- Hey y'all, it's Jamie Deen.
0:02
Welcome back to The Chicken Box.
0:03
I was just telling Theresa before she pushed the button,
0:06
the unprecedented, never matched 20,000th time
0:10
I've been on her phone
0:12
without even looking in the mirror first.
0:14
So I apologize for anything
0:15
that you might see that's out of place.
0:18
She's been here for two hours.
0:19
The Chicken Box has been very busy today, thank you, Lord.
0:22
And today, well, it's summertime.
0:25
So there's a lot of people coming into Savannah
0:26
in the summer, and one of my favorite things
0:28
to do in the summer here at The Chicken Box
0:30
and at the house is cold summer salads.
0:33
So you know that I'm doing chicken salad forever
0:35
and fermented cheese and I do egg salad and pasta salads.
0:38
I made a loaded baked potato salad today.
0:41
I did tomato cucumber salad today.
0:43
All these are wonderful summer salads.
0:44
The youngest I can remember having salad
0:48
was this salad that my mom made my whole life growing up.
0:52
It was one of my daddy's favorites, and I love it,
0:56
But this is the English pea salad, garden pea, English pea,
1:01
That's where we're gonna start with, y'all.
1:03
I have two cans here that Theresa has drained off for me.
1:08
Now, if you've never had this salad before,
1:10
you have to trust me, this is delicious.
1:15
Really one of my favorite salads that I ate growing up,
1:17
and could not be more simple.
1:20
We've got our two cans of,
1:22
we got the very young and early.
1:24
And Theresa's diced me up some onions here.
1:31
Lemme check and see what that is.
1:33
- [Theresa] Quarter of a cup.
1:35
- A quarter of a cup of chopped vidalia onions.
1:40
And now I have two eggs.
1:43
And I'm gonna rough chop real quick.
1:52
I can't explain southern salads,
1:56
other than to say most of 'em have eggs in it
2:00
One of my newer friends from south Florida
2:02
who I'm getting to know really enjoyed the chicken salad,
2:06
and could not believe that we put eggs in the chicken salad.
2:09
He is really not gonna believe this.
2:12
We got eggs in a garden pea salad.
2:15
And this calls for just enough mayonnaise to moisten it.
2:20
So I'm gonna go, maybe, I'm gonna go two tablespoons.
2:27
(Nita talking indistinctly)
2:28
No, I'm gonna go one and a half.
2:30
I think I got too much.
2:31
- [Theresa] (indistinct) over here,
2:32
giving her two cents' worth.
2:35
I wouldn't be able to find--
2:37
- Because my mama used to make it, that's why.
2:39
- Your mama made this salad too?
2:40
- Yeah, yeah. - [Jamie] Yeah.
2:41
- That's why I said no,
2:43
you can put little bit more in there.
2:45
- [Jamie] Well see after I mix it up.
2:47
- [Jamie] Now the recipe doesn't call for salt and pepper,
2:49
but I'm gonna salt and pepper this a little bit.
2:51
This is mama's recipe, Nita, not yours.
3:00
And you know I like to season my mayonnaise.
3:03
That way, everything that touches the mayonnaise
3:06
has got a little seasoning in it.
3:13
Now, Nita, I'll ask you this.
3:15
Did your mama put pimentos in her salad?
3:17
- [Nita] No, but she didn't like it.
3:18
- [Jamie] I'm not gonna put pimentos in mine, either,
3:21
'cause I don't like it.
3:22
- [Nita] She didn't like pimentos (indistiinct).
3:28
- [Theresa] Paula probably did it
3:30
to make it have some color.
3:32
- [Jamie] Yeah, it could use a little bit of color.
3:34
- [Theresa] So pretty pretty.
3:35
- It looks a little bit like baby food.
3:36
And I could put some pimentos in there,
3:39
but that's not the way that I ate it growing up,
3:41
so I'm not gonna put pimentos in there.
3:45
See how simple that is?
3:46
Now let's dip some up.
3:59
So just enough, y'all to let me taste it.
4:01
I'm telling you, we're busy here around the Chicken Box,
4:03
but always got time for good food.
4:12
I love English peas, hot or cold.
4:15
They're really delicious in the salad.
4:18
Y'all literally take two minutes this summer
4:21
to fix this garden pea salad that mama's done.
4:23
I think we looked at this recipe about four years ago.
4:26
It's a classic, and we're trying it again today.
4:29
I'm Jamie Deen, this is good food.
4:31
See you around the kitchen.
4:36
Hey, y'all, it's Paula Deen.
