- Hey y'all, I'm so excited about this video
0:03
that I'm fixing to share with y'all.
0:05
Because if I ask y'all, what is my favorite food?
0:12
I think most of y'all would know the answer to that.
0:17
And it's got to be a potato.
0:19
I mean, I love, love, love potatoes
0:23
and there's so many different ways you can serve them.
0:25
I have a potato and ham soup in one
0:29
of my cookbooks that is to die for.
0:33
Top it with a dollop sour cream and some cheese
0:37
and gosh, even some fresh jalapenos
0:40
on top if you like a hit on you.
0:44
But there's just so many ways to cook a potato.
0:49
And today I'm cooking a potato.
0:54
In my section in my magazine, I have
0:56
easy weeknight meal planners.
1:00
And to me this is just so helpful
1:04
because I always quandary over, well, what to cook,
1:07
what to cook, what do y'all want me to cook?
1:08
Oh, it doesn't matter.
1:11
So I like being encouraged to cook a certain dish.
1:18
And this is Monday night's suggested easy meal planner.
1:23
And it is a loaded barbecue baked potato.
1:27
So this recipe is in, it's in my cookbook that's out
1:32
on news stands right now, isn't it?
1:34
- [Assistant] Yes ma'am.
1:35
- Yes, it's March and April.
1:39
Sometimes I have to remind myself to tell y'all
1:44
that this magazine, I have it on sale now.
1:50
You can get a year's subscription for
1:53
$16.99, which is crazy unheard of.
1:57
And it's 75% off the news stand.
2:02
You know, if you order it, I guess from on this link?
2:07
- [Teresa] Yeah, there's a link.
2:08
- There's a link.- - Listed below this video.
2:10
- Okay, and it's a wonderful gift to
2:13
give somebody 'cause it's one of those
2:15
gifts that just keep on giving.
2:17
So this is what we are gonna do and I'm just ever so happy.
2:23
Now the first thing that you need
2:24
to do is oil your potatoes.
2:30
Now I prefer to use a spray (cooking spray spraying)
2:35
because I'm not crazy about getting that
2:37
vegetable oil all over my hands.
2:42
So I have just found that this
2:44
is an easy, easy way to do it.
2:49
(cooking spray spraying)
2:50
So you can flip it over, spray both sides
2:52
and this is gonna make that outside crispy.
2:57
And now we're gonna sprinkle it with kosher salt.
3:01
Which, you know, it brings that potato home.
3:09
Almost needs spray a little bit more.
3:10
(cooking spray spraying)
3:12
Just turn 'em over,
3:17
salt 'em again.
3:18
And by spraying them, that helps that salt
3:23
stick to the skin of our potato.
3:27
So we are gonna bake this, oh gosh,
3:29
350 for about 45 minutes maybe.
3:33
So when we left off, I was putting our potatoes
3:36
into the oven and they're ready now.
3:39
And guess what?
3:41
I had some young friends drop in on us from out of town
3:46
and so we invited them to sit right here at the bar
3:50
and they can be my Guinea pigs, right?
3:53
- I'm in.
3:54
- This is John and Madison and they
3:57
live in Columbus Georgia, but they're
4:00
here to go to the Journey concert?
4:02
- [John] Journey and Toto.
4:03
- I almost think Bobby and Claudia are going to that.
4:05
- [John] Bobby's gonna go, he's gonna go with a friend.
4:08
Claudia is, she backed out.
4:11
- Why did she back out?
4:13
- [Madison] She probably doesn't even know who Journey is.
4:15
(laughter)
4:17
- So y'all, I am doing a wonderful recipe in my magazine.
4:27
We do like weekly menus, you know, like
4:33
meal planning for the five nights.
4:36
Cause more than likely you're working and you gotta
4:38
come home and it's gonna be tight, tight, tight.
4:42
So this is a wonderful, wonderful easy meal to prepare.
4:49
I mean, you can do this thing real quick.
4:52
Because these can be cooked in a microwave in like...
4:59
- [John] I love that.
5:00
- Yeah, like nine minutes.
5:02
So, and these are still hot.
5:09
My knives are getting real dull.
5:15
Okay, that's a hard piece of skin.
5:18
Okay, the recipe does not call for this,
5:21
but you know I'm not eating a baked potato
5:23
without a little bit of butter in it.
5:27
So we've got our potato split open and, you know,
5:29
I oiled our potatoes down and sprinkled kosher salt on them.
5:34
So now I'm gonna layer in our stuffing.
5:38
Now the recipe calls for pulled pork.
5:45
This is pulled pork, but it's got barbecue sauce on it.
5:50
I would not recommend already sauced barbecue
5:55
because we plan to put a little bit
5:57
on the top so we don't want to over barbecue it.
6:00
What I would suggest for a meal like this
6:04
while you're baking your potatoes
6:06
you could cook a wonderful pork tenderloin so quickly.
6:12
In about 20 minutes I would cook up.
6:16
Look Lulu's hungry, look at...
6:18
- [John] She pushing her empty bowl?
6:19
- I mean, no, she is she's trying to
6:22
lick any goody out of her bowl.
6:24
Are you hungry little girl.
6:27
"Oh yes momma I'm starving."
6:30
(laughter)
6:31
So anyway, I would use unbarbecue sauced pork
6:37
and I just think pork tenderloins
6:40
are so quick and so easy to prepare.
