So I'm ready to get in the kitchen

and walk down memory lane with y'all.

But first I gotta wash my hands,

because I've been touching mother nature. (chuckles)

Y'all, so I guess it's been 23 years now.

I was living next door in Turner's, um...

I get Turner's Creek, Turner's Cove, Turner ocean. (laughs)

I was living next door,

and I had taken a hiatus from the restaurant

to write "The Lady & Son's Just Dessert" book.

And as I was working on things, I thought,

"How do I do a cookbook without a grit recipe?"

I said, "I've got to come up with something."

So one afternoon I got in the kitchen

and started playing with my grits,

and I formulated a grits pie.

And when I served it to people,

I said, "Tell me what this is."

And they'd say, "Oh, egg custard. I don't know." (laughs)

And it was a grits pie.

So I wanna share that with y'all.

And it was born in that book.

So I'm gonna come over here

and I'm gonna start with 1 cup of water.

A little pinch of salt.

I think that's a little too little.

So maybe a 1/4 teaspoon of salt, something like that.

And then I'm gonna do,

I'm gonna cook about a 1/3 of a cup of grits in there.

So, and you don't have to, I use quick grits

that cook in five minutes,

but I'll usually cook them for 35 minutes.

I like a slow, long cooked grit.

So, I'm gonna wait for my water to boil.

We're gonna add our grits.

And one of the most important things about grits y'all

is keeping 'em stirred when you first

add 'em to the pot and salt.

Those are the two important things to,

for using, you know, a pot of good grits.

To me, that's my opinion.

Okay, our water, it's come to a boil, y'all.

I'm going to add our grits,

and like I said, I'm not gonna cook these

but, you know, if you got the time you could.

But I'm gonna cook this for about four or five minutes.

And I'm gonna stand up here and stir them constantly.

All right, I've been standing here cooking these grits

for four to five minutes.

Now I'm gonna add a 1/2 a cup of butter,

and I'm gonna cook them for another minute or so.

So this is gonna be a good,

nice buttery pie, y'all. (laughs)

That's a perfect consistency of our grits.

So I'm gonna let this cool,

we'll take it off the eye, let it cool.

And I'm gonna be mixing the other things

that go in our pie together.

As soon as that cools.

All right, we've transferred our grits to a new pot

because that other pot was hot

and it's just gonna help it cool down a little quicker.

So in this bowl, I'm gonna add my sugar.

I'm gonna add my flour.

And I'm gonna whisk those things together,

'cause I don't want it to be lumpy.

mixed in with that sugar really good.

All right, I'm gonna add my buttermilk.

And I think that's like a 1/3 of a cup of buttermilk.
