- Hey, y'all, I'm Jeremy Deen here at Mama's Kitchen
0:02
and it's finally happened.
0:03
I've landed on the recipe
0:04
that I don't need a piece of paper,
0:06
I don't need Theresa to tell me anything that goes in it.
0:08
I'm making chicken salad today.
0:10
I've made more daggum chicken salad.
0:13
You know, the chicken box was a little special place
0:15
that I opened and we were open for a couple years
0:17
before we retired our Savannah restaurant here
0:19
and chicken salad is one of the most favorite things
0:22
that we did for folks.
0:24
I'm gonna make sure and get this bone outta here.
0:27
I made it every single day and I used rotisserie chicken.
0:32
and rotisserie chickens, y'all,
0:33
you can find them so affordable
0:36
and for like $5 you can find a rotisserie chicken
0:39
and put together a fresh chicken salad
0:42
at your house so easily.
0:45
Y'all, try this recipe that I've been doing forever.
0:48
So I've got my rotisserie chicken, I wanna make sure,
0:51
now for me personally, I pick through the chicken
0:53
and if there's nothing that I don't want to eat,
0:56
I don't leave it in the pile.
0:58
So I make sure that I get out everything
1:00
that's not good chicken.
1:03
You don't wanna chop this up to death.
1:05
So what I normally do is chop it into large sections
1:09
and then when I put it in my bowl,
1:11
I break it up a little bit 'cause I don't need giant pieces,
1:15
but I don't want it to be like a spread.
1:18
that when people are eating your chicken salad,
1:20
that they actually say,
1:21
"Oh, look at that piece of chicken right there."
1:23
So it's easy enough for you to do a mid chop
1:26
and then break it up a little bit
1:27
and then as we stir it, it's also gonna break up as well.
1:31
Got some bigger pieces in here.
1:33
Now the next thing I'm gonna add in here
1:34
is kind of a surprise.
1:36
People that aren't from the south are gonna be surprised.
1:40
My friend from south Florida, Billy, he came up to Savannah.
1:43
He was doing some work
1:44
and I was sharing chicken salad with him
1:46
and he was crazy about it.
1:50
And the biggest surprise for him was boiled eggs.
1:55
In the South a southern salad is gonna have a couple things.
1:59
Protein, mayonnaise, and eggs.
2:03
So I've got three boiled eggs going in here.
2:05
I've already, I broke it up with my hands.
2:08
Nothing too uniform about it.
2:13
Celery gives it a little bit of flavor,
2:15
but it also gives it some backbone.
2:17
It's got some crunch.
2:19
The texture is huge with chicken salad,
2:22
so I always make sure and have fresh celery.
2:26
Not too big, not too small.
2:30
I'm probably, this might be a half a cup of celery
2:33
that I'm going with in here.
2:35
Rough chop, right on top.
2:39
Here's what I really like to do.
2:41
Save the inside of your celery,
2:43
there's a lot of flavor in these leaves,
2:45
but it's also so pretty.
2:47
So I always add some chopped greenery from my celery
2:55
Really pretty, more texture, more color,
2:57
and it adds a little bit of flavor.
3:00
Now into this, we're gonna use some mayonnaise.
3:04
Maybe just enough left in here.
3:06
I eyeballed all this stuff.
3:08
We'll put together a recipe for y'all.
3:10
Let's say you can never take away, but you can always add.
3:15
So I'm gonna start with about a quarter of a cup.
3:20
You know, every morning I made my chicken salad,
3:23
it was over a year before I formulated the recipe.
3:27
I was just terrible about doing it myself.
3:32
This is just how I do it, y'all.
3:39
get a fair representation in there.
3:43
I've got some of mom's mixed up salt.
3:46
Let's see, we'll do it this way.
3:47
I'll put it in my hand.
3:50
about a maybe teaspoon, maybe.
3:55
I don't wanna over season it.
4:00
And then a little bit of black pepper.
4:02
Now this is where we're gonna find out
4:07
about how close our mayonnaise guess got.
4:09
If you do not want to use a a rotisserie chicken,
4:11
if you just love to cook fresh chickens,
4:13
you can boil your chickens at the house.
4:16
And if you wanna season your stock up with some celery
4:19
and onions, some garlic, you know,
4:24
get your stock pot going really good with your water.
4:26
Boil your chickens, and when you cook it through,
4:31
you'll have your chicken
4:32
and then you can save your stock for something later.
4:35
But the rotisserie chicken, as busy as we are,
4:38
I'm gonna go every time.
4:40
Little bit more mayonnaise.
4:41
You see how it's just, it's not really trial and error,
4:46
it's just not measuring.
4:48
Needed a little bit more.
4:53
This is one of my wife's favorite things is chicken salad.
4:56
She loves it and loves egg salad.
5:00
So easy, so simple, so southern, and really good for you.
5:03
If you're using a rotisserie or a bull chicken,
5:06
this is not a ton of calories.
5:07
If you want to use yogurt as your mix instead of mayonnaise
5:10
or use the light mayonnaise, you could do that as well.
5:13
You see, look at what we got here.
5:15
That's a southern chicken salad, y'all.
5:17
Super easy to put together, really delicious.
5:19
Everybody's gonna be a big fan of it.
5:22
Now what you do with it from here, it's up to you.
5:25
I used to serve it on croissants at the restaurant.
5:27
I would serve it in a scoop with some fruit
5:30
and some vegetables and some pita chips.
5:33
You can eat it in a wrap.
5:36
I'm going to eat mine on white bread.
5:39
All it needs is a little lettuce.
5:44
I don't have a tomato laying around
5:45
or I'd put it in there too.
5:48
Healthy little scoop right there.
5:51
You can make a really pretty lunch plate,
5:56
if you're having some folks over,
5:57
with just a scoop of chicken salad
5:59
and you put the right garnishes around it.
6:01
Really, really, really pretty.
6:05
This isn't the best knife. I'm gonna use it anyway.
6:13
Took me that long and I was talking to y'all
6:15
the whole time I did it.
6:20
Now, my favorite part about chicken salad is eating it.
6:26
So what are y'all doing?
6:27
Stop watching me. Go get a chicken.
6:30
Thanks for tuning in, y'all.
6:31
I'm Jamie Deen, this is good food.
6:34
See y'all around the kitchen.
6:35
Mm. Ooh, that was perfect.
6:39
