0:00
- Hey, everybody. I'm Bobby Deen.
0:01
And I'm here with another great recipe
0:03
that I really think that you're gonna like.
0:05
It's on the lighter side.
0:06
It's a light, lighter, is what it's called.
0:10
Egg and veggie breakfast casserole.
0:12
So, we're gonna start on the stove top
0:14
and then we'll move over
0:15
and whisk together some ingredients,
0:17
mix it all together, and we'll go into a casserole dish
0:20
and bake it off in the oven.
0:21
So, for those of you that are vegetarian,
0:27
I think that this is gonna be right up your alley.
0:30
And we are going to start sauteing together.
0:36
That's a beautiful pepper.
0:38
Some onion and pepper, red pepper.
0:46
I've preheated my skillet, but maybe not quite enough.
0:49
I need a little sizzle here.
0:51
We'll get our onions and peppers going
0:54
and to that, we're gonna add some mushroom
0:57
and once everything is coming together nicely
0:59
and getting where we want it, we'll add in some spinach.
1:03
So, why don't we, I can let this, you know what?
1:06
I can let this ride for just a minute.
1:08
We'll take a break and then come right back.
1:10
The peppers and onions look really good.
1:12
They're starting to give a nice aroma, too,
1:14
and some translucents.
1:16
So, I'm gonna go ahead and add my mushrooms,
1:18
which are a little sturdier.
1:22
And this is a kind of a give and take thing here.
1:26
The onions are gonna give you a little liquid,
1:28
and the mushrooms are gonna sort of absorb it.
1:32
So, we'll get our mushrooms in,
1:34
and let them go for just a minute.
1:36
This casserole, if you wanted to add meat to this,
1:42
I always think of recipes
1:43
as just sort of suggestions and ideas.
1:47
So, if you wanted to add bacon to this,
1:49
or if you wanted that turkey bacon or sausage,
1:51
or whatever your protein, or meat of choice is,
1:56
you could certainly do that.
1:59
But this is gonna be a nice,
2:00
and I'm not sure that hearty is the right word,
2:03
but I think it'll be a satisfying recipe.
2:06
And you could also add in
2:07
other different vegetables if you wanted to.
2:11
Again, I think, everything's sort of just a suggestion.
2:14
I learned from my mom early on,
2:16
"Do it exactly by the recipe the first time."
2:19
And every time after that, make it your own.
2:22
Do whatever you like.
2:23
So, I would suggest that with this recipe also.
2:27
So, yeah, that looks really nice, and I love the color.
2:29
Anytime you got good color in a recipe,
2:31
you know that there's gonna be
2:33
at least some (chuckles) nutrition,
2:36
vitamins, and minerals in it.
2:37
And we'll try not to kill our spinach here,
2:39
but we'll add the spinach in
2:41
and just finish it off with that.
2:45
I missed that. There we go.
2:49
Oh, yeah, now that's beautiful.
2:52
These would make for nice ingredients for an omelet also.
3:02
So, we'll get this mixed together.
3:05
Let our spinach wilt just a little bit.
3:11
And then I'm gonna turn this skillet off
3:13
and let it sit while we whisk together
3:15
our other ingredients.
3:16
I've got 10 eggs here.
3:18
And two of the eggs, I'm gonna add,
3:20
I'm just gonna use a hand whisk.
3:21
I'm gonna add cottage cheese, milk, salt,
3:25
pepper, and what is our other?
3:27
A little garlic powder, I believe.
3:29
Oh, onion powder. I beg your pardon.
3:30
And then we'll stir in some cheese at the end,
3:32
and we'll bring our vegetables over,
3:35
and we'll mix it in, fold it in together with this.
3:37
And that'll be our final product. So here we go.
3:40
We'll whisk together our eggs.
3:48
And, again, it's 10 eggs. So, here's our protein.
3:54
Man, I don't know about you,
3:55
but we eat eggs like crazy at my house.
3:58
I love 'em and so do our kids.
4:03
We do a lot of eggs, a lot of avocado toast.
4:06
Golly, my son will eat avocado toast,
4:08
breakfast, lunch, and dinner.
4:09
And I'm so happy about that
4:11
because that guy is gonna become
4:13
a chicken nugget if I'm not careful.
4:15
I don't know about you,
4:16
but if you got little kids at the house,
4:19
that guy, it's hard to tell him.
4:21
You can't say a bad word about a chicken nugget.
4:24
So, the only time that he gets out of his sort of lane
4:28
is "Dad, I wanna avocado toast."
4:32
"All right, buddy. You got it."
4:34
Okay, so our eggs are whisked together.
4:37
We'll add to that the cottage cheese
5:00
And finally, our seasonings, our pepper.
5:11
There's our onion powder. Come on, onion powder.
5:17
Yeah, this is gonna be really, really good.
5:21
Turn our skillet all the way off.
5:24
Our vegetables look really good.
5:28
And we're not gonna cook the eggs.
5:30
I don't know what you were expecting,
5:32
but we're not gonna cook the eggs.
5:33
They're gonna bake in the oven.
5:35
That'll be the cooking process for them.
5:40
So, I'll just make sure my vegetables
5:42
are all folded together.
5:43
Here, the skillet's off. Our job is complete here.
5:52
And that looks great. I don't know, Ed, if you can see that.
5:55
But that's just a nice combination of stuff.
6:11
Forgot what I was doing.
6:14
And I'll just use this spatula
6:19
to stir in our cheese.
6:26
Sorry. Somebody will clean that up.
6:32
So, stirring the cheese
6:33
and now we've got both of our two components are complete.
6:38
Maybe we should take one break
6:39
and then we'll come back and put them together.
6:42
Our light veggies now into our egg mixture here.
6:50
I like every component of this recipe.
7:00
Now, one thing, I like things from clothes to wall colors.
7:07
I like things that you can't argue with,
7:09
and I think that you can't argue with this.
7:13
So, we'll just fold together the veggie and eggs.
7:17
I've got my casserole dish here,
7:19
and it's, we've already sprayed it,
7:21
so that we don't have a sticky mess to deal with.
7:26
That looks like it's coming together nicely.
8:02
- [Paula] Yummy, yummy.
8:03
- Yeah, I think it's gonna be great.
8:04
We're gonna bake this in the oven at 350
8:09
for about 30 or 40 minutes.
8:15
And I predict greatness.
8:17
That looks really, really, really nice.
8:20
So, Tracy, if you'll pop that in the oven for us.
8:23
- We'll take another break, and we'll come back,
8:24
and see it once it's complete.
8:27
and egg breakfast casserole is out of the oven.
8:29
It looks and smells so, so nice.
8:33
So, I wanna give it a try.
8:40
See how it comes? Oh, gosh, and it came out perfectly.
8:45
All right. Moment of truth.
8:51
- [Tracy] Good? - Very good. Hot.
8:58
Really, really nice. Doesn't need a thing.
9:01
If you wanted to add bacon or sausage to it, you could,
9:04
but that's really good just the way it is.
9:06
So, I hope that you'll enjoy it.
9:08
Lighter egg and veg, excuse me,
9:10
lighter veggie and egg breakfast casserole.
