0:02
we have me and the peanut gallery
0:09
have been trying to come up with y'all
0:11
some lighter summer recipes
0:16
because some places are so hot.
0:20
Some places are so hot that you know,
0:24
you just want to eat as light as you can.
0:32
I'm making y'all a fruit soup.
0:36
Let's see, what is the a fruit soup?
0:38
That's what it's called.
0:41
And this is from my magazine
0:47
And I just think y'all are gonna like it.
0:51
So I've got what I call a Dutch oven pot.
0:56
And I'm adding my cantaloupe that are cut up,
0:59
my strawberries that are cut up,
1:02
my green grapes that have been sliced in two.
1:07
And then I've got my apples
1:11
just chopped and the peeling left on them.
1:16
So they all go in the pot.
1:21
And to the pot, I'm gonna add some sugar
1:32
and some little seed and some lemon juice.
1:39
And that is fresh, fresh lemon juice.
1:43
And now I'm gonna add two cups of water
1:49
and I'm gonna bring it to a boil.
1:54
And then I'll cut it down
1:56
and let it simmer for about 15 minutes.
2:03
So at the end when we are done,
2:07
we'll want to put this in the refrigerator
2:10
and chill it down real good.
2:13
Probably wouldn't hurt to stick it in the freezer
2:15
for a few minutes and then take it out,
2:17
put it in the refrigerator.
2:18
So it's gonna be refreshing
2:23
and it's gonna be healthy.
2:26
And you're gonna be happy, I hope.
2:33
Alright, y'all, our soup is looking good.
2:38
Now I brought it to a boil
2:41
and then I let it simmer for about 15 minutes.
2:45
And I'm going to do this in shifts.
2:49
I'm going to do like half of it at the time,
2:54
and we're going to blend it until it's smooth.
2:59
We're gonna have like a slushy, slushy soup.
3:07
But if you like cold soups during the summer,
3:14
Another good cold soup, Theresa, is Gazpacho.
3:20
A lot of people love that.
3:24
Now you can blend this as much as you want.
3:30
I am blending ours pretty smooth.
3:42
Okay, I think we're safe now.
3:59
Okay, now I'm gonna put it back in my pot
4:03
because we want this to sit in the refrigerator
4:08
and chill really nicely.
4:14
And then I'll show you how we are gonna present it.
4:18
The presentation of this soup.
4:21
All right, I'm putting some thinly sliced orange rind
4:36
And the last thing we add is our orange juice.
4:45
And this is real chilled.
4:48
We actually separated it
4:49
and put one bowl in the freezer
4:54
and one in the refrigerator.
4:56
So this is the one that's been in the refrigerator.
4:58
And naturally this is the one
5:00
that I wanna get my teeth into.
5:16
And we're gonna top it with a,
5:20
with a dollop of sour cream.
5:27
And if you grow some fresh mint
5:38
put some fresh mint in there too
5:40
'cause that mint will just go right along
5:43
with all those fruit flavors, y'all.
5:49
Okay, Theresa, would you like to come have
5:57
- I'm just gonna dig into your bowl.
6:00
- I'll just grab it a little.
6:01
- If I knock your spoon away.
6:04
Here, there's a soup spoon.
6:07
We going be civilized.
6:10
- Do we know how to do that?
6:14
- Once in a while I know how.
6:23
This is so delicious.
6:35
The sour cream just makes it.
6:47
I just got a thin piece of that orange rind.
6:55
I hope y'all love it.
7:04
