0:00
- (laughing) Listen, let me tell you what I'm cooking.
0:04
This is an interesting recipe and it's not mine.
0:08
It was on my website.
0:10
I can't remember if someone sent it to me, y'all,
0:14
or I just don't remember.
0:18
But it's ham and collared savory casserole
0:21
by Sarah Kelmer, Kelner.
0:25
And I'm so sorry Sarah, that I just can't remember,
0:29
but I'm certainly giving you credit for it
0:32
and can't wait to try it.
0:34
I don't ever remember making this recipe.
0:38
So it calls for one bunch of collards that you've chopped.
0:44
So I'm gonna come over here and it tells us to saute.
0:53
What does it tell us to saute?
0:56
The ham and saute until brown.
1:00
This is a lot, a lot of ham.
1:06
And it says to cut them in two inch pieces.
1:10
So those are hearty pieces of ham.
1:16
In fact, I'm gonna cut some of 'em down
1:23
'cause I couldn't get that in my mouth.
1:26
For those of us that have a small mouth,
1:30
might need to cut 'em down a little bit more.
1:36
Okay, so I've got my collard greens chopped.
1:41
I've got the ham sauteing
1:44
and we'll wanna saute this for about
1:46
four or five minutes, you know, just until it's brown.
1:50
Okay, our ham is brown.
1:53
Now I'm gonna add our collard greens.
1:59
And I don't think these collard greens are supposed
2:02
to be cooked like we cook our collard greens
2:06
here in the south where you cook 'em for an hour or so,
2:09
depending on the tenderness.
2:12
So I think we're just gonna wilt these
2:15
along with our onions and our cherry tomatoes.
2:25
This is a very interesting casserole to say the least,
2:29
but I think it would be so good with cornbread,
2:39
That ham is talking to us.
2:42
So we're gonna let that just cook away.
2:47
I think I may put the lid on that
2:53
so some of those juices can come out
2:57
'cause I don't think they will if it's not covered
3:01
All right, onto our gravy.
3:08
And we're gonna need bacon grease,
3:12
salt and pepper, flour, cream cheese, and warm milk.
3:20
So I'm gonna go ahead and start that
3:23
in my cast iron skillet.
3:27
- [Assistant] Paula, do we want me to-
3:28
- Please yes, if you'll warm it, that would be wonderful.
3:31
- How long do you think it needs to be?
3:33
- Just to warm. (laughs)
3:40
Alrighty, I'll mix that salt and pepper together.
3:47
Then I'm gonna mix it with the flour.
4:02
I'm gonna start with that amount of salt and pepper.
4:21
That bacon grease is gonna give this dish a kick
4:29
and I want every bit of it.
4:40
Okay, so we'll let our bacon grease get hot
4:48
and then we'll start our flour process to get it thick.
4:55
I've got my cast iron skillet on a medium high
5:01
and now I'm just gonna stir in my flour
5:05
and using my whisk until it thins out.
5:12
We don't want any lumps.
5:14
I think I'm gonna turn this down a little bit.
5:17
All right, now I'm gonna be adding a warm milk.
5:23
The milk being warm, it won't like shock.
5:27
It won't shock our pot.
5:39
Definitely it's gonna need some more salt.
6:04
All right, the last thing to go in to our gravy
6:14
And it calls the one eight ounce package of cream cheese.
6:29
You know, now cream cheese don't hurt nothing. (giggles)
6:34
Okay, so that's gonna take just a minute for it to melt.
6:41
I think I'm gonna go ahead and add a little of my hot sauce.
6:47
Okay, I'm gonna turn that down real low
6:51
and I'm gonna come over here
6:52
and I'm gonna check my greens and my ham
6:58
and my tomatoes, my onions.
7:11
Okey doke, I'm thinking that this is pretty much done.
7:21
Now I'm gonna take, oops, this is so heavy.
7:29
I love cooking with cast iron, but it is getting heavier
7:32
and heavier for me to lift.
7:59
- And then I'm just gonna have to slowly scoop the rest out.
8:05
All right, so we're almost, we're almost done.
8:11
Theresa, I need a little sauce pan of melted butter
8:18
because I've got one more step.
8:21
- [Theresa] How much butter would you say?
8:25
because we are gonna top our dish
8:35
with some canned biscuit cut in pieces.
8:47
Now this recipe calls you to bake this
8:56
in an eight inch square baking dish,
8:59
but Theresa and I made an executive decision
9:06
that it should be a little bit bigger than a eight by eight.
9:10
And I'm sticking to my story.
9:12
Now, it calls for a can of biscuits,
9:16
but this looks like a very big can.
9:22
- [Theresa] It was on buy one get one free.
9:27
So I'm just gonna cut this in cubes
9:31
and then I'm gonna toss our biscuit pieces
9:35
in the butter so I'll know that every one of them
9:40
got some butter on it.
9:45
And this is not gonna have to cook long y'all,
9:48
because you know everything's done in it.
10:02
All right, so our leftover butter,
10:05
lemme just drizzle it on top
10:10
and it's ready to go in the oven.
10:16
Doesn't that look yummy?
10:19
Oh gosh, and it's running over on this side, look.
10:22
- [Cameraman] Yum. - Love it. (laughs)
10:28
Now if y'all decide to make this,
10:35
I changed up some of the times.
10:39
I probably let this cook a little bit longer
10:41
because you know, we like our collard greens kind of tender.
10:45
So if it said five minutes,
10:48
I probably cooked it for 10 or 15.
10:57
These are layered biscuits.
11:13
And look at the smoke coming off it y'all.
11:28
Oh my gracious. (chuckles)
11:44
That's a little bit of everything.
11:46
That's the tomato, the ham, the collards and the biscuit.
11:59
We gonna try that again.
12:26
If you like collard greens, you're gonna love this casserole
12:32
because the collards really jump up
12:36
and kind of slap you like a good collard green should.
12:48
All right, so let me caution you about this.
12:52
This is a little salty, so be careful.
12:58
You may not wanna add any salt at all
13:01
because memory serves me that I've never made
13:05
this recipe before, so that's my tip.
13:10
No salt because that ham is salty.
13:25
Thank you, Sarah, for a totally different type
13:28
of casserole from anything most of us have ever known.
13:34
Love and best dishes.
