Welcome back to "Mama's Kitchen."
0:07
and I'm happy, happy.
0:08
You know I'm here to share some simple,
0:09
easy, delicious recipes with you.
0:11
And today we're gonna do, this is the perfect time of year,
0:17
And I don't know what y'all are experiencing
0:19
where you're at right now, but we are coming out of winter.
0:23
And I say we're coming out of it
0:25
because we're not home free yet.
0:29
And it hasn't been too bad.
0:31
And my son has been home for a break.
0:33
Jack is home from school.
0:34
And we are so happy to have him.
0:36
he's going back to school
0:37
and the hot temperature where he's going.
0:40
On the day that he arrives is 11 degrees.
0:42
And there'll be a foot of snow the day after,
0:46
and then classes start.
0:47
So we're very thankful to have had him home.
0:50
And I have fed him and fed him and loved him.
0:52
And when he got home, I said,
0:53
"All I want you to do is eat and rest."
0:55
He came home, bless his heart, wiped out.
0:59
He'd just gone through all the finals.
1:01
It was such a nice long break.
1:03
I said, "Please do everything you want.
1:05
Eat, rest, sleep. Have fun."
1:07
He looks like a different kid.
1:08
He is ready to go home
1:09
and his mom and I are gonna be crying.
1:11
But today I'm doing this soup, y'all.
1:15
And you know that my mom has made Mexican lasagna
1:19
and we have done so many different things
1:21
with Latin flare and flavors that we love.
1:25
I'm on a huge Mediterranean kick right now.
1:27
Mediterranean food hits my spot like you would not believe.
1:30
So this today, y'all, we've just got a few ingredients.
1:33
This is gonna be super simple to dump.
1:36
Now, first thing we have to do,
1:39
really the only thing we have to do
1:41
is I'm gonna sweat these onions down a little bit.
1:45
We've got two packs of ground beef.
1:47
This will be the boring part of our soup.
1:50
And I've got my ground beef,
1:51
and our seasons are coming later.
1:53
But I'm not cooking ground beef without salt and pepper.
1:55
I'm just not gonna dip.
1:58
So we got about two pounds there.
2:03
We might have started filming one minute too early.
2:05
Unless y'all woke up this morning,
2:07
said, Lord, I hope I get to watch somebody sweat
2:11
some white onions for five minutes.
2:13
Well, congratulations, mate, you made it.
2:15
That's what we're doing.
2:17
I'm gonna speed this up just a little bit.
2:21
I didn't put my microphone on either.
2:25
And our onions have just been sweated.
2:28
Well, Theresa and I, we just fired it up this morning.
2:32
I wasn't even thinking.
2:35
So now we're just gonna ground this,
2:37
we're gonna brown this ground beef off.
2:40
When you're browning your ground beef off,
2:42
you might see some little glimpses of pink.
2:44
Maybe something that's a little medium.
2:48
We're doing this with purpose,
2:49
but you do not have to cook this down to death.
2:52
Just make sure that this is round over.
2:54
We wanna maintain a little bit of moisture in it if we can,
2:56
because this is going into our stock pot
2:59
for about half a day.
3:02
So I promise you, if there's a little bit
3:03
of this ground beef when you're browning it,
3:05
if it's a little bit pink, just don't cook it to death.
3:08
It's gonna be under boiling water for six hours.
3:11
Speaking of under water for six hours,
3:13
this is a good time for us to take a break.
3:15
I got some work ahead of me.
3:18
When you get back my beef will be browned.
3:20
Y'all don't go nowhere.
3:21
Okey-dokey, artichokey.
3:24
This is the easy part now.
3:25
You see I browned off my meat.
3:28
I've already turned my pot on so it's warm.
3:31
And that's strained off some of this.
3:32
But let me tell you a secret.
3:34
My brother, his favorite food in the world is the goulash.
3:40
I think I might be making it later.
3:42
In a couple weeks y'all might see me do that now.
3:45
Bobby would make goulash and he would say,
3:48
"Mama, I just cannot make my goulash."
3:50
Mama said, "Well, talk to me about it, son.
3:54
"Well, I browned off all my meat
3:57
and then I drained all the fat off,"
3:59
and Mama said, "Stop.
4:01
"You drained all the fat off."
4:04
So I leave a little bit of fat with my ground beef in there
4:07
'cause it is flavor, but not too much.
4:10
Now, look how easy this is.
4:12
We're gonna start dumping.
4:13
I've got tomatoes with some peppers in it.
4:18
You know, it's like the Spanish tomatoes.
4:22
I've got a can of diced tomatoes that we're gonna add.
4:31
You know, I like the season my pot as I'm going.
4:33
So my meat is seasoned now.
4:36
My tomatoes are gonna need some,
4:38
but so are these beans.
4:39
Now you can put any kind of beans that you want in.
4:42
These are red beans and some navy beans.
4:46
I love to put all kinds of beans and soup and stews.
4:51
I dump a can of black beans in here in one second.
4:54
It gives it texture and flavor and body.
4:59
We're gonna add a can of corn.
5:10
And we've got two cans of diced green chilies.
5:18
Love the olives, black olives going in.
5:22
Looks like a daggum taco salad sitting right there,
5:28
I am gonna add a little bit of liquid to this.
5:32
Our seasons that we're gonna use today, y'all,
5:34
we have a package of taco seasoning
5:36
and we have a ranch dressing season.
5:39
So you know, I'm not overly going real heavy
5:41
with the salt and pepper here today
5:44
'cause these two packages are gonna have some big flavor.
5:47
Now, I'm gonna put two cups of water in this.
5:54
And as this cooks down,
5:55
this will produce a little bit more water.
5:58
And I don't have any stock candy,
5:59
but if you keep some in your freezer
6:03
or if you happen to have some beef stock
6:05
in your refrigerator, that will work as well.
6:08
Now, I'm gonna let this simmer.
6:09
We're gonna cook this.
6:12
You know what, I'm gonna add two more cups of water
6:15
'cause this is gonna cook for a very long time.
6:18
Let's see, before we get too far,
6:21
I'm gonna check our seasoning.
6:25
This got got a very long way to go,
6:30
but boy, Heidi, it tastes good.
6:35
I'm gonna add a little bit more liquid to this, y'all.
6:38
And let's let him cook for a while.
6:40
I'll see you in about six hours.
6:43
That's a fiesta right there, y'all.
6:48
Now y'all have watched me burn my lips so many times.
6:52
Look how smart I'm getting.
6:54
I pulled some out a minute ago so it wouldn't be so hot.
6:56
I'm just gonna put a couple of our onions on top.
6:59
I'm gonna save this jalapeno for when Peeps gets home.
7:03
So we'll cut that jalapeno when he gets back.
7:06
A little bit of sour cream on the top.
7:07
If you wanna add cheese, if you wanna do Fritos,
7:11
if you got, excuse me,
7:12
if you got corn chips at the house.
7:14
There's lots of different ways you can do this.
7:16
I told Theresa I would put Spanish rice down in there.
7:20
I think some rice in the body of that soup would be so good.
7:24
"I'm gonna dump mine all over Frito chips,"
7:28
and I said, "I would probably do that too."
7:31
Let's try our soup, y'all.
7:33
Woo, what a perfect day for it.
7:42
That's dynamite. That is good.
7:45
And I love a little bit of cool sour cream right on the top.
7:48
All it needs now is a Frito chip.
7:52
This soup is delicious.
7:53
I hope that you share it with everybody
7:55
that you know and love, that you have fun cooking it,
7:57
and you'll tune back in for the next delicious simple recipe
8:02
Until then, thanks y'all.
8:04
I'll see you around the kitchen.
