I have, y'all, a wonderful, wonderful recipe for your dessert for Easter Sunday
0:09
To me, this just reminds me of the spring and all the things that we love, smell, and taste
0:20
So it's called the Lady Bird Cake. I named that after my beautiful lady bird, my blue and gold macaw
0:27
she was my companion for 31 years and I noticed in my newest book it said 29 but she actually lived to be
0:39
31 and I miss her. For seven years that bird slept in the bed with me y'all
0:50
You think you're lonely? How lonely must I have been to sleep with a McCall
1:01
But I did love her. I did love her. And she kept me great company
1:05
You know, it's great company. So anyway, this is an honor or in memory of my ladybird
1:15
Now, I'm starting with two sticks of butter. And how much sugar
1:21
I can't remember. Two cups. Two cups. Okay. So we're just going to beat this for about four or five minutes until it's nice and creamy
1:31
And we'll be stopping periodically to scrape down the sides so it all gets its fair share of a beating
1:40
Okay, I beat my sugar and my butter for about four or five minutes and I've scraped the sides
1:49
Now I'm adding my three eggs and I'd already added one. and you want to just make sure they get them
1:55
beat in real well. Alright, I've got my three cups of all-purpose flour
2:06
I've got my salt. And I've got my baking powder. I'm just going to grab my whisk
2:17
and whisk this all together. And by whisking like this, it's almost equal to sifting your flour
2:32
So we are going to add our flour and our buttermilk alternately
2:42
we're going to start with our flour and we're going to end with our flour okay
2:48
so let's get up here i think i need to go ahead and add the bananas right now let me see
3:04
yep add eggs one at a time beating well beat in mashed bananas and the preserves which makes this a ladybird cake because she loved all this stuff
3:20
But her favorite thing in the whole world was a chicken leg, a fried chicken leg
3:36
Well, this fit in there. Yeah. I love pineapple preserves
4:01
and I like the orange preserves you eat those Eddie I love that
4:10
okay we're gonna get this mixed up real well and I'm gonna move this over here
4:18
so I'm gonna be using my right hand to hold the beaters
5:02
And then our buttermilk. Did we not need vanilla flavoring for this
5:28
I can't make a cake without some flavoring. I should have turned that
5:34
I just need a squirt of vanilla. Thank you. To me, it just makes a difference
5:47
Just a little teaspoon. All right. Now, the last thing we have to do is stir in our dates
6:01
Oh, and man, would that ladybird adore those dates. so we have sprayed
6:08
our 13 by 9 pan wow don't forget y'all
6:19
this is for Easter so we would never bake a cake for Easter without some wonderful icing on top
6:36
So how long are we cooking this for, Therese? It says 55 minutes
6:40
I thought we were going to have to put it in this oven, Paula, but we don't. Okay. That sounds..
6:47
I'm dropping it down on the counter. to encourage any air bubbles to come out
6:59
And plus that levels it out in my pan for me. So Teresa said 55 minutes at 350
7:08
325. 325. Okay, good. 325, nice and slow. Okay, y'all, look at our ladybird cake
7:18
It is so pretty. Mmm. And you could do this one in layers, too, if you chose
7:27
In my cookbook, my new cookbook, there's a Lady Bird cake in here
7:33
It varies a little bit from this one, but you see how it's in layers
7:38
So you could do the same thing as that cake calls for in this book
7:47
Lady Bird, Lady Bird. okay on to this cake I've got two sticks of butter
7:55
I've got an 8 ounce package of cream cheese and I'm just going to cream those up
8:04
real good okay that was all a real good temperature so no lumps or clumps
8:15
in that butter pineapple preserves is wonderful if you want to make a banana split
8:27
with your banana and ice cream chocolate syrup on one cherry preserves on one
8:35
or strawberry preserves on one end and then pineapple preserves on the other end
8:39
it's good with homemade whipped cream okay so now let's see what i want to do i want to add the sugar to this one or
8:57
mix the wet there i think i'll do it this way i like that bowl because it's wider it's got a bigger mouth than this bowl
9:10
so that's a pile of icing y'all pile of icing
9:22
I wish we had a few more pineapple preserves because I think it could use just a little bit more
9:28
because it only called for a fourth of a cup. But man alive is it good
9:36
It is so good. So very, very good. I was standing up here just defrosting this cake and Teresa said Paula you supposed to be filming this But you know I so crazy If I got something to do you know I just start doing it
9:52
Sometimes I forget that I'm actually shooting a show, which that's all right by me
9:59
because I want it to feel just like I'm in your house
10:08
or you're here with me in my house. and we just having a good time cooking and talking
10:18
So I was almost cooking without y'all. Look, I told y'all that this was gonna make a bucket
10:26
full of icing. Yum. Now, this is the ladybird cake
10:36
and that icing is so incredibly good. It's just amazing what that little bit of pineapple
10:48
preserve does to it. All right, I'm gonna garnish this with a sprinkle of, excuse me
11:02
I'm gonna sprinkle it with a little nuts. Because Lady Bird did love her some nuts
11:27
And then I've got some dried pineapple. Just drop pieces of that on it
11:34
You know, it's just like sugared pineapple. Doggies, we done fooled around and got us a
11:46
sure enough cake, Eddie. And this is one pretty cake. Who's ready for a bite
12:04
For this case, you have to open your mouth real wide, y'all
12:12
Cause it's so high. Mm. And remember I had y'all on my mind
12:23
for this dessert for your Easter. I don't think you'll be just putting it so easy
12:30
because just one layer. So love and best dishes, y'all. Have a blessed day
