0:00
- I am gonna make, y'all, my Grandmother Hiers' carrot cake.
0:07
And I'm actually making this,
0:09
and I'm happy for y'all to follow along with me,
0:12
I'm making this to take down to Jamie's Chicken Box
0:18
because I think his guests
0:21
would love to have something a little more retro,
0:27
because I used to make these for The Bag Lady.
0:31
So I'm gonna take this cake down there and slice it up
0:36
and Jamie can have it to offer it to his customers.
0:39
So that's what I'm doing.
0:41
And you know, the thing I like
0:43
about my Grandma Hiers' carrot cake,
0:46
you really don't have to even use a mixer.
0:49
You know, you can do it all by hand.
0:51
But for speed I do pull out my mixer most of the time.
0:56
I didn't the last time I made it, but I did this time.
0:59
And so I wanna talk a little bit about the carrots.
1:04
Now I buy like the shredded carrots from the grocery store,
1:09
but, you know, and some of 'em, they'll be that long.
1:12
And when you go to cut the cake,
1:14
it makes it a little harder for those strings.
1:17
So I put this in the food processor
1:20
and pulsed it a few times
1:22
and so broke it into smaller pieces.
1:27
See, it broke it into smaller pieces,
1:29
so now it will be easier to cut in the cake.
1:34
'Cause when you start getting those strings,
1:36
it just makes it a little bit harder.
1:38
Now the only thing I do different from my Grandmother Hiers,
1:42
I add raisins because I love the sweetness of the raisins.
1:48
And so I think let's get started.
1:51
Let's see, I got to gather up four eggs.
1:54
I've got my three cups of grated flour.
1:56
I need some chopped nuts,
1:59
and sometimes I'll use walnuts, sometimes I'll use pecans.
2:03
So it's really the nut of choice.
2:07
And some people don't even like nuts.
2:08
So if that's the case, don't put nuts in it.
2:11
- So you chose pecans? - Yeah, I chose pecans
2:14
because I got so many of them.
2:16
And I'm gonna put about a...
2:21
I think Grandma said a cup and a half of nuts.
2:24
But remember, I add raisins, too,
2:27
so that's gonna bulk it up.
2:32
(food processor grinding)
2:39
And I usually keep my nuts, y'all, really chunky,
2:45
but because I'm gonna be cutting it,
2:48
trying to cut this for customers
2:50
and I wanna make sure everyone of 'em are the same size,
2:54
and sometimes cutting through big old chunks of nuts
2:57
is real hard too, so.
3:00
I'm gonna do that one more pump.
3:03
(food processor grinding)
3:09
I think that's gonna be perfect.
3:12
Well, y'all, I just realized
3:15
that I do two things that's different from my grandmother.
3:18
You know, I add raisins, as I told y'all,
3:23
and I also add vanilla, vanilla flavoring,
3:27
and she did not do that.
3:29
But, you know, I love my vanilla.
3:34
And I told you that...
3:39
I'm just beating my eggs up a little bit,
3:46
I told y'all that you really don't even
3:48
have to pull out a mixer,
3:50
but I'm going to just for speed's sake.
3:53
So I've got my plain flour, my baking soda,
3:56
my salt, my cinnamon, and my sugar all in here.
4:01
And I just want to take a whisk
4:05
and go through the dry ingredients
4:07
and that helps break up any chunks that you might have
4:11
and just gets that soda and cinnamon mixed all in.
4:20
All right, so I've got my eggs.
4:26
It's funny, I could do this in my sleep,
4:28
but then I'm scared I'm not doing it,
4:30
everything I'm supposed to do.
4:32
All right, so I have got my cup and a half of oil,
4:37
and that's what makes this cake so stinking good.
4:41
Anytime you find a cake recipe
4:43
using 3/4 to a cup and a half of oil,
4:47
you just know it's gonna be delicious
4:50
and it's gonna be moist.
4:58
And now I'm gonna add my vanilla.
5:07
just smells like heaven, doesn't it?
5:09
All right, I'm gonna stir in my raisins
5:15
Y'all, I'm gonna need it to make Henry's birthday cake.
5:18
- [Woman] Exactly, so.
5:19
- All right, so in go my carrots.
5:23
And, you know, another,
5:24
it didn't call for it in my grandmother's recipe,
5:27
but there are carrot cake recipes out there
5:29
that call for baby food.
5:32
You know, carrots, the baby food carrots?
5:35
And it's real good, too.
5:38
I've actually made one using baby food
5:44
Now, the nuts are the last that I stir in.
5:51
And sometimes I'll put nuts in the cream cheese icing,
5:55
but that can hinder your slices, too.
6:00
So I'm just gonna put the nuts inside the cake
6:03
and maybe not on the outside.
6:09
Now, the suppliers are making this real easy for us.
6:15
They are coming out with all these liners right now.
6:21
I don't know what size.
6:22
They're different sizes.
6:26
This one's a little bigger than a nine-inch,
6:39
I'm gonna use that larger one in this one
6:44
And then this size is a...
6:48
Looks like it's more for an eight-inch,
6:50
but I'm still going to take precautions
7:01
because I wanna make sure I get those edges good.
7:06
All right, so I'm kind of fanatical
7:10
about my layers being even.
7:15
I like to make perfectly even.
7:19
So the only way I can make them perfectly even
7:24
is by measuring out the batter.
7:28
Okay, so I'll show y'all the way I do it.
7:34
These measuring cups are just the best.
7:39
And these measuring cups are designed for dry ingredients.
7:48
These measuring cups are designed for liquids.
7:55
So what I do is I come in
8:04
This is a one-cup measure.
8:09
And we start the party.
8:16
probably 20 or 25 minutes
8:20
and then I'll let 'em cool,
8:22
and then I will be making my cream cheese icing.
8:26
All right, now that my carrot cake is cooked,
8:29
I'm gonna have to wear gloves from this point out
8:33
because this is gonna be served commercially.
8:37
So I have to, you know, take precaution.
8:42
Now, this one's not wanting to come out,
8:44
but hopefully it was just those edges.
8:54
Jamie's carrot cake is ready to serve at the Chicken Box.
8:59
So if you come in today, you may be able to get a piece.
9:03
There's only two, four, six, eight pieces to a whole cake.
9:09
and get you some of Grandma Hiers' carrot cake.