6:42
So that's what I would do.
6:44
But Teresa did the shopping and
6:46
she said this was her choices.
6:52
So actually some people may like it already sauced.
7:00
So when we get through with this, y'all
7:02
it's gonna be a meal in itself.
7:06
- [John] It's gonna save us time, we'll just eat here.
7:08
- [Madison] Yeah.
7:08
- Yeah, so I was, I told y'all a minute ago
7:13
that these young people have a concert
7:18
to go to and we were just asking...
7:21
- This is gonna be our meal.
7:23
- [Paula] We just...
7:24
- We lucked up.
7:25
(laughter)
7:26
- [Paula] We just asked them...
7:27
- Came at the right time.
7:27
Yeah, we just asked them if they had
7:29
reservations for dinner yet (package crinkling)
7:32
and they said no.
7:36
(laughter)
7:37
- [John] We've known Paula since the QVC days and
7:40
my dad's one claim to fame is that he sold
7:43
more cookbooks than Paula one time on QVC, one time.
7:44
It didn't happen but once but...
7:48
- What now, he did what?
7:50
- He picks on you about how he sold
7:52
more cookbooks one time than you on QVC.
7:54
- He did? (laughter)
7:55
- He said one time.
7:56
- Are you sure?
7:57
- Probably not.
7:58
- He might be lying.
7:59
(laughter)
8:01
- And I think it was like one day he was like,
8:04
"I think I sold more cookbooks than Paula Dean."
8:05
- I bet he didn't.
8:07
(laughter)
8:08
We'll have you do some checking.
8:10
- I hear you, so...
8:12
(laughter)
8:13
But we've known Paula and Mike a long time
8:16
and we're, she was gracious enough to let us
8:19
in today to try some of her fine recipe.
8:22
- Well I was just thrilled when we heard from 'em.
8:26
- [John] Yeah and we hadn't gotten to see
8:28
each other in a little bit since last year.
8:30
- Yeah, we went to, we saw each other...
8:32
- Talladega
8:33
- It was Talladega.
8:34
- It was.
8:36
- Do y'all eat cilantro?
8:38
- [John] Absolutely.
8:38
- [Madison] Yes I do.
8:39
- Okay, good.
8:40
Both of my boys, especially Jamie,
8:45
said it tastes like soap to him.
8:48
- [John] I heard people say that.
8:49
- And I've heard other people say that, so.
8:52
- [John] That's gotta be like a some people
8:54
love it, and some people it tastes like soap.
8:57
- Well it's got to be some kind...
8:59
- [John] Yeah.
9:00
- Something in your saliva that, that would do that.
9:06
(knife hitting cutting board)
9:10
- [John] Yeah, I don't know what it is.
9:11
- I don't either but Jamie is not the only one.
9:16
(knife hitting cutting board)
9:18
That's a tiny little cutting board I done picked out.
9:21
Oh wait, I wanna put some barbecue sauce
9:23
on it before I just a little more sauce.
9:29
- [John] Is it just like a sweet sauce,
9:30
sweet barbecue sauce?
9:31
- Yes, it's just a smokey sweet.
9:35
You see I make my own but I did not take the time to.
9:43
(spoon clinking on glass)
9:44
Okay.
9:46
You know I always said, John, you eat with your eyes first.
9:53
- My mom says I eat with my eyes
9:55
cause I always put too much on my plate.
9:56
- [Paula] Yeah, eyes are bigger than your stomach.
9:58
- That's it.
10:00
- So I'll tell y'all this.
10:03
There you go Madison.
10:04
- [Madison] Thank you.
10:05
(silverware clattering)
10:07
(plates clinking)
10:08
- There you go John.
10:10
- [John] Thank you.
10:11
- Is it good?
10:12
- You said took nine minutes to make the potato?
10:14
- Yeah, in the microwave.
10:16
- Microwave?
10:16
- Yeah, yeah about that long.
10:20
- It's delicious.
10:21
- I'm telling you what it's...
10:23
- I bet it's easy too right?
10:24
- Oh gosh it's so easy, so easy.
10:26
So y'all like it?
10:27
- Yes.- - Yes ma'am.
10:28
- Okay.
10:29
- [Madison] Really good.
10:30
- I trust you, but I don't trust you.
10:32
I'm gonna have to taste it myself.
10:35
- Well, and I'm a big barbecue sauce fan, so...
10:39
- Oh it's delicious!
10:43
- [Teresa] Even with my mistake of pork?
10:46
- Yes.
10:48
- I think, I mean it sometimes tastes, you know
10:52
everybody's tastes a little different.
10:53
- Yeah.
10:54
- But I think the barbecue sauce in the
10:56
in the pork is fine with or without
10:59
it just depending on your taste,
11:02
you add a little bit more or less.
11:04
- If you love barbecue sauce.
11:05
- Yeah that's true.
11:06
- You're really digging this.
11:08
- That's right.
11:09
Well thank y'all so much for breaking
11:11
a little potato with me y'all.
11:14
Tell your mommy and daddy I said hello.
11:16
- I will and we love you.
11:18
- And I love y'all and Madison you'll
11:21
have to get little John to bring him back.
11:23
- Yes ma'am.
11:25
- Big little John.
11:26
Love and best dishes y'all.
11:29
- Bye, y'all.
