0:01
I cannot tell y'all how much we have enjoyed
0:06
doing kids camp this week.
0:09
You've seen Bobby teach you how to measure,
0:13
which measuring cup is a dry,
0:16
which measuring cup is for wet.
0:19
You have seen Jamie teaching you the proper way
0:26
You have seen me explain the difference between
0:30
stirring and folding.
0:32
And what am I missing, Theresa? We've done...
0:37
- [Theresa] Temperature checks?
0:38
- Yes, temperature checks, yes, to check your meat.
0:43
So I'm finishing up today kids with how
0:48
to test your cakes when they're done.
0:52
So I'm gonna show you a couple of pointers
0:55
and in order to get there,
0:58
oh rats, I've got to make some chocolate cupcakes
1:01
with buttercream icing. (laughs)
1:04
I just hate that, y'all.
1:08
And you know I'm kidding you kids.
1:10
So I'm gonna start over here in our big bowl
1:18
Our unsweetened cocoa, and it calls for half a cup.
1:23
So you know it's gonna be very, very, very chocolatey.
1:28
I'm gonna add baking powder,
1:32
baking soda, and just a smidgen of salt.
1:38
And remember I told you in a earlier video
1:43
that this whisk is a wonderful tool to have in your kitchen.
1:47
It's almost acts as like a sifter
1:51
to sift your ingredients together.
1:54
So I'm gonna take my whisk
1:56
and I'm going to whisk that until everything is combined.
2:01
And if there's any lumps,
2:02
hopefully my handy dandy whisk will break
2:11
Okay, so there we go.
2:14
All right, now over here I'm gonna add two eggs
2:20
and I'm gonna beat those up just a little bit.
2:25
So they'll incorporate easily.
2:28
I'm adding white sugar, brown sugar, oil.
2:39
And the oil is what makes our cupcakes really moist.
2:46
And I'm gonna finish off with two teaspoons
2:58
And I'm using a wonderful grade of extract.
3:05
Not artificial, it's the real thing.
3:09
And to me that does make a difference.
3:15
Okay, so we just wanna whisk, whisk, whisk.
3:21
I've heard Bobby say that. Whisk, whisk, whisk.
3:31
Now I'm going to pour our wet ingredients
3:40
into our dry ingredients.
3:43
And you can see I'm making these cupcakes, y'all.
3:45
And I hadn't, I've done it all by hand.
3:48
I hadn't even had to use a mixer,
3:53
But when we get to our chocolate buttercream icing,
3:58
we're gonna need to involve a handheld mixer.
4:05
So we're gonna just incorporate that all real good.
4:14
Oh! (laughs) Look, kids.
4:22
Sometimes I make a mess.
4:24
Maybe that means I should be wearing an apron.
4:29
All the recipes that we have shared
4:32
with y'all this week has come out
4:34
of my newest children's cookbook.
4:37
So you can find all five of these recipes
4:40
and that it also comes with a apron,
4:42
which I should have put on.
4:44
And now that I've gotten everything pretty mixed up,
4:47
I'm going to add my buttermilk.
4:51
And this is gonna make a wonderful
4:56
light, fluffy cupcake.
5:04
Now to load up our muffin tins,
5:06
I'm going to use an ice cream scoop.
5:12
And that might be a little big.
5:15
So let's see what else I've got.
5:27
So you wanna fill 'em about two thirds of the way full.
5:40
And we'll try not to make a mess, kids.
5:45
Okay, kiddos, I'm gonna put these in the oven now,
5:50
350 degree preheated oven
5:53
and I'm gonna bake them for 18 to 20 minutes.
5:57
And then when our buzzer goes off, I'm gonna show you
6:01
how you can tell if your cupcakes are done or not.
6:07
And it's always a good idea about half
6:10
of the cooking time, which would be, if we go 18 minutes,
6:14
it would be nine minutes.
6:15
It never hurts to rotate your pan.
6:19
Make sure all your heat is evenly distributed.
6:24
See you back in 18 minutes.
6:26
Okay, kids, they've been cooking for about 16 minutes,
6:30
so I've got my toothpick ready.
6:36
Be careful. Be careful.
6:37
Be careful when you're working with hot surfaces.
6:45
So I'm gonna pull these out so we can see 'em.
