time
1:23
for me to remind y'all,
1:27
if you enjoy watching my videos,
1:30
you know, if you would tell a friend
1:32
and it's very important that you hit subscribe.
1:36
It doesn't cost a thing, it just lets the network know
1:40
how many people are actually watching my videos.
1:43
It's just a information source.
1:47
So don't forget to hit subscribe.
1:51
It will help me a lot.
1:54
So Luke, you know what?
1:59
I think that this would make
2:02
a good side dish for Valentine's Day.
2:07
You know, I went to a function Saturday night
2:10
and it was at a fancy place like The Cloister (chuckles)
2:15
and they served us a pork chop.
2:18
That pork chop was that thick.
2:22
So I cut all the meat off the bone and gnawed the bone.
2:27
'Cause, you know, to me that's the best part
2:30
And some people took some pictures
2:32
and we have laughed about that.
2:35
Paula might be from the country, but she ain't.
2:40
So this would be good
2:43
served alongside one of those nice thick pork chops,
2:49
'cause it tastes like cornbread dressing.
2:57
by sauteing the onions.
3:01
Let's see, does he call for butter?
3:04
One stick of butter melted.
3:11
There we go, mama. (laughs)
3:24
Luke didn't put a whole bunch of directions in here,
3:27
you know, but Luke says,
3:30
"Saute the onions and celery until translucent
3:34
and then mix all the ingredients
3:38
together in a buttered casserole dish
3:42
and bake at 350 for approximately 35 to 45 minutes."
3:46
Well, he doesn't say anything about sauteing the squash,
3:50
but I'm gonna do that,
3:53
Luke, and hope maybe that's how you do it.
3:59
But anyway, we got our stick of butter melted.
4:03
We're gonna go in with our onions and celery.
4:07
And this is two ingredients
4:10
that definitely make cornbread dressing.
4:20
So I'm gonna turn that down a little bit and get this going.
4:24
And then I'm gonna throw our squash in.
4:27
All right, so I'm gonna go ahead and throw in our squash
4:30
'cause all of our butter is almost melted.
4:36
I think he said just cook it until it's translucent.
4:40
You know, your onions and celery.
4:45
So I think I'm gonna put the lid on this, Luke.
4:55
And just let it get hot pretty quickly.
5:01
And the other ingredients that it calls for
5:06
is a can of cream of chicken soup,
5:11
two cups of cooked cornbread crumbled up.
5:14
And I would recommend using a southern cornbread,
5:17
not one that's sweet.
5:22
That's good. That's not sweet.
5:24
Two eggs, a medium onion, and 3/4 cup of celery.
5:28
All right, so while our squash onions
5:31
and celery is cooking,
5:33
I'm going to mix up our other ingredients,
5:36
which is a cup of chicken,
5:39
cream of chicken soup.
5:43
Going to get it all out. (spoon rattling)
5:47
And I've lightly beaten up
5:57
So we'll mix that together.
6:12
Luke saying this tastes like cornbread dressing.
6:16
I can visualize that.
6:20
All right, I'm gonna pull this off.
6:30
and the water that we got from the squash
6:34
has given us some juice.
6:42
I think I may temper these eggs a little bit,
6:47
'cause you know I don't like scrambled eggs
6:49
(spoon thudding) (container clinks)
6:53
with my casserole dishes.
6:59
And after I get this tempered, I'll add it back into that.
7:05
(spoon thudding and rattling)
7:15
Okay, I think that's good, tempered.
7:24
So we've got our two cups
7:26
of crumble cornbread,
7:32
and like I said, it's a southern cornbread,
7:37
If you're buying boxed cornbread,
7:42
my cornbread is not sweet
7:49
because I just, you know,
7:51
I would rather you add, if you like sweet cornbread,
7:55
to add your own sugar.
7:57
And so the cornbread makes much more versatile.
8:02
All right, so now I'm gonna take
8:14
And I've greased my casserole dish.
8:17
I think Luke said a eight by eight
8:21
- [Theresa] Eight by eight.
8:26
Yeah, I can just see this
8:29
kind of propped up on a fat pork chop.
8:33
And your valentine just drooling.
8:38
- [Theresa] I like the concept of the cornbread
8:39
'cause it'll give it a texture.
8:45
- [Theresa] Like, the breadcrumbs, but not-
8:48
Look, there's a little bit of egg left. (chuckles)
8:51
Alright, I'm gonna have to get this close
8:53
because you know what?
8:54
These pans are getting so heavy
8:58
when you get 'em full of food.
9:02
You know, I adore my cast iron.
9:05
But great time of day,
9:06
the older I get, the heavier it gets.
9:12
About 30, 35 minutes, y'all.
9:16
I want to thank you, Luke,
9:18
for the beautiful card that you sent
9:23
and sharing the memories of your mother with me.
9:28
It's very, very sweet,
9:30
and I'm gonna dig into this and taste.
9:35
And remember, Luke told us
9:37
it's tasted almost like cornbread dressing.
9:42
So I'm gonna, looks delicious.
10:04
I thought I'd let it cool enough that I could eat it.
10:13
This is delicious, Luke.
10:18
I mean, I think you could get people that say,
10:21
"Oh, no, I don't like squash,"
10:23
I think they'd like this.
10:25
I think you could get 'em to eat squash.
10:28
It's yummy. (fork rattling)
10:36
although you didn't tell us to cook off the squash some,
10:40
Luke, I'm glad that I did,
10:43
because that made our squash so very tender.
10:48
Thank you, darling, so much,
10:52
and I hope you have a happy Valentine's Day.
10:55
Make this for your sweetheart. (chuckles)
