- Y'all, we have got some of the most wonderful ladies
0:06
that work down in the Lady and Sons store,
0:10
and they've been there forever,
0:11
and they're all so good, so personal.
0:15
And they're younger than me, little younger than me.
0:18
But, you know, these are older women that know how to,
0:25
to work and how to talk to people,
0:29
and people just really enjoy comin' in
0:32
and gettin' one of the ladies to help 'em.
0:36
And there's two in there, that would be, uh-huh,
0:40
Betsy Williams, who is, has the initials,
0:45
has a nickname, she's called Bebe.
0:50
And I am not gonna tell you why they call her that.
0:54
She is so cute, cutest redhead, and just love her to death.
0:59
And all of the girls.
1:00
And then there's Charity.
1:03
And Charity is, she loves to bake.
1:06
And so every time I go in to do a book signing
1:09
I can expect something delicious from Charity and from Bebe.
1:15
So, Theresa was in the store the other day,
1:20
and Betsy said, "Theresa,
1:23
"I wanna share a recipe with you
1:25
"that I make with our lemon curd,
1:27
"with Paula Dean's lemon curd."
1:29
She said, "They're so good."
1:31
So she sent me the recipe.
1:34
And so we're gonna chop off this wonderful cookie.
1:38
It just calls for prepared lemon curd.
1:42
But I am using what I know is very, very good.
1:47
All right, so this dough has to sit
1:48
in the refrigerator for an hour, y'all.
1:50
So I am gonna go ahead and start mixin' it up.
1:54
I've got a cup, I've got a stick and a half of butter.
1:59
The recipe calls for unsalted butter.
2:02
But I've told y'all many times before
2:05
I always use salted butter,
2:09
because I like a little bit of that salt with the sweet, so,
2:15
that's the way I roll.
2:22
the butter is mixed up some.
2:24
Now I've got a half a cup
2:25
of confectionate sugar,
2:29
and let's see how much granulated sugar?
2:31
A fourth of a cup of granulated sugar.
2:34
So I'm gonna whip these until they're nice and incorporated.
2:40
All right, now I'm gonna beat in an egg.
2:46
I'm gonna add lemon juice.
3:06
You know, I think it might be pretty good
3:08
to put a little lemon flavoring in it, too,
3:15
Or it may make it too lemony, I don't know.
3:18
You know, I'm always changin' every recipe
3:20
that gets in my hands.
3:24
I'm gonna beat in a teaspoon of baking powder.
3:30
And I'm gonna beat this as low as my little beaters will go.
3:36
And then I'm gonna incorporate our flour.
3:48
We're actually gonna chill this in the refrigerator
3:53
As you can see, it's kind of a,
3:56
it would be a real sticky dough
4:02
make it without this dough chillin'.
4:05
Okay, y'all, the recipe says
4:08
to beat the lemon zest in
4:12
along with our butter and stuff like that,
4:15
but I don't like to put my zest into any recipe
4:19
when I'm still usin' a mixer.
4:22
Because you know what?
4:26
Most of that zest is gonna get stuck in our beaters.
4:31
So we just gonna stir it in,
4:33
'cause I wanna make sure that we have
4:36
every bit of it in our dough.
4:38
Okay, I thought the recipe
4:42
was gonna tell me to put this in wax paper.
4:47
But no, it just says cover and chill.
4:56
We'll be doin' this by the tablespoon
5:00
when we go to dip up the cookies.
5:02
So I'll see you in one hour, you sweet cookie dough.
5:07
Alright y'all, the size of this cookie
5:09
should be a scant tablespoon.
5:20
I sprayed my tablespoon so it wouldn't stick,
5:23
so I'm just gonna kind rub this in a ball,
5:27
and it stayed in the refrigerator for at least an hour.
5:34
So we're in good shape here.
5:37
This one may be another tad bigger.
5:45
That one is a tad bigger, so.
5:48
I really like my cookies bein' all the same size.
5:54
So that's why I was hopin'
5:57
by usin' my tablespooner,
6:04
a measurer, that I could get 'em
6:06
pretty close to the same size.
6:09
So I'm still gonna have to work.
6:10
Now this dough has got nice and stiff.
6:21
Just rolled it in a ball.
6:25
And now I'm takin' my thumb.
6:29
because my fingernail
6:32
is really short on that thumbnail,
6:35
on that right-hand thumb.
6:37
Well, on both of 'em, both of my thumbs.
6:42
They must take a beatin'.
6:45
All right, the recipe said
6:53
a plastic baggy and snip it.
6:55
But you know what, I'm just gonna do it
7:00
I just think the other way is,
7:05
So I'm takin' my lemon curd
7:09
that we have at the store,
7:13
and I'm just gonna dip a little lemon curd
7:18
into each of those cavities that we made.
7:30
These are gonna be so good.
7:31
And plus it gonna be pretty, you know?
7:35
Okay, I'm gonna put these in the oven, 350,
7:38
for about 15 minutes.
7:44
So we just dustin' 'em with a little powdered sugar.
7:50
And the recipe said just do it on the edges.
7:53
Well, I don't know how you would just do it on the edges.
7:58
I'm saying that the confectionate sugar will evaporate
8:09
On the gel part, so...
8:12
Besides, I think it's pretty just like that,
8:13
don't you, Theresa? - Yeah, and we did
8:16
We pulled them outta the oven
8:17
to let 'em cool for- - Oh yeah, yeah.
8:18
- A good 15 minutes. - Yeah.
8:21
A little bit more powdered sugar right there.
8:25
Well, I kinda got carried away, Therese.
8:28
I'm givin' you and me- - No problem on my end.
8:30
- [Paula] I'm givin' you and me
8:31
the most unattractive one. (laughing)
8:44
Thank you girl, for making me aware of your recipe for...
8:51
What did she call 'em?
8:53
- [Theresa] Dimples, lemon dimples.
8:55
- Yeah, lemon dimples.
8:56
That's a good name for it.
8:59
Y'all, this is not overly sweet at all.
9:06
It gives it that little bite of tartness
9:13
reminds me of a shortbread.
9:17
Tastes just like a shortbread cookie.
9:19
So, if you are a shortbread fan like myself,
9:24
and like Theresa, I think you'll enjoy it.
9:27
But thank you, Betsy. (laughing)
9:32
- Hey, y'all, it's Paula Deen.
