- Hey, y'all.
0:01
I'm not in the kitchen today by myself.
0:03
It's wonderful.
0:07
But just to remind y'all, everybody knows who Aunt Peggy is,
0:11
that she is the board of directors of the C, whatever,
0:15
of Paula Deen's enterprise.
0:19
- [Peggy] Yes.
0:20
- Right there, Peggy Ort.
0:22
(Paula laughing)
0:23
My great Aunt Peggy Ort.
0:27
- I'm the one.
0:28
- The beautiful lady sitting next to her,
0:32
I'm sure y'all would remember
0:34
because she has been a member of this family
0:37
for what, 12 years?
0:40
- Yeah, at least 12 now.
0:41
- [Paula] Yeah.
0:42
- Since 2010 I think.
0:45
- My brother spent the last eight
0:47
or 10 years of his life with Sandy,
0:51
and all of the grands call her Mims.
0:55
Her grandsons, her three grandsons started,
0:58
gave her that grandmother name.
1:02
So all the kids here call her Mims
1:05
and she has so graciously
1:08
accepted an invitation from me to come down
1:12
and just spend a few days with us while Aunt Peggy's here.
1:15
So Sandy will be going back to Franklin, Tennessee
1:19
and Aunt Peggy will be going back to Albany, Georgia.
1:24
So let me tell you girls, I know I have told y'all,
1:28
but Michael and I have been invited to the Kentucky Derby
1:34
this year, and y'all know the Kentucky Derby is in May.
1:39
So to celebrate Kentucky Derby,
1:42
I'm making today Kentucky Hot Brown,
1:46
and I'm doing it in the form of a casserole.
1:50
And the recipe calls for toasted bread,
1:54
so I've put that under the broiler
1:56
and got it brown real quick like.
2:00
So I've melted a half a stick of butter
2:03
and I'm gonna stir me some flour into that melted butter
2:10
because we gonna make a cream sauce
2:13
to go on our Hot Brown Casserole.
2:15
We are doing ours with turkey and bacon today
2:20
and Hot is a real Kentucky, you can't remember if it's ham
2:23
or turkey or whatever.
2:27
All right, so we're just going.
2:28
- [Sandy] I think what I've had, maybe ham or roast beef.
2:30
- Yeah, that's what I'm thinking it was ham,
2:34
kind of the normal.
2:35
But that's a great thing about a Kentucky Hot.
2:38
You can do anything you want to with it in the way of meats.
2:42
All right, so I'm gonna slowly add the milk.
2:46
(pan sizzling)
2:53
And you wanna do this kind of slow,
2:55
'cause it prevents it from lumping so bad.
2:59
If you dumped it all in there at one time,
3:03
it would want to really lump.
3:05
But after you get it so far,
3:07
then you can kind of put it all in there.
3:10
See what my heat's on, yeah, it's pretty good.
3:15
Like I said, I'm sure there's many, many versions
3:19
of Hot Browns out there.
3:21
(whisking)
3:24
- [Peggy] And this is a dish with some history there.
3:26
- Yes ma'am, a lot of history from the state
3:30
that Sandy was born and raised in, Kentucky.
3:33
We gonna wanna get, probably cook this about
3:37
five or six minutes after we get it together.
3:41
All right, so Sandy was just telling us
3:43
that this was actually started at the Brown Hotel.
3:47
Would that have been in Louisville?
3:48
- [Sandy] Yeah, it's in Louisville.
3:50
- So I am celebrating the Kentucky Derby for two reasons.
3:57
Because it's next month, or yeah, it's in April, May.
4:03
It's in May.
4:05
And our friends, Wendy and Robert Jordan
4:09
have invited Michael and me to go
4:12
and be their guest at the Derby.
4:15
So I'm real excited 'cause it's been years.
4:18
If you remember seeing me in my old shows,
4:22
I shot a show from the Kentucky Derby years ago,
4:27
and it had rained to beat the band.
4:31
And of course I was shooting down on the track,
4:35
and those horses slinging that mud everywhere
4:38
and the sound of their hooves were, it was mind blowing.
4:44
I don't know what that is.
4:45
It looked maybe a piece of parsley.
4:48
But I was shocked.
4:50
I was shocked at the intense sound of those hooves.
4:55
It was an incredible experience.
4:58
Gosh, that's been a long time.
5:01
A long time since I did that.
5:04
All right, so I think we're about safe to go ahead
5:07
and add the rest of the milk,
5:09
but I'm gonna keep cooking this and stirring it.
5:13
Okay, so we're about there, y'all.
5:15
You wanna do this for like six minutes
5:17
until it's nice and smooth and cooked,
5:21
and look at that how beautiful that is.
5:23
I don't know what that is.
5:24
I think parsley keeps getting.
5:27
Parsley jumping.
5:28
- [Production] Probably in the whisk.
5:30
- Yeah, I bet it is
5:32
'cause parsley will get caught in my whisk.
5:35
- [Sandy] Oh. - Down there.
5:36
All right, so that's nice and thick.
5:39
So I'm gonna turn it off, y'all,
5:41
and I'm gonna add my white cheddar and Swiss cheese.
5:48
And you want to take that off the heat to add that.
5:52
I didn't have to move my pan
5:53
because when you have gas, when it's on, it's on
5:57
and when it's off, it's off.
5:59
Which is what I love about gas.