6:49
And if you can mash that top and it pops back up.
6:54
So now I'm gonna do the toothpick test.
7:01
It looks pretty clean, there's one little crumb there.
7:08
- Doesn't it smells so good?
7:12
I'm gonna leave it in for one more minute
7:18
because I see just a little bit on that toothpick.
7:24
So one more minute and they're gonna be ready.
7:27
I told you that we are gonna bake 'em for 16 to 18 minutes.
7:32
It really depends on your oven.
7:34
My oven cooks probably fast and maybe a little hotter
7:39
because it's a commercial oven
7:42
rather than just a regular home oven.
7:45
So talk to mom, dad, and grandma and granddaddy,
7:49
aunt, uncle, friend, whoever's helping you.
7:52
And they can tell you probably how that oven runs.
7:59
Okay, so out they come.
8:01
I think I baked these for maybe 17 minutes, y'all.
8:06
So I'm gonna bring them over here
8:11
and let them sit on the back
8:14
because we can't frost them until they're completely cold.
8:21
And I think we have got a wonderful,
8:24
wonderful clean toothpick
8:26
that's gonna give us some wonderful, wonderful,
8:32
All we have to do now is wait.
8:38
Big kiddies and little kiddies.
8:43
Our chocolate cupcakes turned out perfectly.
8:49
And remember we went over tips to check
8:53
to make sure they're done.
8:55
You know, by touching, if it pops back up,
8:59
If you're undetermined, stick a toothpick in it.
9:03
And if that toothpick comes out clean,
9:05
your cupcakes are done.
9:08
So we are gonna start now making our frosting.
9:12
And we are gonna cream my butter
9:16
and I'm actually using an unsalted butter.
9:20
I'm gonna add our cocoa and a little salt.
9:39
And now I'm gonna start adding our powdered sugar
9:44
or confectioner sugar, whatever you choose to call it.
9:52
And that's probably a half a cup.
10:03
And now I'm gonna add my vanilla extract.
10:09
And I'm gonna add two teaspoons of pure extract.
10:23
And I'm gonna throw in another half a cup of sugar
10:34
and we're gonna cream.
10:43
And while I've got that turned off, I would like
10:46
to caution y'all younger ones that
10:52
if you're using an electrical appliance, it's plugged in,
10:57
do not use it near water.
11:01
Don't do it like by your sink
11:03
where you've got a sink full of water
11:05
'cause that could be very, very bad.
11:07
So make sure all your electrical appliances
11:11
when you're using them are not near water.
11:24
Okay, we've got that nice and creamy.
11:28
Now, there's a couple of different ways
11:29
that you could frost your cupcakes.
11:33
You can do it by using a knife
11:36
or an offset spatula
11:44
and doing it just like this.
11:49
You can let a little bit of your cupcake show
11:54
or you can cover it all entirely,
11:58
bringing it to the edge of your liner,
12:05
which I kind of like that.
12:07
I wanna get all, all the frosting that I'm due.
12:13
Okay, this is the other way that you can choose
12:17
to frost your cupcakes.
12:21
I've got just a plastic baggie.
12:29
Alright, so you want to just cut you a small hole
12:37
Pick up, Hey Michelle.
12:39
- [Michelle] Hey. - [Man] Hey.
12:42
- And you can just pipe it on.
12:50
Personally, I like doing it with my knife.
12:57
It just reminds me of my mother's homemade cupcakes.
13:04
But that's up to you, whatever you want to do.
13:09
Ooh, I just think they're so pretty.
13:11
(sprinkles rattling)
13:14
Look at that, that's a lavender.
13:17
That's a lavender color that I'm using.
13:19
Well, actually it's pink,
13:21
but it's looking like lavender on the chocolate.
13:27
I hope that you'll have the opportunity
13:32
to get into the kitchen with your mother or daddy
13:36
or aunt or uncle or grandma.
13:39
Grandmas, I tell you, I know for a fact
13:42
that grandmas love getting in the kitchen
13:44
with their grandchildren.
13:47
So I hope you've enjoyed this five days of kids camp.
13:52
I hope that you've maybe learned something
13:56
and I hope that you can share it with others.
13:59
So until next time, I send y'all love and best dishes.
14:04
Remember safety first in your kitchen.