6:01
All right, so Sandy is kind of like me.
6:05
I learned all about it when I did my show there
6:09
at the Kentucky Derby, but my memory fails me.
6:13
So Sandy went on the computer to refresh her memory.
6:17
So she's going to share with us some things.
6:22
- [Sandy] So the Hot Brown Sandwich, sometimes known as
6:25
Louisville Hot Brown or Kentucky Hot Brown.
6:28
- And I'm gonna add my salt and pepper now, y'all.
6:32
- [Sandy] Originally created at the Brown Hotel.
6:34
- Yeah.
6:35
- [Sandy] In 1926 by Frank K. Schmidt.
6:38
It's also the traditional Welsh Rarebit.
6:43
One of two signature sandwiches created
6:46
by chefs at the Brown Hotel shortly after.
6:48
- In what, like 1923 or something like that?
6:50
- Shortly after its founding in 1923,
6:53
but the sandwich came along at 1926,
6:56
but the hotel was built in 1923.
7:00
(whisk banging)
7:03
It was created to serve as an alternative
7:06
to a ham and egg late night dinners.
7:09
- This is beautiful turkey, y'all.
7:13
- [Peggy] It is. - [Sandy] Welsh Rarebit is a.
7:15
- And you can add as, you can put as much turkey as you want
7:20
or as little as you want.
7:24
I'm gonna kind of pile it up pretty good.
7:27
Now I'm gonna cover it with,
7:30
I'm gonna spoon on my white sauce.
7:38
I think I'm gonna get a spatula.
7:42
Not a spatula, but a dipper.
7:47
Boy Aunt Peggy, this pollen is about to kill us all.
7:54
So this will be eaten with a knife and fork.
7:56
I think that's what I was trying to think to tell y'all.
8:01
You can't, there's no way you could pick this up
8:04
and eat it as a sandwich
8:06
and that's why we are calling it a casserole.
8:10
All right, so now I'm gonna top it
8:14
with the last of my Swiss cheese.
8:20
And we're gonna run this back in the broiler
8:25
until the cheese melts.
8:32
And then we're gonna add our bacon.
8:37
I'm gonna, since our bacon has been cooked
8:40
for a few minutes, I'm gonna go ahead
8:42
and add our bacon to it and let it get hot again.
8:54
This looks hot cross buns, doesn't it?
8:59
Okay, so I'm not gonna put that under the broiler yet.
9:02
I'm gonna come on down here and slice my tomatoes.
9:09
Because it's getting some tomatoes on it.
9:14
And let's see, how many do I have?
9:16
Two, four, six.
9:19
So I think we're close enough.
9:20
All I have to do now is sprinkle it with some paprika,
9:25
but rather than trying to use it there,
9:29
Theresa got that up for me.
9:31
But I prefer to kind of shake it out of the bottle
9:35
because it's hard to control it by the finger.
9:45
See, if I tried to do it by the finger,
9:48
I'd have had just big blobs everywhere.
9:56
The paprika is gonna give it a nice brown color.
10:00
So here we go.
10:03
And I'm not turning my back on this, y'all.
10:07
I learned my lesson.
10:09
Okay, y'all, that didn't even take two minutes.
10:13
That's a bad to the bone broiler.
10:16
(cutting board clattering)
10:19
All right, so I'm going to finish up our Hot Browns,
10:24
topping them with a tomato.
10:28
And you see how that paprika just gave them
10:32
that beautiful color?
10:35
All right, I thought one tomato would do it, but not quite.
10:45
So a Kentucky Hot Brown Casserole.
10:55
It's a beautiful, simple, easy meal to get together.
11:02
And if y'all are gonna be watching the Derby from home,
11:07
this could be fun for you to serve
11:14
and have while you're watching the Derby.
11:18
So that's it.
11:19
Who's ready to eat, girls?
11:21
(Paula laughing) - [Sandy] Always.
11:23
- [Paula] There you go, Aunt Peggy.
11:25
- Oh, beautiful.
11:29
Here's thank you.
11:32
- [Paula] Here's your welcome.
11:36
- Beautiful.
11:42
- I meant to put a little pepper on it for y'all,
11:47
with the salt and the pepper.
11:51
There you go my darling sister-in-law.
11:53
- Thank you.
11:55
It's beautiful.
11:57
- [Paula] Salt and pepper.
11:59
- [Sandy] So beautiful.
12:01
- [Paula] Isn't that beautiful?
12:02
- [Sandy] It is beautiful.
12:03
- So y'all tell me what you think about
12:06
Kentucky Hot Brown Casserole.
12:10
You like it? - Uh huh.
12:11
- [Paula] Is this your first Hot Brown?
12:13
- Mm hmm.
12:15
- [Paula] But it's not Sandy's?
12:17
- Mm.
12:18
- [Paula] Does it resemble anything you knew as a Hot Brown?
12:20
- Oh yeah, absolutely.
12:21
It's delicious.
12:22
- Mm.
12:23
(Paula laughing)
12:27
Y'all, this is so good.
12:30
Mm.
12:34
That cheesy cream sauce.
12:36
That cream sauce takes it over the top, y'all.
12:39
- [Peggy] Amazing.
12:41
- Mm, mm, mm.
12:46
Here's to the Kenterpy.
12:47
Kenterpy?
12:49
Kentucky Derby and the Kentucky Hot Browns.
